本发明属于宠物食品加工技术领域,具体涉及一种焙烤型宠物食品及其制备工艺。
背景技术
随着生活水平的提高,养宠物的人士越来越多,宠物食品几乎是每个养宠物家族必备的物品。目前,人们对宠物饲料的要求越来越高,越来越精细化,然而市售的宠物饲料的原材料和生产工艺基本相同,较难满足消费者的个性化需求。
此外,目前市售的宠物食品,其提供的蛋白质来源主要是干肉粉或者是搅碎后的鲜肉,消费者基本看不到肉的存在;营养成分不仅有损耗,而且感官也满足不了消费者的需求。因此,为了解决目前存在的问题,制备更加营养丰富的宠物食品、实现添加的肉类物质的真实可见,本发明提供了一种宠物食品及其制备工艺。
发明内容
针对上述现有技术存在的不足,本发明的目的在于克服现有技术中存在的技术缺陷,本发明经过不懈努力和反复实验,提供了一种富含焙烤香和烤肉香风味的宠物食品及其制备工艺。
本发明是通过以下技术手段实现上述技术目的的。
一种富含焙烤香和烤肉香风味的宠物食品,由以下质量百分比的组分组成:
禽畜肉15~50%,红薯泥,5~10%,肉粉15~30%,谷物粉8~15%,谷物淀粉15~20%,明胶1~4%,植物油2~4%,食品添加剂1~2%,具有诱食或营养功能的辅料1~2%。
优选的,所述禽畜肉为牛肉、鸡肉、猪肉、羊肉、鱼肉中的任意一种或多种。
优选的,所述肉粉包括鸡肉粉、鸭肉粉、鹅肉粉、鱼肉粉、羊肉粉、牛肉粉和动物内脏中的一种或多种组合。
优选的,所述谷物粉为玉米粉、糙米粉、大米粉、小麦粉和土豆粉中的一种或多种组合。
优选的,所述谷物淀粉为木薯淀粉、红薯淀粉、玉米淀粉中的一种或多种组合。
优选的,所述食品添加的组成为:脱氢乙酸钠25%,硫酸锰15%,氯化钾10%,磷酸氢钙35%,硫酸亚铁15%。
优选的,所述具有诱食或营养功能的辅料包括食用香料、维生素、矿物质、色素、味精、鸡精、酱油和醋中的一种或多种组合。
本发明还提供宠物食品的制作工艺,具体步骤如下:
(1)解冻禽畜肉;
(2)将解冻后的禽畜肉切片,得到的肉片与调味料滚揉,进行腌渍;
(3)将步骤(2)中腌渍后的肉片进行焙烤,得到焙烤后的肉片,备用;
(4)将红薯洗净,经削皮、切片、隔水蒸熟、搅拌,得到红薯泥;
(5)将步骤(4)的红薯泥与肉粉、谷物粉、谷物淀粉、食品添加剂、植物油和具有诱食或营养功能的辅料搅拌混合,混合后的物料辗轧成片状,得到混合片层;
(6)取步骤(5)中混合片层,在其表面撒一层明胶,形成第一明胶层;然后在第一明胶层上平铺步骤(3)中焙烤后的肉片,在焙烤后的肉片表面撒一层明胶,形成第二明胶层;最后将步骤(5)中的混合片层平铺在第二明胶层上,得到夹层品切块,切块放入烤箱中焙烤,制得宠物食品。
优选的,步骤(2)中所述肉片的厚度为0.5-3mm;所述腌渍时间为2-5h;所述调味料包括盐、花椒、生抽和酱油。
优选的,步骤(3)中所述焙烤的温度为120-180℃,时间10-30min。
优选的,步骤(5)中所述混合片层的厚度为0.5-1.0cm;所述混合片层的宽度和步骤(3)中焙烤后的肉片宽度相同。

本发明的优点和技术效果是:

(2)焙烤后的肉片上下表面都有明胶的存在,在焙烤时明胶融化,待其冷却后,可以将烤肉和包裹物较好的粘合在一起,避免在后期运输、销售过程中脱落。
(3)本发明制备的宠物食品,不仅营养丰富,口感较好,配方科学,工艺简单,而且添加的均是纯天然、无毒害的食品原料,为宠物提供充足的营养,可长期食用,具有较强的焙烤香和烤肉香,易被宠物接受,更能促进宠物进食。

