The distillation and taking of the wine is a process for obtaining the wine with high alcohol content after the alcohol is concentrated and separated from the original wine liquid by heating and utilizing the difference of boiling points and cooled. During distillation, alcohol in the raw juice wine is distilled out and collected, and the concentration of alcohol is controlled. The flavourings in the raw juice wine will also be distilled together, thereby imparting a unique aroma and taste to the distilled wine.
The brewing of the Chinese traditional solid-state white spirit adopts solid saccharification and fermentation and solid retort distillation, and the double solid-state process forms the special complex aroma and style of the Chinese white spirit. Because the chemical components of the aroma-forming substances are very complex, the aroma-forming substances have low-boiling-point volatile compounds and high-boiling-point nonvolatile components, and the conventional kettle-type distiller and the distillation tower are difficult to distill out at the same time. The simultaneous extraction of alcohol and flavoring substances in fermented grains is a very troublesome technical problem.
Fermented grains are very complex mixtures in which the flavoring substances are soluble in both water and alcohol, and in which some are insoluble in alcohol only and in which others are insoluble in alcohol but in water. The distillation principles of these substances are different from each other, and some can be accomplished by simple liquid distillation; some require more complex distillation techniques such as azeotropic distillation, steam distillation, etc.
The technical scheme of the embodiment adopts a continuous solid distillation method of a wine distillation kettle, integrates various distillation methods of liquid distillation, azeotropic distillation and steam distillation, and continuously carries out the distillation, thereby better realizing the purpose of distilling the flavor substances and the alcohol together. In this embodiment, the fermented grains are filled in the wine steaming kettle 1 by the continuous feeding device 6 in a layered manner, and the fermented grains are stirred in the wine steaming kettle by the stirring device which ensures that the fermented grains are uniformly distributed in the wine steaming kettle, so that the fermented grains form different filling layers and rich steam channels. The fermented grains in the wine steaming kettle 1 are materials and fillers, and contain alcohol, flavor substances and sufficient moisture. And more steam channels are formed in the fermented grains, so that the steam contacts the fermented grains more. The material form lays an extremely good foundation for the functions of various special distillation techniques.
Meanwhile, the technical scheme of the embodiment solves the technical problems that in the prior art, wine steaming operation is carried out in a high-temperature environment, wine steaming personnel are required to continuously feed and scatter materials during wine screening, labor intensity is very high, and when distilled and distilled liquor is taken out, distilled grains are discharged from a steamer, a cover of the steamer is uncovered to pour the distilled grains, so that production of the screened wine is interrupted, production efficiency is reduced, and quality of the screened wine is influenced. According to the technical scheme, the uninterrupted stable assembly line production process is adopted, so that the production operation environment of the distilled liquor is improved, and the production efficiency and the product quality of the distilled liquor are greatly improved. In addition, the technical scheme of the embodiment greatly reduces the steam energy consumption due to uninterrupted wine steaming, reduces the influence on environmental protection, and is a novel wine brewing process meeting the high standard requirements of energy conservation, consumption reduction, environmental protection and safety.
Embodiment two:

Improves the production operation environment of distilled liquor and improves the production efficiency of distilled liquor. The product quality is reliably ensured by adopting an uninterrupted stable production process.
Preferably, the stirring paddle 402 is in a twisted shape, and according to the rotation direction of the stirring paddle 402, the inner side of the stirring paddle 402 positioned at the upper middle part in the fermented grains area presses the fermented grains downwards, and the outer side throws the fermented grains upwards; the inner side of the stirring paddle 402 positioned at the bottom of the fermented grains area throws the fermented grains upwards, and the outer side presses the fermented grains downwards. The stirring paddle 402 adopts a twisted blade shape, the inner side 4021 of the twisted blade of the stirring paddle 402 positioned at the top of the fermented grains changes from high to low according to the rotation direction of the stirring paddle 402, and the outer side 4022 of the twisted blade changes from low to high; the stirring paddles 402 at the bottom of the fermented grains change from low to high on the inner side 4021 of the twisted blades, and change from high to low on the outer side 4022 of the twisted blades.
