本发明涉及食品技术领域,具体涉及一种提高幼儿免疫力的动物蛋白粉及其制备方法。
背景技术
免疫力是人体自身的防御机制,人体免疫力的高低,是衡量健康与否的重要指标之一。幼儿阶段是人一生中发育最迅速的时期,此阶段的营养与喂养方式对其生长发育极为重要。
幼儿的免疫系统尚未发育成熟,虽然免疫系统的单核细胞发育已完善,但缺乏辅助因子,其趋化、粘附、吞噬、氧化杀菌和抗原呈递能力均较成人差;中心粒细胞功能低下,易发生化脓性感染;淋巴细胞数目较少,T细胞功能尚未完善,辅助B细胞合成和转换Ig、促进巨噬细胞和CTL的能力差;B淋巴细胞不能产生荚膜多糖细菌抗体,导致功能缺失。所以,幼儿对抗感染的能力弱于较大的儿童和成人。
幼儿免疫力低下常表现为易生病。一般有体质虚弱、营养不良、精神萎靡、疲乏无力、食欲降低、感冒、感染、发烧、咳嗽、睡眠障碍等表现。生病常要较长时间才能恢复,且反复发作。若经常患病,更加重了机体的消耗。长此以往会造成身体和智力发育不良,还易诱发其它多种感染性疾病,如扁桃体炎、感冒、哮喘、支气管炎、肺炎、腹泻等。免疫力低下的婴幼儿生长发育会受到严重的影响,对健康危害极大。
母乳是新生儿增强免疫力的最好渠道,待满4~6个月后,应注意适时添加辅助食品。因此,丰富有效提高幼儿免疫力的食品,以改善幼儿体质,提高幼儿抵抗感染性疾病的能力,有利其生长发育,是儿童免疫力和保健食品研发的重要方向。
发明内容
本发明要解决的技术问题是提供一种提高幼儿免疫力的动物蛋白粉及其制备方法,以期能够解决幼儿免疫力低下适用的食品不够丰富的技术问题。
为解决上述技术问题,本发明采用如下技术方案:
提供一种提高幼儿免疫力的动物蛋白粉,由以下质量份数的成分组成:
鱼粉20~30份、河虾粉10~20份、猪肉粉10~25份、鸡肝粉20~32份、乳清蛋白1~3份、糖1.5~3份、葡萄糖酸锌0.3~1份、抗结剂1~1.5份。
优选的,动物蛋白粉,由以下质量份数的成分组成:
鱼粉25~30份、河虾粉14~20份、猪肉粉15~25份、鸡肝粉28~31.5份、乳清蛋白2.5~3份、糖1.8~2.5份、葡萄糖酸锌0.3~0.6份、抗结剂1.5份。
优选的,所述鱼粉为鳕鱼粉;所述糖为葡萄糖;所述抗结剂为二氧化硅。
另提供一种所述提高幼儿免疫力的动物蛋白粉的制备方法,包括以下步骤:
(1)取所述鱼粉、河虾粉、猪肉粉和鸡肝粉,混合均匀;
(2)再加入所述乳清蛋白、糖、葡萄糖酸锌和抗结剂,混合均匀;
(3)冷冻干燥,粉碎,过筛;
(4)真空包装,灭菌,即得动物蛋白粉。
优选的,所述步骤(3)中,所述过筛时采用50~80目。
优选的,所述步骤(4)中,所述灭菌采用300~600 MPa下超高压灭菌,所述灭菌的时间控制为3~10min。
与现有技术相比,本发明的有益技术效果在于:
本发明的动物蛋白粉针对幼儿免疫系统发育的生理规律而设计,可显著提高幼儿的IgG、脾指数、胸腺指数,具有对免疫系统的增强作用,可改善幼儿体质,增强幼儿细胞活力和代谢能力,提高幼儿抵抗感染性疾病的能力。
具体实施方式
下面结合实施例来说明本发明的具体实施方式,但以下实施例只是用来详细说明本发明,并不以任何方式限制本发明的范围。
在以下实施例中所涉及的仪器设备如无特别说明,均为常规仪器设备;所涉及的试剂和培养基如无特别说明,均为市售常规试剂和培养基;所涉及的试验方法,如无特别说明,均为常规方法。
实施例1:一种提高幼儿免疫力的动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉29.5份、河虾粉15.5份、猪肉粉20份、鸡肝粉28份、乳清蛋白3份、葡萄糖2份、葡萄糖酸锌0.5份、二氧化硅1.5份。
鳕鱼粉以鳕鱼为原料,经脱水、粉碎后得到。鳕鱼粉蛋白质含量高,消化率一般在90%以上,所含氨基酸平衡,赖氨酸、色氨酸、蛋氨酸及胱氨酸丰富。鳕鱼脂肪中含较大比例的高度不饱和脂肪酸,且消化率好;鳕鱼粉也是良好的钙、碘、硒等矿物质来源,磷以磷酸钙形式存在,利用率高。
河虾粉以河虾为原料,经脱水、粉碎后得到。河虾粉阴阳丰富,富含蛋白质,脂肪,碳水化合物,钙,铁,镁,碘,维生素A,硫氨酸,核黄素,尼克酸,虾青素等营养成分。
猪肉粉以新鲜猪肉为原料,经脱水、粉碎后得到。猪肉粉蛋白质含量高,富含多种蛋白、多肽及氨基酸。
