Abstract
本发明公开一种食品加工用低泡环保型高效CIP碱性清洗剂,按照100份计,由以下重量份的原料组成:NaOH 29~45份,异丙醇0.5~5份,聚合醇胺0.1~1份,脱氢乙酸钠0.5~3份,表面活性剂0.4~1.8份,螯合剂1~4份,分散剂0.5~2份,去离子水42~60份。同时,本发明还提供所述清洗剂的制备方法。所述清洗剂清洗效率高、低泡、易冲洗、渗透力强,绿色环保。

技术领域
本发明属于食品清洗剂技术领域,具体涉及一种食品加工用低泡环保型高效CIP碱性清洗剂及其制备方法。
背景技术
CIP清洗剂广泛的用于饮料、乳品、果汁、果浆、果酱、酒类等机械化程度较高的食品饮料生产企业中,就地清洗不用拆开或移动装置,利用清洗剂和清洗剂以高速的液流冲洗设备的内部表面,形成机械作用而把污垢冲走,因此机械清洗的洁净度直接影响食品安全。随着食品业的快速发展,加工过程中产生的污垢也越来越复杂,其中较难洗的的污垢多为蛋白质、油脂、矿物质等,蛋白质一般在碱性条件下可以被洗掉,而油脂、矿物质就需要螯合剂、分散剂、表面活性剂等成分在碱性条件下助洗才可被彻底清洗干净。
在实际实施过程中,CIP碱洗常常会伴有大量泡沫从出口溢出难清理的现象,同时由于泡沫的存在,在冲洗过程中清洗剂与管壁间有泡沫隔离而无法充分接触,造成清洗效果不佳,难冲洗。
中国专利CN 107955759A公开了一种乳品饮料无菌加工设备的碱性清洗剂及其制备方法,以重量份计包括:氢氧化钠45~49%、增溶剂0.5~2%、非离子表面活性剂0.1~0.6%、螯合剂0.5~2%、分散剂0.2~0.6%、水余量。其中选用的螯合剂有机膦酸、有机膦酸盐,有机膦降解缓慢,会加速水体的富营养化,而且会增加金属的生物利用度和毒性,所选非离子表面活性剂为泡沫丰富的烷基醇醚,在CIP清洗过程中容易起泡。
中国专利CN 111286421A公开了一种食品工厂管道用碱性清洗剂及其制备方法,以重量份计包括:氢氧化钠5~50份、氢氧化钾1~20份、谷氨酸二乙酸四钠5~25份、硅酸钠1~10份、柠檬酸1~10份、表面活性剂1~20份,抗再沉积剂0.1~10份,去离子水15~50份。其中所用成分硅酸钠在使用过程中易生成硅酸盐垢。
中国专利CN110791390A公开了一种复合碱性清洗剂,以重量份计包括:碱20~50份、非离子表面活性剂2~5份、螯合剂5~10份、去离子水35~63份。成分简单,但渗透能力及抗污垢再沉积能力有限,很难将污垢清洗彻底。
因此,有必要提供一种低泡、渗透力强、清洗能力佳,去污效率高的食品加工用环保型高效碱性清洗剂来满足CIP实际清洗需求。
发明内容
针对先有技术的缺陷,本发明提供一种食品加工用低泡环保型高效CIP碱性清洗剂及其制备方法,通过各成分的协同作用,具有低泡环保、渗透性强、清洗效率高等优点。
一种食品加工用低泡环保型高效CIP碱性清洗剂,按照100份计,由以下重量份的原料组成:
NaOH 29~45份,
异丙醇 0.5~5份,
聚合醇胺 0.1~1份,
脱氢乙酸钠 0.5~3份,
表面活性剂 0.4~1.8份,
螯合剂 1~4份,
分散剂 0.5~2份,
去离子水 42~60份。
优选地,所述表面活性剂为C6~C8碳链长度的烷基糖苷、支链聚氧乙烯醚与脂肪酸甲酯乙氧基化物磺酸盐按照0.1~0.6:0.2~0.8:0.1~0.5进行复配的混合物。
优选地,所述支链聚氧乙烯醚为异构十碳醇聚氧乙烯醚、异构十三碳醇聚氧乙烯醚中的一种或两种任意比例的组合物。
优选地,所述螯合剂为甲基甘氨酸二乙酸或甲基甘氨酸二乙酸衍生物与葡庚糖酸或葡庚糖酸盐按照质量比(0.5~3):(0.2~2)复配的混合物。。
