Description
Technical Field
The invention relates to the technical field of pet foods, in particular to a multilayer mashed meat pet can and a preparation method thereof.
Background
Currently, known double-layer or multi-layer pet cans are prepared by the following methods: step one, realizing different layers of cans by combining pure meat blocks or combined meat blocks or vegetable and fruit particles with colloid solutions in different colors; and secondly, the bottom layer of the can is made of meat paste, and pure meat blocks or combined meat blocks or vegetable and fruit blocks with different colors are combined with a colloid solution on the meat paste. At present, a plurality of layers of mashed meat pet cans are hardly available in the market, and pure meat blocks or combined meat blocks or vegetable and fruit blocks with different colors are added into the cans, and mostly manual operation or semi-automatic operation is adopted, so that a great deal of manual participation is needed. The artificial participation not only increases the chance of product pollution, but also the uniformity of the product is easily subjectively influenced, and the product cost is greatly increased.
Disclosure of Invention
Aiming at the defects of the prior art, the invention provides a multilayer mashed meat pet can and a preparation method thereof.
The technical scheme adopted for solving the technical problems is as follows:
a multilayer meat mud pet can comprises at least one layer of mud-like material liquid and at least one layer of interlayer film, wherein the interlayer film is arranged between adjacent mud-like material liquids, so that layering is realized between the adjacent mud-like material liquids.
Further, the adjacent mud-like material liquid is layered layer by layer from the bottom layer upwards along the can.
Further, the muddy material liquid is composed of muddy meat, vegetables and/or fruits and auxiliary materials, and the moisture content is 60% -90%; the auxiliary materials are starch, protein powder, water-retaining agent, palatability additive, pigment and the like, and are not limited herein; the auxiliary materials are preferably powdery or granular, and water can be selectively added for preparation in order to obtain proper moisture content of the pug material liquid.
Further, the mud-like material liquid also comprises blocky meat, vegetables andor fruit; the meat, vegetables and fruits are fresh raw materials, frozen storage raw materials, cooked raw materials or semi-cooked raw materials, and are not limited herein; for better layering effect, the volume of the block is 0.5m 3 Hereinafter, circular, elliptical, square blocks are preferable.
Further, the adjacent mud-like material liquid is material liquid composed of the same raw materials or material liquid composed of different raw materials, and the material liquid composed of the same raw materials or material liquid composed of different raw materials is isolated by a barrier film; if the muddy material liquid with various nutritional ingredients or various tastes is prepared by matching different kinds of meat, vegetables and/or fruits with ingredients, the interlayer film can be used for filling various different raw materials in the same canned product so as to meet the nutritional requirements or taste requirements of pets; if different food pigments are added into the muddy material liquid or different vegetable and fruit raw materials are matched to prepare muddy material liquid with different appearance and nutrition components, the muddy material liquid can be filled with a plurality of different raw materials in the same can product through the interlayer film, and the transparent can container can clearly display different-color and distinct-interval multi-layer contents so as to meet the nutrition requirements, taste requirements and/or novel appearance requirements of pets.
Further, the interlayer film is a calcium alginate film.
The preparation method of the multilayer mashed meat pet can comprises the following steps:
(1) Preparing a mud-like material liquid;
(2) Filling a layer of the muddy material liquid prepared in the step (1) into the bottom of the can;
(3) After filling the mud-like material liquid, forming a layer of interlayer film on the upper part of the mud-like material liquid;
(4) Continuously filling a layer of the mud-like material liquid prepared in the step (1) on the interlayer film;
(5) Repeating the steps until the number of layers meeting the set requirement is increased;
(6) Packaging and sterilizing at high temperature.
Further, the mud-like material liquid is evenly mixed with alginate, and the realization mode of forming a layer of interlayer film in the step (3) is as follows: and uniformly spraying calcium salt to the upper part of the mud-like material liquid to form a barrier film. Preferably, when the alginate is blended in the slurry, the mass concentration of the alginate in the slurry is 0.5% -3%.
