发明背景
许多人没有吸收足够的营养而达到营养完全的饮食。为帮助这些人,开发了很多营养补充剂。营养补充剂的目的不是提供所有必须的营养成分而达到营养完全的饮食,相反其目的是补充饮食以使之营养更全面。
营养补充剂的使用对象有很多,如儿童、老人和吞咽困难的病人。吞咽困难在所有年龄组都很常见,但在老年人中尤其多。典型的症状包括流口水,感觉食物粘在咽喉中,胸部或咽喉不适,感觉咽喉哽阻,以及由于食物不易吞到胃中和食物被吸入肺中而引起的咳嗽或窒息。
吞咽困难可由许多因素引起,例如,简单的原因可能是坏牙、安置不当的假牙、流行性感冒或者胃食管反流,其它较严重的原因包括中风、进行性神经失调、气管切开术中导管的存在、声带麻痹、肿瘤、或者头、颈或食管部位的手术。
一般对大多数人来说,这些状况可以相当快地自行消失,或者可以容易地用适当的牙科方法处理。然而,对于比较严重的病例,这些状况不易治疗。在这些病例中,病人经常会发生体重减少以及营养和液体吸收不足引起的其它并发症。
一般发现,吞咽困难的病人能够较好地吞咽粘性较大的食物和饮料。因此建议向饮料和液体食物中加入增粘剂以帮助吞咽困难的病人吞咽。例如,日本专利申请5-38262描述了一种由α-淀粉和糊精组成的制剂,它可以加入到液体食品中使之增稠而不改变液体食品的色香味。此外可使咖啡饮料增稠的可溶性咖啡粉在市场上以“RESOURCE”(诺华营养品部)的商标出售,这种粉末中含有改性淀粉以使咖啡饮料具有“蜜一样”的稠度。
然而,仍然需要这类营养组合物,它可以使吞咽困难的病人更易食用且具有高营养价值。

蛋白质源包括乳清蛋白。乳清蛋白可以是任何市售的具有基本完整形式的乳清蛋白质源,然而,优选的乳清蛋白是一种乳清蛋白提取物。乳清蛋白提取物含有大于90重量%的乳清蛋白。合适的乳清蛋白提取物源包括ALACEN 895(新西兰乳品公司),BiPRO(Le SueurIsolates of Le Sueur,明尼苏达),PROVON-190(艾凡莫尔营养剂公司,门罗,威斯康星)和LACPRODAN 9212(皇家蛋白质公司,罗西蒙,伊利诺伊)。

本营养组合物可通过在搅拌下将蛋白质源悬浮于水中制造。然后可以加入糖源、脂源(如果需要)、维生素和矿物质、酸化剂、香精、和色素以得到液体混合物。可使用市售液化剂以形成液体混合物。液体混合物的温度可以是室温,但需要时也可用高温。
然后将液体混合物标准化以提供所需的固体含量,例如约20重量%到约28重量%,更优选的固体含量是约24重量%到约26重量%。其pH可标定到约3.5到约4.1。
如果液体混合物中含有脂肪,随后可将混合物均质化,例如两阶段均质,第一阶段在约7MPa到约40MPa,第二阶段在约2MPa到约14MPa。如果均质化之前没有进行,可在此时标定均质混合物的pH和固体含量。不含脂肪的产品没必要进行均质化。

类似地,本营养组合物可用作通用营养补充剂,尤其是对儿童。需要消耗的营养组合物的量并不重要。

现在描述本发明的具体实施例以作进一步说明。
实施例1
室温下将水加入批次混合罐中并中速搅拌,将乳清蛋白提取物(ALACEN 895)加入水中,麦芽糊精(DE 15)、甜味剂和淀粉(可选)的糖混合物在搅拌下加入溶液中,然后加入矿物质。用马来酸和磷酸和果汁的酸性混合物将溶液酸化到pH为约3.6,然后加入香精、色素和维生素,必要时再将溶液的固体含量标定到所需水平。