鸡肝粉以鸡肝为原料,经脱水、粉碎后得到。鸡肝粉富含血红素铁、微量元素硒、不饱和脂肪酸、维生素等多种营养元素。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、河虾粉、猪肉粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过60目筛;
(4)经真空包装,于500MPa下超高压灭菌5min,即得动物蛋白粉。
实施例2:一种提高幼儿免疫力的动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉25份、河虾粉14份、猪肉粉25份、鸡肝粉30.2份、乳清蛋白2份、葡萄糖2份、葡萄糖酸锌0.3份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、河虾粉、猪肉粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过80目筛;
(4)经真空包装,于600MPa下超高压灭菌3min,即得动物蛋白粉。
实施例3:一种提高幼儿免疫力的动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉30份、河虾粉16.4份、猪肉粉15份、鸡肝粉31.5份、乳清蛋白2.5份、葡萄糖2.5份、葡萄糖酸锌0.6份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、河虾粉、猪肉粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过50目筛;
(4)经真空包装,于400MPa下超高压灭菌8min,即得动物蛋白粉。
实施例4:一种提高幼儿免疫力的动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉27份、河虾粉20份、猪肉粉18份、鸡肝粉28.5份、乳清蛋白2.8份、葡萄糖1.8份、葡萄糖酸锌0.4份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、河虾粉、猪肉粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过70目筛;
(4)经真空包装,于300MPa下超高压灭菌10min,即得动物蛋白粉。
对比例1:一种动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
河虾粉15.5份、猪肉粉20份、鸡肝粉28份、乳清蛋白3份、葡萄糖2份、葡萄糖酸锌0.5份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取河虾粉、猪肉粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过60目筛;
(4)经真空包装,于500MPa下超高压灭菌5min,即得动物蛋白粉。
对比例2:一种动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉25份、猪肉粉25份、鸡肝粉30.2份、乳清蛋白2份、葡萄糖2份、葡萄糖酸锌0.3份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、猪肉粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过80目筛;
(4)经真空包装,于600MPa下超高压灭菌3min,即得动物蛋白粉。
对比例3:一种动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉30份、河虾粉16.4份、鸡肝粉31.5份、乳清蛋白2.5份、葡萄糖2.5份、葡萄糖酸锌0.6份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、河虾粉和鸡肝粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过50目筛;
(4)经真空包装,于400MPa下超高压灭菌8min,即得动物蛋白粉。