一种富含焙烤香和烤肉香风味的宠物食品由以下质量百分比的组分组成:禽畜肉:牛肉40%,红薯泥5%,肉粉:鸡肉粉25%,谷物粉:大米粉、小麦粉和土豆粉共8%,谷物淀粉:木薯淀粉15%,明胶2%,植物油2%,食品添加剂1%,具有诱食或营养功能的辅料:食用香料、维生素、色素、酱油和鸡精共2%;
具体步骤如下:
(1)解冻牛肉;
(2)将解冻后的牛肉切片,厚度为2mm,宽度为2cm,与盐、花椒、生抽、酱油调味料滚揉,进行腌渍4h;
(3)使用烤箱,焙烤的温度为120℃,时间20min,将上述腌渍后的肉片烤熟,备用;
(4)将红薯洗净,削皮,切片,隔水蒸熟,搅成泥;
(5)将上述红薯泥与鸡肉粉、大米粉、小麦粉、土豆粉、木薯淀粉、食品添加剂、植物油、食用香料、维生素、色素、鸡精和酱油搅拌混合,其中食品添加的组成为:脱氢乙酸钠25%,硫酸锰15%,氯化钾10%,磷酸氢钙35%,硫酸亚铁15%;将混合后的原料辗轧成厚度为5mm,宽度为2cm的片状,得到混合片层;
(6)取步骤(5)中混合片层,记为混合片层Ⅰ;在混合片层Ⅰ上表面撒一层厚度为0.8mm的明胶,形成第一明胶层;然后在第一明胶层上平铺步骤(3)中焙烤后的肉片,在焙烤后的肉片表面撒一层明胶,厚度为0.8mm,形成第二明胶层;最后再取步骤(5)中的混合片层,记为混合片层Ⅱ平铺在第二明胶层上,得到夹层品切块,切块放入烤箱中焙烤,制得宠物食品。
实施例2:
一种富含焙烤香和烤肉香风味的宠物食品由以下质量百分比的组分组成:禽畜肉:猪肉30%,红薯泥10%,肉粉:鱼肉粉和鸡肉粉共30%,谷物粉:小麦粉和土豆粉共10%,谷物淀粉:木薯淀粉15%,明胶1%,植物油2%,食品添加剂1%,具有诱食或营养功能的辅料:食用香料、维生素、色素、酱油和鸡精共1%;
具体步骤如下:
(1)解冻猪肉;
(2)将解冻后的猪肉切片,厚度为2mm,宽度为2cm,与盐、花椒、生抽、酱油调味料滚揉,进行腌渍4h;
(3)使用烤箱,焙烤的温度为120℃,时间20min,将上述腌渍后的肉片烤熟,备用;
(4)将红薯洗净,削皮,切片,隔水蒸熟,搅成泥;
(5)将上述红薯泥与鸡肉粉、鱼肉粉、小麦粉、土豆粉、木薯淀粉、食品添加剂、植物油、食用香料、维生素、色素、鸡精和酱油搅拌混合,其中食品添加的组成为:脱氢乙酸钠25%,硫酸锰15%,氯化钾10%,磷酸氢钙35%,硫酸亚铁15%;将混合后的原料辗轧成厚度为5mm,宽度为2cm的片状,得到混合片层;
(6)取步骤(5)中混合片层,记为混合片层Ⅰ;在混合片层Ⅰ上表面撒一层厚度为0.5mm的明胶,形成第一明胶层;然后在第一明胶层上平铺步骤(3)中焙烤后的肉片,在焙烤后的肉片表面撒一层明胶,厚度为0.5mm,形成第二明胶层;最后再取步骤(5)中的混合片层,记为混合片层Ⅱ平铺在第二明胶层上,得到夹层品切块,切块放入烤箱中焙烤,制得宠物食品。
以实施例1制备的宠物食品进行后续测评实验;
感官评价;
随机选择20名身体健康的测评人员,对其外观、色泽、气味进行感官评价;

通过感官评价的结果来看,本发明制备的宠物食品具有良好的外观、色泽和气味,肉类物质的清晰可见,呈现感很强;同时具有较强的焙烤香和烤肉香,深受宠物喜爱。
适口性评价;
(1)使用下述方法评价对比例食品和本发明实施例1食品的适口性;
对比例食品选择为伊纳宝猫条,购自天猫超市。
评价方法如下。
选择10只猫作为监测者试验两天。
第一天,给各猫提供对比例的宠物食品70g,并在3小时后测量猫食用的各宠物食品的量;然后补充宠物食品至70g,3小时后再次测量猫食用的各宠物食品的量,如此重复24h。基于猫在一天摄食的宠物食品的总重量,测定对比例的宠物食品的摄食量,以百分比计。将监测的10只猫获得的百分比取平均为最终结果。
第二天,给各猫提供本发明实施例1的宠物食品70g,并在3小时后测量猫食用的各宠物食品的量;然后补充宠物食品至70g,3小时后再次测量猫食用的各宠物食品的量,如此重复24h。基于猫在一天摄食的宠物食品的总重量,测定对比例的宠物食品的摄食量,以百分比计。将监测的10只猫获得的百分比取平均为最终结果。

