Abstract
The invention relates to the technical field of bean sprout production, in particular to a method for producing selenium-rich bean sprouts, which comprises the following steps: (1) preparing a selenium-rich culture solution: preparing a sodium selenite culture solution with the mass ratio of 0.05-0.10%; (2) bean selection: selecting soybeans planted in selenium-rich land, and selecting soybeans which are full in particles, bright in color, smooth in surface, free of damage and free of diseases and insect pests during selection; (3) soaking: soaking the selected high-quality soybeans in the prepared selenium-rich culture solution for 12-24 hours; taking out and placing in a plastic bottle, spreading soybeans at the bottom of the plastic bottle, and pricking the bottom of the plastic bottle to facilitate water drainage; (4) sprouting: controlling the room temperature at 28-30 ℃ in the germination process, spraying the sterilization nutrient solution once every 4-6 hours, and cleaning with clear water after half an hour; and taking out the bean sprouts growing to 6-8 cm, and washing the bean sprouts with clear water to obtain the selenium-rich bean sprouts. (3) soaking: soaking the selected high-quality soybeans in the prepared selenium-rich culture solution for 12-24 hours, and controlling the temperature of the selenium-rich culture solution to be 25-35 ℃; taking out and placing in a plastic bottle, spreading soybeans at the bottom of the plastic bottle, and pricking the bottom of the plastic bottle to facilitate water drainage;
(4) sprouting: controlling the room temperature at 28-30 ℃ in the germination process, spraying the sterilization nutrient solution once every 4-6 hours, and cleaning with clear water after half an hour; and taking out the bean sprouts growing to 6-8 cm, and washing the bean sprouts with clear water to obtain the selenium-rich bean sprouts.

The method for producing selenium-enriched bean sprouts as claimed in claim 1, wherein the selenium-enriched culture solution is 0.05% by mass of sodium selenite, the soaking process is carried out for 24 hours, and the temperature of the selenium-enriched culture solution is 30 ℃; the room temperature of the budding process is controlled at 30 ℃, and the sterilization nutrient solution is sprayed every 4 hours.