In this embodiment, the fermented grains are filled in the steaming kettle 1 by the continuous feeding device 6 in a layered manner, and the fermented grains approaching the stirring shaft 401 are easy to move upwards and the fermented grains far away from the stirring shaft 401 are easy to move downwards due to the rotation of the stirring shaft 401 of the stirring device 4. In this embodiment, the stirring paddle 402 is in a shape of a twisted blade, the inner side 4021 of the twisted blade of the stirring paddle 402 located at the top of the fermented grains changes from high to low, and the outer side 4022 of the twisted blade changes from low to high according to the rotation direction of the stirring paddle 402. Can effectively lead the fermented grains at the top of the wine steaming kettle 1 to be uniformly distributed. Meanwhile, the stirring paddles 402 at the bottom of the distilled grains change from low to high, and the twisting blades outside 4022 change from high to low, so that the distilled grains at the bottom of the distilled grain steaming kettle can be effectively discharged uniformly.
Tests show that when the stirring paddle 402 adopts a common rod-shaped or sheet-shaped structure, the fermented grains can be gathered towards the periphery of the retort 1 under the action of centrifugal force when the stirring shaft 401 rotates, so that the steam channels in the fermented grains are unevenly distributed. Therefore, the uniform contact between the steam and the fermented grains in the whole retort 1 is affected, so that the quality and yield of the liquor obtained in the continuous liquor steaming production process are affected. Therefore, the stirring paddle 402 of the present invention adopts a twisted shape, and the inner side of the stirring paddle 402 located at the upper middle part of the fermented grains area is pressed down according to the rotation direction of the stirring paddle 402, and the outer side of the stirring paddle 402 is thrown up. The stirring paddle 402 thus arranged can restrict the fermented grains from being gathered outwards under the action of centrifugal force and form a uniform steam channel in the fermented grains under the rotation thereof. The inner side part of the stirring paddle 402 positioned at the bottom of the fermented grain area is adopted to throw the fermented grain upwards, the outer side part is adopted to press the fermented grain downwards, so that the fermented grain can be matched with the stirring effect of the stirring paddle 402 positioned at the upper middle part of the fermented grain area, and distilled grains can be completely and uniformly discharged out of the retort 1, thereby enabling the wine steaming process to obtain continuous and efficient production line production effect.
Preferably, a steamer cover 3 is arranged at the top of the wine steaming kettle 1, and a feed inlet of the continuous feeding device 10 is arranged on the steamer cover 3. The top of the steamer cover 3 is connected with an air duct 5 through an air duct 301. Through being located steaming wine cauldron 1 top steamer lid 3 to steaming wine cauldron 1 is interior continuous input unstrained spirits, can make unstrained spirits input and bedding be in more symmetrical unobstructed under the cooperation of agitating unit 4, be convenient for with steaming wine cauldron 1 bottom continuous discharging device 6's discharge process cooperation each other.
Preferably, the stirring device 4 is provided in a plurality of central symmetry. Because of the rotation of the stirring shaft 401 of the stirring device 4, the fermented grains approaching the stirring shaft 401 are easy to move upwards, and the fermented grains far away from the stirring shaft 401 are easy to move downwards. The stirring paddles 402 are in a twisted shape, the inner side of the stirring paddles 402 positioned at the upper middle part of the fermented grains area downwards presses the fermented grains, and the outer side upwards throws the fermented grains; the inner side of the stirring paddle 402 positioned at the bottom of the fermented grains area throws the fermented grains upwards, and the outer side presses the fermented grains downwards. Therefore, when a plurality of stirring devices 4 are adopted in the embodiment, the bottom of the wine steaming kettle 1 below each stirring device 4 is provided with a discharge port 101, the plurality of discharge ports 101 are summarized into a total discharge port, and then the total discharge port is connected to a discharge device. By adopting the embodiment, the fermented grains at the top of the wine steaming kettle 1 can be uniformly distributed, and the distilled grains at the bottom of the wine steaming kettle are uniformly discharged.
