step 2: weighing deionized water 2-4 times the weight of oat powder, adding peeled oat powder into the deionized water, adding starch gelatinizing enzyme and protease in a formula amount, continuously stirring to ensure that the peeled oat powder is subjected to enzymolysis while being dissolved, wherein the stirring temperature is controlled to be 55-60 ℃, and the stirring speed is controlled to be 550-650r/min to obtain an enzymolysis liquid;
and step 3: adding the vegetable oil, the xylitol, the dipotassium phosphate, the citric acid ballast powder and the salt into the enzymolysis liquid according to the formula ratio, adding water with the temperature of 68-77 ℃, keeping the temperature of 68-77 ℃, and uniformly stirring to obtain a mixed solution;
and 4, step 4: and (3) sterilizing the homogenized mixed solution, controlling the sterilization temperature to be 125 ℃ and 135 ℃, sterilizing for 35-45s, and quantitatively filling after sterilization to obtain the whole oat milk.
