According to a first aspect of the present invention, some embodiments of the present invention provide a hemp seed vegetable protein beverage, which comprises the following components by mass: 3-5 parts of fructus cannabis; 1-3 parts of cashew nuts; 0.004-0.01 part of pH regulator, wherein the pH regulator is sodium carbonate; 0.04-0.17 part of stabilizer, wherein the stabilizer is one or a combination of gellan gum and mono-diglycerol fatty acid ester; 50-80 parts of drinking water.
Preparation method of fructus Cannabis vegetable protein beverage
According to a second aspect of the present invention, some embodiments of the present invention provide a method for preparing a hemp seed vegetable protein beverage, comprising the steps of:
(1) weighing the following raw materials: weighing the following components in parts by mass: 3-5 parts of fructus cannabis; 1-3 parts of cashew nuts; 0.004-0.01 part of pH regulator, wherein the pH regulator is sodium carbonate; 0.04-0.17 part of stabilizer, wherein the stabilizer is one or a combination of gellan gum and mono-diglycerol fatty acid ester; 50-80 parts of drinking water; (2) baking: baking said hemp seed and said cashew nut; (3) grinding sauce: finely grinding the mixture of the baked fructus cannabis and cashew nuts by a grinder to obtain sauce; (4) dissolving: dissolving the sauce, the sodium carbonate, the gellan gum and the mono-diglycerol fatty acid ester in the drinking water to obtain a hemp seed vegetable protein mixed solution; (5) homogenizing: homogenizing the hemp seed vegetable protein slurry under high pressure; (6) and (3) sterilization: and (3) carrying out high-temperature instantaneous sterilization on the hemp seed vegetable protein slurry after high-pressure homogenization to obtain the hemp seed vegetable protein beverage.
In some embodiments of the present invention, the baking temperature in the baking step is 70 to 90 ℃, and the baking time is 5 to 15 hours.
In some embodiments of the invention, the step of grinding and the step of dissolving are performed at 50 to 70 ℃.
In some embodiments of the present invention, the homogenizing step is performed at 50-70 ℃ and the homogenizing pressure is 20-30 ℃.
In some embodiments of the present invention, the sterilization step is performed under the conditions of 130 to 140 ℃ for 5 to 15 seconds.
In some embodiments of the present invention, after the step of weighing raw materials, the hemp seeds and cashews are cleaned and then baked; after the sterilization step, the hemp seed vegetable protein beverage is liquid aseptically canned.
The advantages of the present application are further illustrated by the following specific examples. It should be understood that these examples are for illustrative purposes only and are not intended to limit the scope of the present application.
Examples 1 to 6 and comparative examples 1 to 4
Firstly, preparing the fructus cannabis vegetable protein beverage according to the following steps:
(1) weighing the following raw materials: fructus Cannabis, fructus Anacardii, pH regulator sodium carbonate, stabilizer gellan gum and monoglyceride/diglycerol fatty acid ester composition, and drinking water; the mass part ratio of each component is shown in table 1; cleaning the fructus cannabis and the cashews;
(2) baking: baking said hemp seed and said cashew nut;
(3) grinding sauce: finely grinding the mixture of the baked fructus cannabis and cashew nuts by a grinder to obtain sauce;
(4) dissolving: dissolving the sauce, the sodium carbonate, the gellan gum and the mono-diglycerol fatty acid ester in the drinking water to obtain a hemp seed vegetable protein mixed solution;
(5) homogenizing: homogenizing the hemp seed vegetable protein slurry under high pressure;
(6) and (3) sterilization: and (3) carrying out high-temperature instantaneous sterilization on the hemp seed vegetable protein slurry after high-pressure homogenization to obtain the hemp seed vegetable protein beverage, and carrying out liquid aseptic canning on the hemp seed vegetable protein beverage after the sterilization step.
The process parameters in the above steps (2) to (7) are shown in table 2.
Secondly, the fructus cannabis vegetable protein beverages prepared in examples 1-6 and comparative examples 1-4 are detected as follows:
(1) detecting the content of unsaturated fatty acid Omega-3 in each 250ml of beverage:
the detection is carried out according to the method for measuring fatty acid in food of GB5009.168-2016 national food safety Standard.
