As can be seen from table 1, comparative example 1 does not use ultrasonic treatment in the enzymolysis process, and comparative example 2 does not use ultrasonic treatment in the product dialysis purification process, and compared with comparative example 1 and comparative example 2, the dietary fibers prepared in examples 1 to 4 of the present application have higher yields, which indicates that the present application respectively uses ultrasonic treatment in the enzymolysis process and the dialysis process, and can improve the yield of the product; the table 2 also shows that the dietary fibers prepared in the embodiments 1 to 4 of the present invention have high purity, which indicates that the method of the present invention is feasible and has a better effect, because the present invention firstly uses an ester solvent to soak the crushed and sieved cereal raw materials to dissolve out ester substances in the cereal and remove the ester substances, and then adds cellulase to carry out enzymolysis on the raw materials from which the ester substances are removed, and the enzymolysis process is accompanied with ultrasonic treatment, which not only can accelerate the enzymolysis process, but also more importantly destroys the effects among the crystalline region of the cellulose, hemicellulose and lignin, so that the cellulase can be more fully contacted with an enzymolysis substrate, further accelerates the enzymolysis process, and simultaneously improves the content and quality of enzymolysis products; then the enzymolysis liquid is centrifuged to obtain supernatant, the supernatant is dialyzed, the dialysis speed can be accelerated along with ultrasonic in the dialysis process, meanwhile, impurities in the enzymolysis liquid can be shaken out from the enzymolysis product molecules and removed through dialysis, the traditional step of carrying out aftertreatment by using a large amount of ethanol is simplified in the process, the dialyzed product is directly concentrated and dried, the alcohol consumption is reduced, the operation steps are simplified, and the operation time is saved. In conclusion, the method is simple and environment-friendly, and the obtained product has high yield and good purity and is suitable for popularization and application.

Thus, it is intended that such changes and modifications be included within the scope of the appended claims and their equivalents.
Claims (10)
1. A preparation method of modified cereal dietary fiber is characterized by comprising the following steps:
s1, crushing and sieving the grain raw materials, adding an ester solvent, and carrying out degreasing treatment;
s2, adjusting the pH value of the degreased raw material of S1 to 5-6, and adding cellulase for enzymolysis under the ultrasonic condition to obtain an enzymolysis liquid;
s3, centrifuging the S2 enzymolysis liquid, and taking supernate;
s4, subjecting the supernatant of S3 to dialysis treatment under the action of ultrasound, and taking trapped fluid;
s5, concentrating the trapped liquid S4, precipitating with ethanol, and drying to prepare the modified cereal dietary fiber.
2. The method according to claim 1, wherein the ester solvent is ethanol or vegetable oil at S1.
3. The preparation method of the modified cereal dietary fiber as claimed in claim 1, wherein in S1, the cereal is one or more of rice, wheat, millet and soybean, and the crushed raw materials are sieved by a 50-70 mesh sieve.
4. The method for producing a modified cereal dietary fiber according to claim 1, wherein in S2, the pH is adjusted with citric acid.
5. The method for preparing modified cereal dietary fiber according to claim 1, wherein in S2, the ultrasonic condition is 100-300W, and the ultrasonic is performed every 20-40 min for 15-30 min.
6. The preparation method of the modified cereal dietary fiber as claimed in claim 1, wherein in S3, the centrifugation is carried out for 15-30 min at 2000-3000 r/min and then for 10-20 min at 4000-6000 r/min.
7. The method for preparing modified cereal dietary fiber according to claim 1, wherein in the dialysis process of S4, a dialysis bag with a molecular weight cut-off of 1-3 KDa is selected, and deionized water is dialyzed for 1-3 h.
8. The preparation method of the modified cereal dietary fiber as claimed in claim 1, wherein in S4, the ultrasonic condition is 50-150W of power and the ultrasonic time is 15-30 min.
9. The method for preparing modified cereal dietary fiber according to claim 1, wherein in S5, the concentration is performed under the conditions of 0.04-0.06 MPa of pressure and 40-70 ℃ until the volume is 1/2-2/3 of the original volume, the alcohol precipitation is performed by using ethanol as a precipitator, and the drying is performed under the conditions of 80-100 ℃ of temperature and 1-3 m/S of wind speed until the water content is less than 10%.
10. The modified cereal dietary fiber prepared by the preparation method according to any one of claims 1 to 9.
