Abstract
La invención se refiere a una composición para uso en carne procesada, que comprende: (a) entre 0,2 y 3 mmol/g de carbonato seleccionado de carbonato de potasio, carbonato de sodio, bicarbonato de potasio, bicarbonato de sodio y combinaciones de los mismos; (b) entre el 20 y el 92 % p/p de proteína vegetal; (c) entre el 10 y el 70 % p/p de una fibra vegetal seleccionada del grupo de fibra de celulosa, inulina y combinaciones de las mismas; (d) entre el 0 y el 5 % p/p de equivalente de ácido de glutamato; en la que la combinación de componentes (a), (b), (c) y (d) constituye al menos el 60 % en peso de la materia seca que está contenida en la composición. Esta composición es capaz de proporcionar funcionalidad similar a la carne procesada como fosfatos. La invención también se refiere a un procedimiento para la preparación de la composición anteriormente mencionada y a la aplicación de la composición en carne procesada.
