The invention specifically discloses a method for producing rapeseed histon by deoiling rapeseed kernels by using a new water agent method, which comprises the following steps: step 1: placing the deoiled rapeseed kernel by a new water aqua method into a leaching device, and continuously extracting for 1-24 hours by using 1-10 times of ethanol water solution or until the content of the solid glucosinolate is lower than 120mg/kg on a dry basis; step 2: completely removing the ethanol water solution to obtain a solid; and step 3: crushing the obtained solid and sieving to obtain rape seed kernel removed powder; and 4, step 4: adding 0-10wt% of starch into the obtained deoiled rapeseed kernel powder, adding water for blending, and adjusting the water content to 30-70wt%; and 5: fully and uniformly stirring the mixture, and then texturizing the mixture by an extrusion bulking machine to obtain the rapeseed histoprotein.
