Description
Technical Field
The invention belongs to the field of health foods, and particularly relates to a zinc-selenium tea collagen peptide, a preparation process and application thereof.
Background
The collagen peptide has higher digestion and absorption property, the molecular weight is about 3000 daltons, and the collagen peptide can promote the formation of bones and strengthen the collagen structure under the low calcium level, thereby improving the bone strength, namely achieving the effect of preventing osteoporosis; in addition, collagen peptides have many other specific physiological functions: for example, protecting gastric mucosa, antiulcer, antiallergic, etc., it is particularly necessary to propose the cosmetic effect of collagen, which forms a fine elastic net in the skin to retain water and support the skin. Collagen loss causes fracture of elastic net for supporting skin, skin tissue atrophy and collapse, and skin can develop aging phenomena such as dryness, roughness, relaxation, wrinkles, large pores, darkness, color spots and the like. Therefore, the collagen is timely supplemented, and has very good effects of improving skin problems and delaying aging.
The trace elements are used as essential nutrients for human body, and the trace elements have a small content ratio in the human body, but have important effects of improving the immunity of the human body and preventing certain diseases. With the evolution of modern agricultural technology revolution and life style, human malnutrition diseases become serious problems which plague human health, and the problem of invisible hunger caused by micro-nutrition deficiency is particularly prominent. The trace element zinc is a component of six enzymes, 200 metalloenzymes or coenzyme in human body, and plays a wide role in whole body metabolism. Zinc plays an important role in stabilizing the structure and function of cell membranes, so that the skin can be whitened, and wound healing is promoted. Zinc can promote the formation of auxin and promote the activity of auxin, and deficiency of zinc often leads to abnormal manifestations such as retarded growth, anorexia, immune decline, pica and dermatitis. The trace element selenium has strong antioxidation capability, has important significance on cell membrane lipid antioxidation, can effectively ensure the elasticity and ductility of cell membranes, keeps the anti-aging capability of cells, and enjoys the reputation of 'longevity element', 'anticancer king', 'heart guard', 'natural antidote' and the like. When children lack selenium, symptoms such as slow growth, amyotrophy and degeneration, limb joint thickening, hair loosening, body weight reduction and the like can appear. Selenium deficiency can cause body immunity decrease, which makes children easy to be ill, and secondary causes children nutrition disorder, and causes vicious circle.
The Guizhou Fenggang tea has rich resources, the soil of the tea field belongs to acid soil, and the tea plant absorbs soluble inorganic elements in the soil in the metabolic process, so that the tea is rich in various microelements including zinc, selenium, calcium, iron, fierce and the like, exists in an inorganic state or organic matter complexing mode, wherein a plurality of microelements are essential elements of a human body, wherein the tea (old tea) in summer and autumn has high phenol-ammonia ratio, the tea has light fragrance, thin bitter taste and heavy taste, and almost all the microelements are exported by raw material tea, and the variety is single. Therefore, the summer and autumn tea is subjected to deep processing, the advantages of the summer and autumn tea (high zinc and selenium content) are fully utilized, the summer and autumn tea functional food and the leisure food are developed, the problem of deep processing of the summer and autumn tea is solved, and the method has great significance in promoting the development of the Guizhou Fenggang tea industry.
According to the data published by the Chinese nutrition society, the long-term intake of trace elements necessary for human body is insufficient, so that the storage in the body is exhausted, the imbalance of trace elements in the body is caused, and the health of the human body is affected. But supplements microelements in the form of inorganic salt, which is unfavorable for human body absorption and utilization, and even has toxic and side effects in some cases. Therefore, the method for searching the trace elements in the organic state has the advantages of low cost and great significance for improving the nutrition condition of the trace elements in human beings. The zinc supplement is usually inorganic zinc such as zinc oxide, zinc sulfate or zinc gluconate. Recent research results have found that organic zinc, rather than inorganic zinc, truly plays a role in vivo. The organic zinc is closer to the functional action form of zinc in the organism, insoluble substances formed in the organism due to the supplementation of inorganic zinc can be prevented, the biological efficiency of the organic zinc is higher than that of the inorganic zinc, the zinc supplementing effect can be achieved by only taking a trace amount of the organic zinc, and the harm caused by the excessive zinc due to the poor absorption of the inorganic zinc in the organism is avoided. Amino acid chelated zinc and peptide zinc chelates are relatively common organic zinc, and peptide zinc chelates can be supplemented with more than one amino acid when compared with amino acid zinc chelates, and the final product of digestion of proteins in the digestive tract is mostly a small peptide rather than a free amino acid. Based on the absorption mechanism, the peptide zinc chelate is better absorbed by human body than the amino acid zinc chelate. However, at present, ionic inorganic zinc selenium is used for chelation, and organic zinc selenium is not used for replacement chelation, for example, a preparation method of collagen peptide-zinc chelate (CN 201910783971.0) is that fresh shellfish is used as a raw material, denatured shellfish mantle water-soluble collagen is obtained by a heat extraction method, then protease is used for hydrolyzing the water-soluble collagen to prepare collagen peptide, and the collagen peptide is chelated with metal zinc ions, thus preparing the collagen peptide-zinc chelate. A whey protein peptide-selenium chelate with antioxidant activity and its preparation method and application (CN 201810802848.4) are disclosed, which also uses whey protein peptide and selenium ion for chelation. The positions where the whey protein peptide chelates with the selenium ions may be-NH on-NH-c=o, -OH on-COOH and terminal-NH 2.
In conclusion, the peptide is taken as a carrier, and the development of peptide zinc selenium chelate has become the focus of research and development at present, and the absorption rate and biological potency of zinc selenium can be further improved by virtue of the characteristics of high speed, low energy consumption and difficult saturation of peptide substance transport systems.
