发明背景

实施例1
[0024]将混合生育酚于大豆油中的组合物添加到2.6克的橙油(一种含天然橙油的商用油回加组合物)中。生育酚成分以250和500ppm的生育酚水平(即包括食用油在内为400和700ppm)添加。然后将这样制得的含生育酚油回加组合物添加到52.3磅的Pure Premium橙汁中。还制备了其中只添加了相同水平的橙油的对照果汁。将果汁包装于玻璃瓶中,并在38°F(3.3℃)下贮藏6个星期。在第三星期和第六星期品尝果汁,判定生育酚处理过的样品中新鲜风味保持得比只添加橙油的对照果汁要高。陈化6个星期后,将瓶子转移到45°F(7.2℃)仓库中,促进氧化。陈化大约9个星期后再次评价样品。
[0025]在这个试验期间,没有观察到成环现象。比起其中没有添加抗氧化剂的果汁,本发明的组合物对贮藏三至九个星期的果汁能更好地保持风味,同时不会因为生育酚添加剂而出现消极现象如成环现象,或者负面影响风味或特有的感观性质。
实施例2
[0026]还就橙汁的原有风味,对比橙汁中其他天然抗氧化剂的滋味,对本发明的生育酚组合物进行检测。具体的说,将均为天然抗氧化剂的本发明生育酚组合物(也就是Covi-oxT-70)、抗坏血酸、迷迭香提取物(脂溶性和水溶性)和果皮糊(peel paste)(碾碎的橙皮)添加到果汁中,并检测原有的风味。结果在下表中显示。

Claims (38)
1.一种柑桔汁组合物,所述组合物包含柑桔汁和至少一种α-生育酚之外的生育酚的生育酚组合物。
2.权利要求1的柑桔汁组合物,其中所述生育酚组合物占柑桔汁组合物的约40ppm至1300ppm。
3.权利要求2的柑桔汁组合物,其中所述生育酚组合物占柑桔汁组合物的约50ppm至500ppm。
4.权利要求3的柑桔汁组合物,其中所述生育酚组合物占柑桔汁组合物的约100ppm至200ppm。
5.权利要求1的柑桔汁组合物,其中所述至少一种生育酚选自β-生育酚、γ-生育酚、δ-生育酚和它们的组合。
6.权利要求1的柑桔汁组合物,其中所述生育酚组合物包含0重量百分比至20重量百分比的α-生育酚。

31.权利要求30的方法,所述方法进一步包括贮藏所述改进的柑桔汁饮料达至少4个星期的贮藏时间,并在保藏时间当中保持柑橘汁中选定的风味感观品质。
32.权利要求30的方法,所述方法进一步包括在添加所述生育酚组合物之后对所述柑桔汁饮料进行巴氏灭菌。
33.权利要求30的方法,所述方法进一步包括在添加所述生育酚组合物之前对所述柑桔汁饮料进行巴氏灭菌。
34.权利要求30的方法,其中所述添加生育酚组合物包括以液体形式添加所述生育酚组合物。
35.权利要求30的方法,所述方法进一步包括将所述生育酚组合物与柑桔油预混合以提供混合物,然后将所述混合物添加到所述柑桔汁饮料中。
36.权利要求30的方法,其中所述生育酚组合物包含大约0-14重量百分比的d-α-生育酚和至少一种选自d-β-生育酚、d-γ-生育酚和d-δ-生育酚的生育酚。