Further, the implementation manner of forming the interlayer film in the step (3) is as follows: uniformly spraying a layer of alginate solution on the upper part of the mud-like material liquid, and then uniformly spraying a calcium salt solution to form a barrier film. Preferably, the mass concentration of the alginate in the sprayed alginate solution is 2-10%; preferably, the sprayed calcium salt solution is calcium salt water solution, and the mass concentration of the calcium salt solution is 1-5%. The above concentration, in the case of being difficult to achieve, can be achieved by means of heating or the like, because the formation process of the calcium alginate film formed and the properties after the film formation are hardly affected by temperature fluctuations in the conventional processing temperature range of pet foods. In order to improve the spray uniformity, the spray header is preferably an atomization spray header, and the amount sprayed in the actual processing process can be calculated according to the time, and the preferable calculation mode of the specific spraying time is as follows: the amount of liquid sprayed on the dried and clean glass is preferably such that the glass is completely covered in a certain range and the sprayed liquid on the glass does not flow together.
Further, the alginate is one or more of sodium alginate, potassium alginate and ammonium alginate.
Further, the calcium salt is one or more of calcium chloride, calcium citrate, calcium gluconate and calcium sulfate.
In the preparation process of the multilayer meat paste pet can, because the sprayed liquid amount is not large, the actual spraying time is about 1s, and a plurality of miniature atomizing spray heads used, including alginate solution spray heads, calcium salt solution spray heads, acid gelatin solution spray heads and the like, can be assembled on the upper part of a pet can processing production line, and the mechanical automatic processing or semi-automatic processing of the multilayer pet can is realized through an intelligent control system.
When the inventor team of the application is in earlier stage research, realize the layering among the filling content of different levels with current through the colloid membrane, find that the multilayer meat mud pet can of this mode preparation can mix the content between different layers through simple rocking, consider can goods need to carry out follow-up processing, storage and transportation etc. after the preparation, inevitably see rocking, concussion even fall, therefore can with the prior art preparation can practically can't realize layering effect.
The invention adopts the interlayer film formed by taking alginate and calcium salt as main materials between mud-like material liquids of different layers, has the characteristic of rapid formation of the interlayer film, can realize the formation of the interlayer film only by half a minute, and the formed interlayer film is insoluble in water, colorless and odorless and is very suitable for being used as an interlayer between high-water-content layers. In the prior art, the mode adopted when sodium alginate is used as a main material to prepare a film layer is generally as follows: the method is used in continuous production of can products, the film layer needs to be prefabricated in advance, and the production process needs to manually spread the film into the cans (spread the prefabricated film layer), so that the production efficiency of multilayer cans can be severely restricted, and the processing cost is greatly improved due to a large amount of manual operation.
When the interlayer film is applied to the multilayer pet can product, the calcium salt and the alginate which is positioned in the muddy material liquid or is adhered to the upper layer of the muddy material liquid in a uniform mechanical spraying manner are combined and crosslinked into the interlayer film by creatively selecting a uniform spraying manner, and then the other layer of can content is mechanically filled on the upper part of the interlayer film, so that the mechanical automatic processing or semi-automatic processing is realized. However, it is considered that the interlayer film formed only of alginate and calcium salt is formed only by exogenous Ca 2+ The crosslinked alginate hydrogel interlayer film has the problem of poor mechanical properties, particularly the interlayer film has high structural rigidity, is hard and brittle, is easy to break when being vibrated, shaken and the like, and causes the interlayer film to break easily when being subjected to the uneven gravity action of the content of the upper-layer can, thereby causing different layersIs difficult to achieve interlayer segregation by blending can contents. In order to solve the problem, the invention adopts acid gelatin, utilizes the property of cationic polyelectrolyte to lead the polyelectrolyte to generate polyelectrolyte crosslinking effect between alginate and acid gelatin, and combines Ca in calcium salt 2+ The mechanical strength of the interlayer film is greatly improved by the crosslinking effect of the interlayer film and the alginate.
