Abstract
The invention relates to a method for rapidly preparing lycopene, which belongs to the technical field of food processing and medicines and comprises the following steps of 1: adding tomato sauce and ethanol with purity of more than 95% into a stirring tank, and stirring; step 2: breaking the wall of the stirred solution under high pressure; and step 3: then adding ethanol with purity of more than 90 percent into the solution; and 4, step 4: standing for layering, and separating the upper solution to obtain a product containing 15-18% of lycopene. The method only needs about 5 hours for extracting the lycopene, can quickly extract the lycopene in the tomato paste, and has simple process and low cost.
Description
Technical Field
The invention belongs to the technical field of food processing and medicines, and particularly relates to a method for quickly preparing lycopene.
Background
Lycopene is an important carotenoid substance, has a unique long-chain molecular structure and has more unsaturated double bonds than other carotenoids. Because of its special structure, it has the ability of eliminating free radical and antioxidant capacity, and its antioxidant effect is 2 times that of carotene and 100 times that of vitamin E. The health-care function of lycopene covers multiple aspects of delaying senility, preventing cancer, enhancing immunity of organisms, beautifying, resisting ultraviolet radiation and the like, and gradually becomes a new hotspot of research in the fields of health-care food, cosmetics and medicines in international marketing cities. Because lycopene is dissolved in chloroform, benzene and grease and is not dissolved in water, an organic solvent extraction method is generally adopted in the existing industrial extraction process of lycopene, but the method has complex process, high cost and long extraction period, and generally needs about ten days.
Disclosure of Invention
In order to solve the technical problems, the invention provides a method for quickly preparing lycopene.
The technical scheme adopted by the invention is as follows: a method for rapidly preparing lycopene comprises the following steps:
step 1: adding tomato sauce and ethanol with purity of more than 95% into a stirring tank, and stirring;
step 2: breaking the wall of the stirred solution under high pressure;
and step 3: then adding ethanol with purity of more than 90 percent into the solution;
and 4, step 4: standing for layering, and separating the upper solution to obtain a product containing 15-18% of lycopene.
Preferably, the ratio of the tomato paste to the ethanol in the step 1 is 1: 3.5-5.
Preferably, in a method for rapidly preparing lycopene, the stirring time in step 1 is 0.5-1 hour.
Preferably, in the method for rapidly preparing lycopene, the wall of the solution is broken by high pressure using a homogenizer in step 2.
Preferably, the pressure of the homogenizer is 200MPa-300 MPa.
Preferably, the ratio of the solution to the ethanol in the step 3 is 1: 1-1.3.
Preferably, the standing temperature in the step 4 is 30-35 ℃.
Preferably, the standing time in the step 4 is 1-2 hours.
Compared with the prior art, the invention has the beneficial effects that: according to the invention, the tomato sauce and ethanol with purity of more than 95% are added into a stirring tank and stirred; carrying out high-pressure wall breaking on the stirred solution in a homogenizer; then adding ethanol with purity of more than 90 percent into the solution; standing for layering, and separating out the upper solution to obtain a product containing 15-18% of lycopene; the method only needs about 5 hours for extracting the lycopene, can quickly extract the lycopene in the tomato paste, and has simple process and low cost.
Detailed Description
The technical solutions of the present invention will be described in detail below in order to clearly understand the technical features, objects, and advantages of the present invention, but the present invention is not limited to the practical scope of the present invention.
Example 1:
adding 100L tomato sauce and 350L 95% ethanol into a stirring tank, stirring for 0.5 hr, the purpose of adding ethanol at this moment is mainly to destroy cell walls in the tomato paste, the stirred solution is subjected to high-pressure wall breaking in a homogenizer, the pressure of the homogenizer is set to be 200MPa, the homogenizer enables the tomato paste and the ethanol to further destroy the cell walls under the triple effects of extrusion, strong impact and decompression expansion, the cell surfaces and the lycopene contained in the tomato paste are effectively separated, substances in the mixed solution are finely mixed, then 450L of ethanol with the purity of 90 percent is added into the solution, standing at 30 deg.C for 1 hr, because lycopene is insoluble in water and ethanol, and lycopene and ethanol solution are layered, since the density of lycopene is less than that of ethanol solution, lycopene is in the upper layer of the solution, and the upper layer solution is separated to obtain the product containing 15.2% of lycopene.
Example 2:
adding 100L tomato sauce and 500L ethanol with purity of 96% into a stirring tank, stirring for 1 hr, breaking cell wall of the stirred solution at high pressure in a homogenizer with pressure of 300MPa, adding 780L ethanol with purity of 95% into the solution, standing at 35 deg.C for 2 hr, and separating the upper layer solution to obtain product containing lycopene 17.6%.
It is to be understood that the above-described embodiments are only a few, and not all, embodiments of the present invention. All other embodiments, which can be derived by a person skilled in the art from the embodiments of the present invention without making any creative effort, shall fall within the protection scope of the present invention.
