本发明公开了一种具有减少糖分吸收功能的组合物,按重量份计算,包括如下组分:麦芽糖醇14.6‑40.1份;山梨糖醇15‑30份;桑叶提取物15‑22份;D‑甘露糖醇10‑20份;秋葵粉3‑12份;青金桔粉0.2‑0.6份;植物复合粉0.5‑1.2份;柠檬酸0.2‑0.6份;甜味剂0.1‑0.3份;食用香精0.6‑1.6份;硬脂酸镁0.6‑1.3份。本发明还公开了其应用。本发明的组合物能够阻断碳水化合物和脂肪类的吸收,它既可降低α‑葡萄糖苷酶的活性,还可降低脂肪酶的活性,双重阻断淀粉和脂肪的吸收,达到控糖的目的。
Description
技术领域
本发明涉及功能性食品领域,具体涉及一种具有减少糖分吸收功能的组合物及其应用。
背景技术
碳水化合物是人体内最快捷的能量来源方式,进入人体内会被人体转化成小分子的糖类进而被人体吸收,从而引起血糖升高。
脂肪是人体能量的主要存储方式,能量值最大,也是最不易动用的能量来源。当人体摄入碳水化合物过多时,多余的能量最终会以脂肪的形式存储在体内;当人体摄入碳水化合物过少时,体内存储的脂肪又会分解释放能量供人体所需。
人体内糖分过多,除了会转化成脂肪造成肥胖之外,还会发生各种反应。糖和蛋白质在酶的作用下结合时生成糖蛋白,糖蛋白承担了人体非常重要的生物学功能。当糖与蛋白在非酶条件下结合时(即“非酶性糖基化”),就会形成不可逆的产物即晚期糖基化终末产物(AGEs)。AGEs能够和身体的组织细胞相结合并破坏它们。AGEs可加速人体的衰老并且导致许多慢性疾病的发生,如糖尿病、动脉粥样硬化、阿尔兹海默症等。降低AGEs可以起到抗衰老和预防各种慢性疾病的作用。
过量的糖和蛋白质在体内合成AGEs对身体造成损害,故减糖、控糖已经成为当下流行的健康生活方式。
目前主要流行的控糖、减糖方式主要有:控制饮食、药物控制、科学运动。控制饮食难以持久,需要极强的毅力才能坚持,若中途放弃可能带来报复性饮食;药物控制则容易带来副作用以及依赖性,不适合长久服用;科学运动能消耗体内多余的糖分,但是需要时间和精力地投入,现代都市快节奏的生活使得足够保持合适的时间和精力运动变得尤其困难。
市场上还有一些控制或者降低血糖的食品,但是存在风味较差、服用不方便、效果差等问题。
发明内容
为了克服现有技术的上述缺陷,本发明的目的在于提供一种具有减少糖分吸收功能的组合物及其应用。该组合物能够阻断碳水化合物和脂肪类的吸收,它既可降低α-葡萄糖苷酶的活性,还可降低脂肪酶的活性,双重阻断淀粉和脂肪的吸收,达到控糖的目的。
一种具有减少糖分吸收功能的组合物,按重量份计算,包括如下组分:
麦芽糖醇14.6-40.1份;
山梨糖醇15-30份;
桑叶提取物15-22份;
D-甘露糖醇10-20份
秋葵粉3-12份;
青金桔粉0.2-0.6份;
植物复合粉0.5-1.2份;
柠檬酸0.2-0.6份;
甜味剂0.1-0.3份;
食用香精0.6-1.6份;
硬脂酸镁0.6-1.3份。
在本发明的一个优选实施例中,所述植物复合粉为公开号CN107920561A的中国专利所制备的植物复合粉。
在本发明的一个优选实施例中,所述甜味剂为非人工合成的甜味剂甜菊糖苷或罗汉果甜苷中的任意一种或多种。
在本发明的一个优选实施例中,所述食用香精薄荷香精或金桔香精中的任意一种或多种。
一种具有减少糖分吸收功能的组合物的应用,所述应用为将所述组合物制备为压片制剂,随餐服用。制备为压片制剂更具体指的是制备桑叶秋葵压片糖果。
在本发明的一个优选实施例中,所述随餐服用的食用剂量为每餐2-4粒。
本发明的有益效果在于:
本发明的组合物能够阻断碳水化合物和脂肪类的吸收,它既可降低d-葡萄糖苷酶的活性,还可降低脂肪酶的活性,双重阻断淀粉和脂肪的吸收,达到控糖的目的。