优选地,所述葡庚糖酸盐为葡庚糖酸钠或葡庚糖酸钾中的至少一种。
优选地,所述分散剂为丙烯酸-丙烯酸羟丙酯共聚物、丙烯酸-2-甲基丙磺酸共聚物、丙烯酸-2-丙烯酰胺-2-甲基丙磺酸三元共聚物、丙烯酸-丙烯酸酯-磺酸盐中的至少一种与腐殖酸钠按照质量比(0.2~1):(0.4~1.5)复配的混合物。
所述食品加工用低泡环保型高效CIP碱性清洗剂的制备方法,包括以下步骤:
(1)向去离子水中加入NaOH,搅拌至完全溶解,形成体系A;
(2)将异丙醇、聚合醇胺、脱氢乙酸钠、表面活性剂、螯合剂、分散剂依次加入体系A中,搅拌至完全溶解,静置1-6h,即可。
本发明中,聚合醇胺具有一定的缓蚀性能,可改进油性污垢,在碱性清洗剂中相容性极好,在本发明碱性清洗剂体系中有显著的抑泡效果,可提高碱性清洗剂的去污性能;
脱氢乙酸钠,兼具抑菌与助洗功效,广谱抑菌,可通过渗透进入微生物的细胞壁,干扰细胞内各种酶体系而产生作用,同时对污垢具有助分散功能,与分散剂协同使用可提高体系分散效果。本发明中,脱氢乙酸钠的加入克服了普通碱性清洗剂不含消毒功能的缺陷,并避免了使用含氯清洗剂带来的危害;
表面活性剂选择C6~C8碳链长度的烷基糖苷、支链聚氧乙烯醚与脂肪酸甲酯乙氧基化物磺酸盐复配,增溶性好,渗透力强,清洗能力佳,可负载无机碱成分快速渗进污垢进行软化、松动、乳化,显著提高清洗效率。
螯合剂,具有阻垢缓蚀性能,可与钙、镁及其他金属离子相互结合,以此来消除他们在洗涤过程中的不利影响,同时使污垢粒子发生松动,可提高清洗效率并保护设备表面清洁后不留斑痕。本发明中,在高碱环境下,将葡庚糖酸盐与甲基甘氨酸二乙酸及其衍生物二者复配,抗硬水能力优异的同时可显著提高清洗剂的净洗效率。
分散剂,具有分散悬浮的作用,能对低聚物、胶状物等起到强烈的分散作用,使其不凝结,吸附了分散剂大分子的垢类颗粒产生了空间位阻,更不易碰撞凝结而悬浮在水中不沉降,易被水冲走。
腐殖酸钠,绿色环保、健康无害,在本发明中兼具分散与缓蚀的作用,对碳酸钙垢有突出的阻垢分散功能、适用于高pH值、高硬度水质体系,同时由于腐殖酸钠分子中含有羟基、羧基等活性基团,这些基团带有较多的负电荷,可以向金属的空白轨道提供电子,与一些金属表面覆盖的Fe3O4和CaCO3络合,形成稳定致密的化学吸附保护膜,从而使金属表面与腐蚀介质隔开,减缓了金属表面的化学腐蚀,而达到缓蚀作用。通过与丙烯酸共聚物复配,提高了对磷酸钙垢分散能力。
本发明的优点:
(1)清洗效率高。本发明提供的CIP碱性清洗剂渗透力强,具有螯合、阻垢作用,可有效降低清洗剂硬度,提高清洗效果且使金属表面保持洁净光亮。有效成分可快速渗进污垢进行软化、松动、乳化,降低污垢的附着力,用少量清洗剂即可达到清洗效果。
(2)低泡、易冲洗。本发明清洗剂不含磷,易生物降解。CIP清洗过程中泡沫量少,消泡快,清洗时清洗剂与容器壁上污垢可充分接触且易冲洗,避免在循环冲洗过程中泡沫溢出或因泡沫的存在量大使清洗液与管壁不能充分接触而影响清洗效果及效率,有效节约了用水量,更符合CIP清洗的现实需求。
(3)渗透力强。C6~C8碳链长度的烷基糖苷、支链聚氧乙烯醚与脂肪酸甲酯乙氧基化物磺酸盐复配,去污性能佳,渗透能力强,增溶性高,集清洗、渗透、增溶、低泡于一体。
(4)绿色环保。本发明选择高效螯合剂葡庚糖酸或葡庚酸盐与甲基甘氨酸二乙酸及其衍生物复配,易生物降解,分散剂选择绿色产品腐殖酸钠与丙烯酸共聚物,不含磷,具有阻垢缓蚀作用,可有效降低清洗液硬度,保护被清洗表面。
(5)除菌抑菌。本发明所选成分脱氢乙酸钠广谱抑菌,兼具除菌与分散性能,与分散剂协同使用可提高体系分散效果。
(6)制备方法操作简单、周期短、适合规模化生产。