In the process of preparing the multilayer meat mud pet can, firstly, alginate is mixed in a muddy material liquid or is uniformly sprayed on the upper part of the muddy material liquid, then calcium salt is sprayed on the upper part of the muddy material liquid, and in order to improve the mechanical strength of a interlayer film after film formation, a layer of acid-process gelatin liquid is sprayed again after the calcium salt is sprayed, wherein the sprayed acid-process gelatin liquid is an acid-process gelatin aqueous solution, and the mass concentration of the acid-process gelatin aqueous solution is preferably 0.5-5%; however, in the manufacturing process of the multilayer meat paste pet can, the forming time of the interlayer film is relatively long, and the time required for forming the interlayer film with certain strength after spraying is about 5-15min, one of the reasons is that Ca in calcium salt 2+ The time required for the release is longer, and in addition, the efficiency of the polyelectrolyte cross-linking between alginate and acid gelatin is greatly affected by pH. In this way, waiting for the formation of the barrier film will be the greatest obstacle to the efficiency of multilayer pet can preparation when multilayer pet can preparation is performed.
The invention sprays a layer of activating solution, preferably tartaric acid and/or citric acid aqueous solution, to the upper part of the pug liquid after spraying calcium salt solution and before spraying acid gelatin solution, wherein the mass concentration of the activating solution is 0.5-3%, thereby greatly activating the formation of interlayer film, improving the formation efficiency of interlayer film and helping to improve the mechanical strength of interlayer film, and the possible reason is that the H released by the activating solution is + Contributing to Ca in calcium salt 2+ To efficiently crosslink with sodium alginate; the method comprises the steps of carrying out a first treatment on the surface of the Is the pH factor H of the spray liquid on the surface layer of the content + The release of the acid gelatin is reduced below the isoelectric point of the acid gelatin, so that the acid gelatin and the alginate are subjected to the polyelectrolyte action. Can control the time required for forming a barrier film with certain strength within 1min after sprayingThe preparation efficiency of the multilayer mashed meat pet can is improved.
Compared with the prior art, the invention has the beneficial effects that:
(1) The multilayer processing of the pet can is realized through the arrangement of the interlayer film, so that a plurality of food materials with different colors, different tastes, different nutrient components and the like can be filled in one can of the pet can, the double-layer or multilayer meat paste can with stable shape and distinct layers is creatively prepared, the added value of the pet can product is greatly improved, and the gap of the products in the market is filled;
(2) The prepared interlayer film has high forming efficiency and high mechanical strength, can effectively protect the integrity of double-layer or multi-layer structures in the multilayer meat paste pet can, and is beneficial to realizing mechanized operation.

In this embodiment, the mud-like material liquid is not mixed with alginate, and the implementation manner of forming the interlayer film in the step (3) is as follows: uniformly spraying a layer of sodium alginate solution with the mass concentration of 2% onto the upper part of the mud-like material liquid, uniformly spraying a layer of calcium gluconate solution with the mass concentration of 3% onto the upper part of the mud-like material liquid, finally spraying a layer of acid gelatin solution with the mass concentration of 2% onto the upper part of the mud-like material liquid, and waiting for 30s to form a barrier film.
Comparative example 5: a preparation method of a multilayer mashed meat pet can comprises the following steps:

(4) Continuously filling a layer of the mud-like material liquid prepared in the step (1) on the interlayer film;

In this embodiment, the mud-like material liquid is not mixed with alginate, and the implementation manner of forming the interlayer film in the step (3) is as follows: uniformly spraying a layer of sodium alginate solution with the mass concentration of 2% onto the upper part of the mud-like material liquid, uniformly spraying a layer of calcium gluconate solution with the mass concentration of 3% onto the upper part of the mud-like material liquid, finally spraying a layer of acid gelatin solution with the mass concentration of 2% onto the upper part of the mud-like material liquid, and waiting for 60s to form a barrier film.