具体实施方式
本发明各组分所带来的有益效果和创新点如下:
1.桑叶提取物含有1-脱氧野尻霉素(DNJ),人体吸收糖分之前,需要活性酶将多糖催化分解成单糖才能吸收,DNJ可以抑制α-葡萄糖苷酶对蔗糖、碳水化合物的作用,减少人体对糖的吸收,从而达到控糖目的。有临床研究表明,服用一定量的桑叶提取物能减少约40%的餐后血糖飙升。桑叶提取物减少糖和碳水化合物的分解,未消化的碳水化合物到达回肠后,产生“回肠制动”效应,减少进食渴望和饥饿感;未消化的碳水化合物还通过刺激胰高糖素样肽-1(GLPl)引发“纤维样”效应,从而增强胰岛素反应;未消化的蔗糖和碳水化合物还将作为结肠中微生物的食物,它们被发酵成短链脂肪酸并被重新吸收到血液中,保留了食物的总能量值。
2.秋葵粉为新鲜秋葵可食部分加工制得,制成的秋葵粉含有由果胶、粘性糖蛋白和维生素矿物质等组成的黏性物质,可将脂肪包裹其中,排出体外,减少脂肪吸收。临床研究表明,其对于体重、腰围等有明显的改善作用。研究表明人体脂肪过多,容易诱导机体产生胰岛素抵抗,降低胰岛素的敏感性,从而导致血糖异常升高,减少脂肪的摄入能避免机体产生胰岛素抵抗从而保持机体正常血糖水平。
3.苹果、橄榄、绿茶和葡萄含有多酚类物质,不仅能够有效抗氧化清除自由基,还可以抑制多种消化酶活性、改善胰岛素抵抗、降低体内外源葡萄糖产生,从而调节体内糖代谢,促进血糖平衡。
4.公开号为CN107920561A的中国专利发明了一种可用于食品、饮食补充剂、化妆品和药物制剂的呈现多种协同抗氧化活性的植物复合物,优化了苹果、葡萄、绿茶、橄榄提取物的配比,使得抗氧化活性大于等量任意提取物或提取物总和所提供的抗氧化活性。
5.甜味剂采用非人工合成的甜味剂甜菊糖苷和罗汉果甜苷。罗汉果甜苷具有甜度大、热量低、稳定性好的特点,食用后不会引起机体血糖升高,且有研究表明,罗汉果甜苷浓度对α-葡萄糖苷酶活性抑制作用呈剂量增加现象,罗汉果甜苷可通过抑制食物葡萄糖转化和提高餐后胰岛素水平来调节机体血糖平衡。
甜菊糖苷在人体不能被消化道的酶分解消化,故摄入后血糖浓度不会发生升高,研究表明中、高浓度的甜菊糖苷具有明显的降低血糖的效果,随着浓度的升高降血糖的效果不断增强。
6.柠檬酸所带来的酸味能够在一定程度上遮盖桑叶提取物的苦涩味,搭配食品香精能够大大降低其带来的不良口感,使得产品口感体验更好。
7.薄荷香精和金桔香精与青金桔粉结合,能够遮蔽桑叶提取物原料本身的不良风味,使产品呈现出清凉感以及饱满的金桔风味。

基料91份、金桔粉末香精1份、薄荷香精1份、青金桔粉7份。
其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
实施例2
基料91份、巧克力香精1份、遮苦香精1份、可可粉7份。
其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
实施例3
基料。其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
实施例4
基料91份、奶味香精2份、脱脂乳粉7份。
其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
实施例5
基料91份、普洱茶香精2份、普洱茶粉7份。
其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
实施例6
基料91份、山楂香精2份、山楂粉7份。
其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
实施例7
基料91份、绿茶香精2份、绿茶粉7份。
其中基料配比为:麦芽糖醇30份、山梨糖醇27份、桑叶提取物20份、D-甘露糖醇14份、秋葵粉6.7份、专利植物复合物0.8份、柠檬酸0.2份、天然复配甜味剂0.3份,硬脂酸镁1份。
为了解决桑叶提取物和专利植物复合物风味差难以坚持食用的问题,尝试将含有桑叶提取物和专利植物复合物的基料加上不同的果粉、食品香精等调配成不同风味,并且压制成压片糖果,按照实施例1-7配方进行调配。
随机邀请17位潜在消费者对不同风味进行评分(满分10分,分数越高口味越好),初步筛选出比较合适的风味。消费者评分如下表1所示:

从以上风味测评结果可知,青金桔风味与桑叶提取物配伍能较好地掩盖其本身的不良风味,使得消费者容易接受,易于长期服用。

麦芽糖醇40.1份、山梨糖醇15份、桑叶提取物15份、D-甘露糖醇10份、秋葵粉12份、柠檬酸0.5份、青金桔粉5份、专利植物复合物1份、金桔粉末香精0.5份、薄荷香精0.2份、天然复配甜味剂0.1份,硬脂酸镁0.6份。
实施例9
麦芽糖醇34.75份、山梨糖醇20份、桑叶提取物17份、D-甘露糖醇14份、秋葵粉9份、柠檬酸0.2份、青金桔粉3份、专利植物复合物0.5份、金桔粉末香精0.5份、薄荷香精0.1份、天然复配甜味剂0.15份,硬脂酸镁0.8份。
实施例10
麦芽糖醇26.7份、山梨糖醇24.7份、桑叶提取物18份、D-甘露糖醇16份、秋葵粉7份、柠檬酸0.4份、青金桔粉4份、专利植物复合物0.8份、金桔粉末香精0.8份、薄荷香精0.4份、天然复配甜味剂0.2份,硬脂酸镁1份。
实施例11
麦芽糖醇24.95份、山梨糖醇25份、桑叶提取物20份、D-甘露糖醇19份、秋葵粉5份、柠檬酸0.3份、青金桔粉2份、专利植物复合物0.7份、金桔粉末香精1.1份、薄荷香精0.5份、天然复配甜味剂0.25份,硬脂酸镁1.2份。
实施例12
麦芽糖醇14.6份、山梨糖醇30份、桑叶提取物22份、D-甘露糖醇20份、秋葵粉3份、柠檬酸0.6份、青金桔粉6份、专利植物复合物1.2份、金桔粉末香精0.7份、薄荷香精0.3份、天然复配甜味剂0.3份,硬脂酸镁1.3份。
评定人员的选择与评定方法:评定小组由20名小组成员组成,小组成员对食品的色、香、味有较高的分辨力和灵敏度。所测样品采用2位随机数字编码,在室温下进行喜好度测评,感官评分采用得分的平均值来计算。品评前先用温水漱口,每品尝完一个样品在品尝下一个样品之前均需用温水漱口。评价由色泽、口感、气味、甜度、酸度五个维度组成,每个维度满分10分,喜好度评分如下表2所示:

由以上感官评分结果可知,实施例10的感官评分最高,配方中各原料的添加量组合风味较佳。
应用例1:本发明所制备的桑叶秋葵压片糖果控制人体餐后血糖的效果。
服用组合物对于人体餐后血糖飙升的影响试验:
第一次,选择8名血糖正常的受试对象(经期、孕期、哺乳期妇女除外),试验采用自身对照,试验分两次进行。第一次,受试者于试验前一天晚8点后禁食,试验当天早晨先检测空腹血糖值,然后于20分钟内食用完指定面包,食用完开始计时,分别于15分钟、30分钟、60分钟、120分钟手指采血测试血糖值作为对照组。
第二次,受试者于试验前一天晚8点后禁食,试验当天早晨先检测空腹血糖值,然后服用4粒按照实施例4配方制作的压片糖果,并于20分钟内食用完指定面包(与第一次相同),食用完开始计时,分别于15分钟、30分钟、60分钟、120分钟手指采血测试血糖值。两次试验中间间隔一天作为清洗期。测得的血糖值均值作为实验组。
对照组和实验组的数据如下表4所示:

将上述血糖平均值绘制成血糖应答曲线如下图1所示。
结合表4的数据和图1当中的趋势,参考《WS/T 652-2019食物血糖生成指数测定方法》中的方法计算血糖应答曲线下面积,血糖应答曲线下面积越大,食物对血糖波动的影响越大。则对照组为147.15,实验组为119.55。
因此可以说明:实验组相比对照组血糖更加平稳,摄入相同的食物后两小时内血糖值波动更小。
通过以上试验数据可知,本发明所制备的桑叶秋葵压片糖果能减少糖分的吸收从而能够稳定血糖。

1.一种具有减少糖分吸收功能的组合物,其特征在于,按重量份计算,包括如下组分:
麦芽糖醇14.6-40.1份;
山梨糖醇15-30份;
桑叶提取物15-22份;
D-甘露糖醇10-20份
秋葵粉3-12份;
青金桔粉0.2-0.6份;
植物复合粉0.5-1.2份;
柠檬酸0.2-0.6份;
甜味剂0.1-0.3份;
食用香精0.6-1.6份;
硬脂酸镁0.6-1.3份。
2.如权利要求1所述的一种具有减少糖分吸收功能的组合物,其特征在于,所述植物复合粉为公开号CN107920561A的中国专利所制备的植物复合粉。
3.如权利要求1所述的一种具有减少糖分吸收功能的组合物,其特征在于,所述甜味剂为非人工合成的甜味剂甜菊糖苷或罗汉果甜苷中的任意一种或多种。
4.如权利要求1所述的一种具有减少糖分吸收功能的组合物,其特征在于,所述食用香精为薄荷香精或金桔香精中的任意一种或多种。
5.一种具有减少糖分吸收功能的组合物的应用,其特征在于,所述应用为将如权利要求1-4当中任一项所述组合物制备为压片制剂,随餐服用。
6.如权利要求5所述的一种具有减少糖分吸收功能的组合物的应用,其特征在于,所述随餐服用的食用剂量为每餐2-4粒。
7.如权利要求5所述的一种具有减少糖分吸收功能的组合物的应用,其特征在于,所述制备为压片制剂更具体指的是制备桑叶秋葵压片糖果。
