Abstract
The invention discloses a formula and a production method of astronaut total nutrient food, which comprises the following components: 40% -50% of wheat flour, 15% -20% of sugar powder, 9% -11% of concentrated whey protein, 18% -20% of coconut oil powder, 6% -10% of collagen peptide, 0.1% -0.2% of vitamin premix and 4% -4.5% of mineral premix. The invention provides a solution to health problems of astronauts, which comprises a total nutrient food formula and a production process thereof, and belongs to the technical field of food production.
Description
Technical Field
The invention belongs to the technical field of food production, and particularly relates to a formula and a production method of an astronaut full-nutrition food.
Background
The special living environment facing the astronaut comprises special living environment such as weightlessness, noise, vibration, circadian rhythm change, radiation, narrow space and the like, and the living environment has important influence on organism physiology, biochemistry and metabolism of the astronaut. According to the time response characteristic of the physiological function of the human body to the space flight, the space motion disease can appear once entering a weightless environment, and symptoms are most obvious about three to two days, and basically disappear after one week; the reaction of the body fluid and the electrolyte is slightly retarded; the maximum response of the cardiovascular system is around three weeks; while loss of erythrocyte mass reaches the most severe level when flown for one month; muscle atrophy and bone loss then show a gradual increase in trend with time of flight. As the flight time increases, the body's resistance to human latent viruses and microorganisms in the cabin will decrease.
The physical health of astronauts is closely related to their daily nutritional supply. The space nutrition is mainly researched and solved, and how to meet the nutrition requirement of human body to the maximum extent under special space environment. The aerospace nutrition guarantee is to prepare comprehensive nutrition guarantee measures according to the nutrition theory and the research result of aerospace nutrition, and the measures are adopted to meet the nutrition requirements of astronauts in various stages of the aerospace process. Currently, 127 space foods are available, including staple foods, subsidiary foods, beverages, seasonings, functional beverages and the like, wherein the subsidiary foods are meat, livestock and poultry and vegetables, the nutrition is rich, and the taste can be regulated by the seasonings. However, the situation of unbalanced nutrition is unavoidable, and then the nutrition of the spacesman is guaranteed by the full-nutrition food with balanced nutrition.
The initial compression of biscuits is aimed at producing full, mainly flour, white sugar, fat and dairy products. The powder is prepared by mixing powder through a cold powder process, rolling, baking, crushing and compressing. The texture of the compressed biscuits is very compact, the water content is particularly low, and the water content in 100g of the compressed biscuits is only about 5 g. The heat of 100g of compressed biscuits is more than 450 kilocalories, and the carbohydrate content is close to 65g, which is equivalent to three bowls of rice. CN107432439a is prepared by granulating raspberry powder, matsutake polysaccharide, matrimony vine polysaccharide, yam extract, radix pseudostellariae extract, yeast extract, grape seed extract, green tea extract, astragalus extract, casein, lysine and taurine, adding xylitol, maltodextrin, beta-cyclodextrin and corn starch, tabletting, and providing a special anti-stress raspberry composite compressed biscuit for astronauts; CN107047692A is added with inulin, papain and other components, so that the functional compressed biscuit which is suitable for army and is easy to defecation is invented; CN107821525a discloses a nutritious stick for replacing compressed biscuits and a manufacturing method thereof, and the product contains rich proteins and high-fat substances. Aiming at the nutrition requirements of astronauts, the invention designs a full-nutrition functional compressed biscuit which has comprehensive nutrition and is beneficial to relieving muscular atrophy and osteoporosis and improving immunity.
Disclosure of Invention
In view of the above, it is an object of the present invention to provide a solution to the health problems of astronauts, including a complete nutritional food formulation, and a process for its production, in order to overcome the drawbacks of the prior art.
In order to achieve the above purpose, the technical scheme of the invention is as follows:
step one: puffing treatment of wheat flour
The moisture of the wheat flour is regulated to 26-30%, the wheat flour is put into a feeder of a double-screw extruder, the extrusion temperature is 130-135 ℃, and the screw rotating speed is 180-185 r/min. Pulverizing puffed wheat flour, and sieving with 60 mesh sieve.
Step two: nutrient premix
The materials are fed according to the addition amounts of the additives shown in the accompanying tables 1 and 2, and the materials are repeatedly mixed by a mixer, and sampling detection is carried out during the mixing until the detection value is within the detection range of the compound nutrient.

Step four: compression molding of products
And filling and pressing the biscuit compacting machine by using the mixed materials, wherein the shape and the size of the biscuit compacting machine can be adjusted according to the die. Can be pressed into small blocks and independently packaged, and is beneficial for astronauts to eat in weightless environment.
The beneficial effects of the invention are as follows:

The invention pretreats the wheat flour by double screw extrusion, the viscosity of the treated wheat flour is improved, the digestibility is improved, the texture is changed, and the fragrance is increased; thereby improving the molding rate of the compressed biscuits, improving the digestibility and improving the texture and the flavor of the products, and the produced compressed biscuits have moderate hardness and sweetness, have the faint scent of grains and have good taste and flavor.

Filling and pressing the biscuit compressor by using the mixed materials, and vacuum packaging to obtain the finished product.
Example 2:
adjusting the moisture of the wheat flour to 30%, putting the wheat flour into a feeder of a double-screw extruder, extruding at 135 ℃ and at 185r/min, crushing the puffed wheat flour, and sieving the crushed wheat flour with a 60-mesh sieve for later use; feeding according to the addition amounts of the additives shown in the attached table 1 and the attached table 2, repeatedly mixing by using a mixer, and sampling and detecting during the period until the detection value is within the detection range of the compound nutrient; mixing 47.3% of wheat flour, 15% of sugar powder, 9% of concentrated whey protein, 18% of coconut oil powder, 6% of collagen peptide, 0.2% of vitamin premix and 4.5% of mineral premix in a V-shaped mixer for 40min; filling and pressing the biscuit compressor by using the mixed materials, and vacuum packaging to obtain the finished product.

A formulation for an astronaut total nutrient food according to claim 2, wherein: vitamin A is derived from retinyl acetate, vitamin D is derived from cholecalciferol, vitamin E is derived from dl-alpha-tocopheryl acetate, vitamin B1 is derived from thiamine hydrochloride, vitamin B2 is derived from riboflavin, vitamin B6 is derived from pyridoxine hydrochloride, vitamin B12 is derived from cyanocobalamin, vitamin C is derived from L-ascorbic acid, vitamin P is derived from rutin, pantothenic acid is derived from D-calcium pantothenate, and the auxiliary material is maltodextrin.

step three: mixing wheat flour, sugar powder, concentrated whey protein, coconut oil powder, collagen peptide, vitamin premix, mineral premix, and low molecular weight sodium alginate in a groove mixer for 20-40 min to obtain semi-finished product;