(2) Detection of the protein content per 250ml of beverage:
detection is carried out according to a method for measuring protein in food of GB5009.5-2016 national food safety Standard.
(3) And (3) stability detection:
the stability is good in an acceleration experiment of the heat preservation box, and the situations of floating of grease and the like are avoided.
(4) And (3) detecting the mouthfeel:
the evaluation criterion of the mouthfeel is that the nut has milky, refreshing and natural fragrance without heavy or sticky feeling.
The results of the above tests are shown in Table 3.

As can be seen from the data in tables 1 to 3, the component mass ratios of the fructus cannabis vegetable protein beverage provided by the invention and the process parameters of the baking and sauce grinding steps in the preparation process have important influences on the content, stability and taste of the nutritional ingredients of the finally prepared fructus cannabis vegetable protein beverage. The invention just improves the formula and the preparation process, so that the functional beverage which has natural milk-flavor taste and high nutritional density on the premise of not containing artificially added flavoring agents (sugar, salt, dairy products and gluten) is obtained.

Claims (9)
1. A fructus cannabis vegetable protein beverage is characterized by comprising the following components in parts by mass:
3-5 parts of fructus cannabis;
1-3 parts of cashew nuts;
0.004-0.01 part of pH regulator, wherein the pH regulator is sodium carbonate;
0.04-0.17 part of stabilizer, wherein the stabilizer is one or a combination of gellan gum and mono-diglycerol fatty acid ester;
50-80 parts of drinking water.
2. A hemp seed plant protein beverage in accordance with claim 1, wherein the gellan gum is a high acyl gellan gum.
3. A hemp seed plant protein beverage according to claim 1, wherein the content of unsaturated fatty acid Omega-3 in every 250ml of the beverage is 770 to 1300 mg; the content of protein in each 250ml of the beverage is 3.4-6.0 g.
4. A preparation method of a fructus cannabis vegetable protein beverage is characterized by comprising the following steps:
(1) weighing the following raw materials: weighing the following components in parts by mass:
3-5 parts of fructus cannabis;
1-3 parts of cashew nuts;
0.004-0.01 part of pH regulator, wherein the pH regulator is sodium carbonate;
0.04-0.17 part of stabilizer, wherein the stabilizer is one or a combination of gellan gum and mono-diglycerol fatty acid ester;
50-80 parts of drinking water;
(2) baking: baking said hemp seed and said cashew nut;
(3) grinding sauce: finely grinding the mixture of the baked fructus cannabis and cashew nuts by a grinder to obtain sauce;
(4) dissolving: dissolving the sauce, the sodium carbonate, the gellan gum and the mono-diglycerol fatty acid ester in the drinking water to obtain a hemp seed vegetable protein mixed solution;
(5) homogenizing: homogenizing the hemp seed vegetable protein slurry under high pressure;
(6) and (3) sterilization: and (3) carrying out ultrahigh-temperature instantaneous sterilization on the hemp seed vegetable protein slurry after high-pressure homogenization to obtain the hemp seed vegetable protein beverage.
5. The method for preparing a fructus cannabis vegetable protein beverage as claimed in claim 4, wherein in the baking step, the baking temperature is 70-90 ℃ and the baking time is 5-15 minutes.
6. The method for preparing a fructus cannabis vegetable protein beverage as claimed in claim 4, wherein the step of milling the paste and the step of dissolving are performed at 50-70 ℃.
7. The method for preparing a hemp seed vegetable protein beverage according to claim 4, wherein the homogenization step is performed at 50 to 70 ℃ and the homogenization pressure is 20 to 30 MPA.
8. The method for preparing a fructus cannabis vegetable protein beverage as claimed in claim 4, wherein the sterilization step is performed under the conditions of 130-140 ℃ for 5-15 seconds.
9. The preparation method of fructus cannabis vegetable protein beverage as claimed in claim 4, characterized in that after the step of weighing raw materials, the fructus cannabis and cashew nuts are cleaned and then baked; after the sterilization step, liquid aseptic canning is performed on the hemp seed vegetable protein beverage.