将烷基糖苷类表面活性剂AG6202 15kg和5kg水混合搅拌均匀;然后向其中添加烷基醇醚Berol 260 5kg搅拌溶解均匀;然后向其中添加鳌合剂HEDP-4Na 10kg,分散剂PASP5kg,搅拌溶解均匀;然后向其中加入液碱(NaOH浓度为50wt%)960kg,搅拌均匀,得到对比例3的产品。
对比例4
不含有聚合醇胺,其他同实施例1。
对比例5
不含有脱氢乙酸钠,其他同实施例1。
性能检测
1. 泡沫性能
采用搅拌法(Waring-Blender法),将量杯放入恒温水浴锅(80±2℃),向量杯中加入一定量待测液体,为了更接近现场清洗真实场景,向制备好的待测样品中加入0.05%的污垢(按照《食品工具和工业设备用碱性清洗剂》(QBT 4314-2012)所述方法制备的污垢),以恒定速度搅拌60s后停止搅拌,记录泡沫高度及半衰期,每次试验保持条件一致,结果见表1;

由表1可知,本发明提供的实施例1-5的清洗剂,其泡沫高度和半衰期明显小于现有技术中对比例1-3,同时也明显小于对比例4,说明本发明所述清洗剂体系的起泡能力明显低于对比例,消泡速度优于对比例;对比例4的结果说明聚合醇胺的加入有助于本发明清洗剂体系的消泡、抑泡。
2. 抗硬水能力
称取16.7g无水氯化钙和24.7g硫酸镁,溶解于10L水中配制硬水样品,并将其分别稀释为250mg/L,375mg/L,500mg/L和625mg/L硬度的水样;用烧杯分别取实验组1~5以及对比例1-3制备所得清洗剂样品,再依次加入不同硬度的所述硬水样品,放入恒温水浴锅(80±2℃),搅拌均匀后,静置观察2h,记录硬水样品变化,见表2。

由表2可知,在实验时间内,实施例1~5在不同硬度的水中,均保持透明无沉淀状态,而对比例1~3在硬度较大的水中,均出现了浑浊和沉淀现象;由此说明本发明所述清洗剂在硬水中体系稳定较优,表现出更好的抗硬水能力。
3. 分散性能
常温下,用烧杯取实施例1~5、对比例1~3、对比例5配制的清洗液样品各80g,分别向其中加入1gCaCO3粉末高速搅拌10分钟,置于100mL量筒中,静置1h,观察悬浮液在试管中的沉降体积,计算悬浮体积百分比(沉降体积与悬浮液总体积比为悬浮体积百分比),结果见表3。

由表3可知,实施例1~5分散能力优与对比例1~3,由此说明本发明所述清洗剂表现出更强的分散能力,实施例1~5与对比例5的结果对照说明,分散剂选择腐殖酸钠与丙烯酸共聚物复配,在脱氢乙酸钠的作用下,脱氢乙酸钠可明显提高清洗剂体系的分散作用。
4. 渗透性
常温下,向杯中注入200mL待测清洗液,水平投入1块棉布圆片, 用秒表记录棉布圆片从接触液面到开始沉降所需的时间。对同一样品重复测定五次,取其平均值。所用棉布原片条件均一致,每次测定后的棉布圆片取出弃之。结果见表4。