The interlayer films obtained in examples 1 to 8 and comparative examples 1 to 5 were peeled off, and were tested after being gently cleaned in deionized water under the same conditions, and the tensile strength and elongation at break in the wet state were tested. The parameters are set as follows: the clamp A-MTG is adopted, the pre-measurement rate, the mid-measurement rate and the return rate are set to be 0.5mm/s, the trigger force is Auto-10g, the stretching distance is 20mm, and the average value is obtained by repeatedly measuring each group of samples for 3 times, so that the results are shown in the following table.
The test results of examples 1 and 2 show that the types of calcium salt, alginate and activating solution used have little influence on the results, and in other examples, sodium alginate is used as the alginate, calcium chloride is used as the calcium salt and tartaric acid solution is used as the activating solution in order to ensure consistency of the test conditions. Measurement of example 1 and example 4The test results show that the mechanical strength of the obtained interlayer film is not very different no matter the alginate is mixed into the mud-like material liquid or directly sprayed on the surface layer of the mud-like material liquid, but the cost is high under the condition of mass production considering that the concentration of the alginate mixed into the mud-like material liquid is 0.5-3%, and the mode of directly spraying the alginate solution is preferred. The test results of examples 7 and 8 show that too short a barrier film formation time (20 s) will affect the strength of the film layer, but that the barrier film formation time at 30s will not differ much from the strength at 60s, indicating that the barrier film substantially completes Ca in the calcium salt within 30s 2+ The dissociation and cross-linking with sodium alginate and the polyelectrolyte between acid gelatin and alginate simultaneously demonstrate that the preparation of barrier films in pet food cans in this application has very high effective film forming efficiency. The test results of the comparative examples 1, 2 and 4 show that the mechanical strength of the prepared interlayer film can be greatly improved by adopting the acid-process gelatin layer; the test results of comparative example 3 demonstrate that the mechanical strength of the resulting barrier film is not effectively improved by the use of subtractive gelatin, and that similar effects are also obtained if enzymatic gelatin is used, indicating that only acid gelatin is used, which has cationic polyelectrolyte properties to cause polyelectrolyte cross-linking between alginate and acid gelatin, in combination with Ca in the calcium salt 2+ The mechanical strength of the interlayer film can be effectively improved by the crosslinking effect of the interlayer film and the alginate. The test results of comparative examples 1 and 4 and example 4 show that the activating liquid can effectively activate the formation of the barrier film, improve the formation efficiency of the barrier film and help to improve the mechanical strength of the barrier film; the mechanical strength of the film obtained in comparative example 5 was improved to some extent as compared with that of comparative example 4, but it was still impossible to give a sufficient film formation time without spraying the activating liquid when possible, and the mechanical strength of the interlayer film was expected to be equivalent to that of example 4, but there was practically no room for practical implementation in view of the processing efficiency.
The interlayer films obtained in examples 1 to 6 and 8 can meet the requirement that cans containing the muddy stock liquid fall off at 0.5m above the air without cracking, so that the structural integrity of the double-layer or multi-layer muddy meat pet cans disclosed by the invention can be protected, and the test conditions can comprise collision conditions encountered in the transportation process of most cans, and can well solve the problems occurring in the transportation process of cans. The interlayer film obtained in example 7 had 1-3 cracks in the middle when dropped at 0.5m above; when the interlayer film obtained in the comparative examples 1-5 falls under the condition that cans filled with the muddy material liquid are 0.5m high-altitude, a plurality of cracks can appear and even the interlayer film can be completely broken, so that the filled materials between adjacent layers are mixed, and the actual interlayer effect cannot be achieved.
The above is a preferred embodiment of the present invention, and those skilled in the art may also make alterations and modifications to the above described embodiment, therefore, the present invention is not limited to the above described embodiment, and any obvious improvements, substitutions or modifications made by those skilled in the art on the basis of the present invention are all within the scope of the present invention.
