When the plate knife 2 cuts, fins beside the gill are broken off and are lapped at the left end of the plate knife 2, when the plate knife 2 is inclined, the concave cutting edge 201 contacts with the joint of the fish head and the fish body beside the gill in advance, the fins and the fish head are cut off together, and when the plate knife 2 is inclined, the inclined cutting edge 203 contacts with the upper part and the lower part of the gill along with the depth, so that the arc-shaped gill is cut off without cutting off redundant fish body meat. The resistance of the knife-entering mode is small, the knife-entering mode is suitable for large deep sea fish which is generally frozen and transported, the fish body does not need to be fixed, and the dead weight of the large deep sea fish which is frozen and transported can be directly utilized.
