Abstract

本发明公开了一种不添加的食品保鲜包,在食品包装中除去氧气,置换灭菌气体,阻隔氧进入食品包装内,在食品包装中构建气相防霉灭菌气相环境,有效控制好氧菌、厌氧菌、霉菌等微生物的生长与繁殖,防止油脂氧化,从而能有效地保持食品的色、香、味,防止维生素等营养物质被氧化破坏,延长食品保质期。本发明的防腐保鲜物质不直接添加于食品中且不与食品接触,使得食品更安全。鲜湿米面制品采用本发明保鲜,常温保质期可达6个月,生鲜肉类食品常温保质期可达1个月,生鲜蔬菜水果类食品常温保质期可达3个月,餐饮类食品常温保质期可达1个月。

技术领域
本发明涉及食品保鲜技术,具体是一种不添加的食品保鲜包。
背景技术
食品中有许多组分都与氧的存在密切相关。从生化角度看,脂肪遇氧会氧化哈败,维生素和多种氨基酸会失去营养价值,氧还会使不稳定色素变色或褪色;从微生物角度看,大部分的微生物都会在有氧的环境中良好生长,即使氧的含量在包装环境中低至2~3% ,大部分的需氧菌和兼性厌氧菌仍能生长,生化反应也仍会进行。故在食品包装中除去氧气,置换灭菌气体,阻隔氧进入食品包装内,在食品包装中构建气相防霉灭菌系统,有效控制细菌、霉菌等微生物的生长,防止油脂氧化,从而有效地保持食品的色、香、味,防止维生素等营养物质被氧化破坏,延长食品保质期,具有非常重要的意义。然而,现有的脱氧保鲜技术虽然对好氧菌产生一定的抑制作用,而对厌氧菌的抑制作用不明显—无氧环境正好是厌氧菌生存繁殖的良好环境,这是一个遗憾。
本发明的技术方案:
一种不添加的食品保鲜包,由以下重量份%配料组成:WY脱氧剂40%-55%、DY气态杀菌剂混合物10%-15%、ZY置换气态化合物30%-45%、壳聚糖1%-5%组成。
所述WY脱氧剂由重量份%配料组成:铁粉25%-45%、活性炭10%-20%、食盐3%-8%、抗坏血酸8%-15%、铜粉1%-3%、蒙脱石10%-15%组成。
所述DY气态杀菌剂混合物由固相二氧化氯5%-15%、柠檬酸10%-15%、双乙酸钠10%-15%、石菖蒲粉20%-30%、艾叶粉20%-30%、大蒜籽粉20%-30%、组成。
所述ZY置换气态化合物由固相二氧化碳CO2 10%-20%、缓释剂80%-90%组成。
所述一种不添加的食品保鲜包的加工方法,包括以下步骤:配料—混合搅拌均匀—选配包装膜—计量包装—复膜—定量(包)包装—检验—装箱—入库。
所述复膜,在保鲜包双面复合一层塑料膜,防止保鲜包祼露于空气而发生反应,包装食品之前,将复膜撕开口,与保鲜包一同置于食品包装袋内即可。

2.根据权利要求1所述WY脱氧剂由重量份%配料组成:铁粉25%-45%、活性炭10%-20%、食盐3%-8%、抗坏血酸8%-15%、铜粉1%-4%、蒙脱石10%-15%组成。
3.根据权利要求1所述DY气态杀菌剂混合物由固相二氧化氯5%-15%、柠檬酸10%-15%、双乙酸钠10%-15%、石菖蒲粉20%-30%、艾叶粉20%-30%、大蒜籽粉20%-30%、组成。
4.根据权利要求1所述ZY置换气态化合物由固相二氧化碳CO2 10%-20%、缓释剂80%-90%组成。
5.根据权利要求1—4所述一种不添加的食品保鲜包的加工方法,包括以下步骤:配料—混合搅拌均匀—选配包装膜—计量包装—复膜—定量(包)包装—检验—装箱—入库。
