Cyperus esculentus belongs to angiosperma, monocotyledonous plant class, Cyperales, Cyperaceae and Cyperus, is native to African Nile river basin, is also called underground walnut and tiger nut, and enjoys the reputation of 'fruit of life'. Is a novel multipurpose crop integrating oil collection, grain, grazing and feeding, which has high quality, high yield and high comprehensive utilization value. Cyperus esculentus has been successfully and widely planted in tropical, subtropical and temperate regions. The cyperus esculentus does not contain gluten protein, is not easy to cause allergy, and is a high-quality raw material for producing formula food and special diet. Since the introduction of the original Su Union and the successful cultivation by the institute of plants of Chinese academy of sciences in 1952, more than 20 provinces are planted in the north of China from Heilongjiang, inner Mongolia and Xinjiang, south to Yunnan, Guangxi and Guangdong.
The cyperus esculentus is rich in nutritional ingredients, wherein the oil content is usually 20% -30%, the starch content is 25% -40%, the sugar content is 15% -20%, the crude protein content is about 8%, the unsaturated fatty acid content is more than 80%, the oleic acid content is 65%, the linoleic acid content is 15%, and the cyperus esculentus is rich in vitamin E and various trace mineral elements.
Cyperus esculentus is an important oil crop, and oil extraction is an effective means for utilization at present, while development and utilization of other ingredients such as polysaccharide are relatively less.