由表4可知,实施例1~5润湿时间明显比对比例的短,由此说明本发明所述清洗剂表现出更强的渗透能力。
5. 去污能力测定
分别取实施例1~5以及对比例1~5的清洗剂,按照《食品工具和工业设备用碱性清洗剂》(QBT 4314-2012)所述方法进行去污率测定;结果见表5。

由表5可知,实施例1~5去污率高,明显高于对比例,去污率均高于98%,去污能力强。
6. 除菌能力
采用ATP荧光检测法对实施例1~5以及对比例1~3制备的清洗剂清洗过的钢片进行测试,结果以RLU数值显示,数值越大,细菌数量越多。结果见表6。

由表6可知,本发明的除菌能力明显优于对比例。
由以上实验结果可知,本发明所述的CIP碱性清洗剂在清洗过程中低泡易冲洗,渗透力强,抗硬水及污垢沉积性能好,清洗效率高、除菌能力优异,对环境友好。所述清洗剂组分氢氧化钠、异丙醇、聚合醇胺、脱氢乙酸钠、渗透剂、螯合剂、分散剂按一定的比例进行复配,形成的体系具有低泡、清洁、除菌、湿润、渗透、 乳化、分散等能力,组分之间可形成协同作用,使用过程中避免泡沫带来的清洗困扰,渗透力强,增强清洗剂的清洗能力,提高了清洗和清洁效率。
Claims (7)
1.一种食品加工用低泡环保型高效CIP碱性清洗剂,其特征在于:按照100份计,由以下重量份的原料组成:
NaOH 29~45份,
异丙醇 0.5~5份,
聚合醇胺 0.1~1份,
脱氢乙酸钠 0.5~3份,
表面活性剂 0.4~1.8份,
螯合剂 1~4份,
分散剂 0.5~2份,
去离子水 42~60份。
2.根据权利要求1所述食品加工用低泡环保型高效CIP碱性清洗剂,其特征在于:所述表面活性剂为C6~C8碳链长度的烷基糖苷、支链聚氧乙烯醚与脂肪酸甲酯乙氧基化物磺酸盐按照0.1~0.6:0.2~0.8:0.1~0.5进行复配的混合物。
3.根据权利要求2所述食品加工用低泡环保型高效CIP碱性清洗剂,其特征在于:所述支链聚氧乙烯醚为异构十碳醇聚氧乙烯醚、异构十三碳醇聚氧乙烯醚中的一种或两种任意比例的组合物。
4.根据权利要求2所述食品加工用低泡环保型高效CIP碱性清洗剂,其特征在于:所述螯合剂为甲基甘氨酸二乙酸或甲基甘氨酸二乙酸衍生物与葡庚糖酸或葡庚糖酸盐按照质量比(0.5~3):(0.2~2)复配的混合物。
5.根据权利要求4所述食品加工用低泡环保型高效CIP碱性清洗剂,其特征在于:所述葡庚糖酸盐为葡庚糖酸钠或葡庚糖酸钾中的至少一种。
6.根据权利要求5所述食品加工用低泡环保型高效CIP碱性清洗剂,其特征在于:所述分散剂为丙烯酸-丙烯酸羟丙酯共聚物、丙烯酸-2-甲基丙磺酸共聚物、丙烯酸-2-丙烯酰胺-2-甲基丙磺酸三元共聚物、丙烯酸-丙烯酸酯-磺酸盐中的至少一种与腐殖酸钠按照质量比(0.2~1):(0.4~1.5)复配的混合物。
7.权利要求1-6任一项所述食品加工用低泡环保型高效CIP碱性清洗剂的制备方法,其特征在于:包括以下步骤:
(1)向去离子水中加入NaOH,搅拌至完全溶解,形成体系A;
(2)将异丙醇、聚合醇胺、脱氢乙酸钠、表面活性剂、螯合剂、分散剂依次加入体系 A中,搅拌至完全溶解,静置1-6h,即可。
