一种去鱼皮机的刀座调节装置，包括刀架座以及与刀座架固定连接的上刀架和下刀架、调节座、主牵引刀杆、清洁刀杆，所述上刀架与下刀架之间固定一刀片，其特征在于：所述刀架座的一端开有“U”型槽一，“U”型槽一内设有偏心轴，所述调节座上设有一刀座锁紧轴，所述调节座的一端开有一“U”型槽二，“U”型槽二内设有偏心套，偏心套内套有一调节轴。
本实用新型通过偏心轴来调节刀片与主牵引刀杆之间的间隙，通过调节轴来控制刀座架的左右位置，实现控制去鱼皮的厚度，该装置结构简单，容易操作，安装和维护方便。