对比例4:一种动物蛋白粉
该动物蛋白粉由以下质量份数的成分组成:
鳕鱼粉27份、河虾粉20份、猪肉粉18份、乳清蛋白2.8份、葡萄糖1.8份、葡萄糖酸锌0.4份、二氧化硅1.5份。
该动物蛋白粉的制备方法如下:
(1)取鳕鱼粉、河虾粉和猪肉粉,加入到混合器中搅拌均匀;
(2)再加入乳清蛋白、葡萄糖、葡萄糖酸锌和二氧化硅,充分搅拌混合均匀;
(3)置于真空冷冻干燥机冷冻,再经粉碎机粉碎后过70目筛;
(4)经真空包装,于300MPa下超高压灭菌10min,即得动物蛋白粉。
试验例:
(1)90只21天的离乳仔鼠(昆明小鼠),仔鼠体重为10±2g。随机分为9组(对照组、实施例1~4和对比例1~4),每组10只仔鼠,常规日粮饲养;
(2)将所有仔鼠饲养在温度受控的环境中(23±2℃),光照12h,自由采食和饮水。每组仔鼠每日定时分别取实施例和对比例的8种动物蛋白粉通过无菌灌胃针进行灌胃一次,灌胃量为10mg/只,连续灌胃30天。以生理盐水为空白对照组。
(3)对仔鼠进行免疫指标检测
试验期间各组小鼠呼吸平稳,其它体征无异常,连续灌胃30天后分别断头致死,用EDTA-K钾盐抗凝管采集全血,置37水域中2h,离心取血清,在-20冰箱保存,测定IgG抗体;打开仔鼠腹腔,取出脾脏和胸腺,称重,检测脾指数(mg/g)、胸腺指数(mg/g)。
脾(胸腺)指数的计算公式如下:
脾(胸腺)指数=脾(胸腺)重量(mg)/仔鼠体重(g)
监测数据取平均值表示。
(4)检测结果如表1所示:
如表1所示,可知:与空白对照组相比,本发明的动物蛋白粉可将离乳仔鼠的IgG、脾指数、胸腺指数分别提高74%~81%、1.12~1.36倍、54%~60%;通过实施例1与对比例1的对比可知,添加鳕鱼粉可将离乳仔鼠的IgG、脾指数、胸腺指数分别提高48%、31%、13%;通过实施例2与对比例2的对比可知,添加河虾粉可将离乳仔鼠的IgG、脾指数、胸腺指数分别提高42%、23%、7%;通过实施例3与对比例3的对比可知,添加猪肉粉可将离乳仔鼠的IgG、脾指数、胸腺指数分别提高34%、13%、6%;通过实施例4与对比例4的对比可知,添加鸡肝粉可将离乳仔鼠的IgG、脾指数、胸腺指数分别提高60%、45%、21%.
综上所述,在本发明制备的动物蛋白粉可显著提高离乳仔鼠的IgG、脾指数、胸腺指数,具有对免疫系统的增强作用。
上面结合实施例对本发明作了详细的说明,但是,所属技术领域的技术人员能够理解,在不脱离本发明宗旨的前提下,还可以对上述实施例中的各个具体参数进行变更,形成多个具体的实施例,均为本发明的常见变化范围,在此不再一一详述。
Claims (9)
1.一种提高幼儿免疫力的动物蛋白粉,其特征在于,由以下质量份数的成分组成:
鱼粉20~30份、河虾粉10~20份、猪肉粉10~25份、鸡肝粉20~32份、乳清蛋白1~3份、糖1.5~3份、葡萄糖酸锌0.3~1份、抗结剂1~1.5份。
2.根据权利要求1所述的提高幼儿免疫力的动物蛋白粉,其特征在于,由以下质量份数的成分组成:
鱼粉25~30份、河虾粉14~20份、猪肉粉15~25份、鸡肝粉28~31.5份、乳清蛋白2.5~3份、糖1.8~2.5份、葡萄糖酸锌0.3~0.6份、抗结剂1.5份。
3.根据权利要求1所述的提高幼儿免疫力的动物蛋白粉,其特征在于,所述鱼粉为鳕鱼粉。
4.根据权利要求1 所述的提高幼儿免疫力的动物蛋白粉,其特征在于,所述糖为葡萄糖。
5.根据权利要求1所述的提高幼儿免疫力的动物蛋白粉,其特征在于,所述抗结剂为二氧化硅。
6.权利要求1所述提高幼儿免疫力的动物蛋白粉的制备方法,其特征在于,包括以下步骤:
(1)取所述鱼粉、河虾粉、猪肉粉和鸡肝粉,混合均匀;
(2)再加入所述乳清蛋白、糖、葡萄糖酸锌和抗结剂,混合均匀;
(3)冷冻干燥,粉碎,过筛;
(4)真空包装,灭菌,即得动物蛋白粉。
7.根据权利要求6所述的提高幼儿免疫力的动物蛋白粉的制备方法,其特征在于,所述步骤(3)中,所述过筛时采用50~80目。
8. 根据权利要求6所述的提高幼儿免疫力的动物蛋白粉的制备方法,其特征在于,所述步骤(4)中,所述灭菌采用300~600 MPa下超高压灭菌。
9.根据权利要求6所述的提高幼儿免疫力的动物蛋白粉的制备方法,其特征在于,所述步骤(4)中,所述灭菌的时间控制为3~10min。