(2)使用2只猫作为监测者,在一天内进行试验。同时将70克对比例和实施例1的宠物食品提供给2只猫,3小时之后测量摄食量。然后补充宠物食品至70g,3小时后再次测量猫食用的各宠物食品的量,如此重复24h。将2只猫的食用量取平均,并将所得的平均重量记作最终结果。
注:如果3小时内猫未进食,则无需补充食品和测量摄食量。

通过表1和表2可以看出,本发明制备的宠物食品适口性较好,更受宠物喜爱;本发明配比合理,方法简单,易于实现和推广。
说明:以上实施例仅用以说明本发明而并非限制本发明所描述的技术方案;因此,尽管本说明书参照上述的各个实施例对本发明已进行了详细的说明,但是本领域的普通技术人员应当理解,仍然可以对本发明进行修改或等同替换;而一切不脱离本发明的精神和范围的技术方案及其改进,其均应涵盖在本发明的权利要求范围内。
Claims (10)
1.一种焙烤型宠物食品,其特征在于,由以下质量百分比的组分组成:
禽畜肉15~50%,红薯泥,5~10%,肉粉15~30%,谷物粉8~15%,谷物淀粉15~20%,明胶1~4%,植物油2~4%,食品添加剂1~2%,具有诱食或营养功能的辅料1~2%。
2.根据权利要求1所述的一种焙烤型宠物食品,其特征在于,所述禽畜肉为牛肉、鸡肉、猪肉、羊肉、鱼肉中的任意一种或多种。
3.根据权利要求1所述的一种焙烤型宠物食品,其特征在于,所述肉粉包括鸡肉粉、鸭肉粉、鹅肉粉、鱼肉粉、羊肉粉、牛肉粉和动物内脏中的一种或多种组合。
4.根据权利要求1所述的一种焙烤型宠物食品,其特征在于,所述谷物粉为玉米粉、糙米粉、大米粉、小麦粉和土豆粉中的一种或多种组合。
5.根据权利要求1所述的一种焙烤型宠物食品,其特征在于,所述谷物淀粉为木薯淀粉、红薯淀粉、玉米淀粉中的一种或多种组合。
6.根据权利要求1所述的一种焙烤型宠物食品,其特征在于,所述食品添加的组成为:脱氢乙酸钠25%,硫酸锰15%,氯化钾10%,磷酸氢钙35%,硫酸亚铁15%。
7.根据权利要求1所述的一种焙烤型宠物食品,其特征在于,所述具有诱食或营养功能的辅料包括食用香料、维生素、矿物质、色素、味精、鸡精、酱油和醋中的一种或多种组合。
8.根据权利要求1~7任意一项所述的焙烤型宠物食品的制备方法,其特征在于,包括以下步骤:
(1)解冻禽畜肉;
(2)将解冻后的禽畜肉切片,得到的肉片与调味料滚揉,进行腌渍;
(3)将步骤(2)中腌渍后的肉片进行焙烤,得到焙烤后的肉片,备用;
(4)将红薯洗净,经削皮、切片、隔水蒸熟、搅拌,得到红薯泥;
(5)将步骤(4)的红薯泥与肉粉、谷物粉、谷物淀粉、食品添加剂、植物油和具有诱食或营养功能的辅料搅拌混合,混合后的物料辗轧成片状,得到混合片层;
(6)取步骤(5)中混合片层,在其表面撒一层明胶,形成第一明胶层;然后在第一明胶层上平铺步骤(3)中焙烤后的肉片,在焙烤后的肉片表面撒一层明胶,形成第二明胶层;最后将步骤(5)中的混合片层平铺在第二明胶层上,得到夹层品切块,切块放入烤箱中焙烤,制得宠物食品。
9.根据权利要求8所述的焙烤型宠物食品的制备方法,其特征在于,步骤(2)中所述肉片的厚度为0.5-3mm;所述腌渍时间为2-5h;所述调味料包括盐、花椒、生抽和酱油;步骤(3)中所述焙烤的温度为120-180℃,时间10-30min。
10.根据权利要求8所述的焙烤型宠物食品的制备方法,其特征在于,步骤(5)中所述混合片层的厚度为0.5-1.0cm;所述混合片层的宽度和步骤(3)中焙烤后的肉片宽度相同;步骤(6)中所述第一明胶层和第二明胶层的厚度为0.5-1.0mm,所述焙烤的温度为120-180℃,时间10-30min。
