Description

Swallowing protective agent and preparation method thereof
Technical Field
The invention belongs to the technical field of swallowing protection food, and particularly relates to a swallowing protection agent and a preparation method thereof.
Background
Dysphagia refers to the difficulty in swallowing and transporting solid or liquid food, saliva, medicines, etc. from the mouth to the stomach, and patients may experience obstructive stagnation sensation in the pharynx, sternum or esophagus. Dysphagia can occur in people of all ages, often in the elderly, especially in patients with neurodegenerative diseases and stroke. 60-80% of patients with neurodegenerative diseases and more than 30% of patients with stroke suffer from dysphagia. Studies have also shown that swallowing dysfunction is suffered in 22% of people over the age of 50, 10-30% over the age of 65, and 40% over the age of 70. It is a conservative estimate that at least 8% of the world's population have difficulty swallowing while eating daily liquids and foods. Dysphagia easily causes anorexia, malnutrition, dehydration and electrolyte dysfunction of patients, and the dysphagia causes the patients to easily suck food into the trachea when swallowing the food, and severe patients can generate aspiration pneumonia, and finally die. With the progress of aging of the population and the rapid growth of the aging population, dysphagia is becoming a more and more serious social problem, and the quality of life and the health of people are seriously affected.
At present, most products suitable for swallowing protection in the market are prepared by compounding food additives such as animal or plant hydrocolloids and dextrin products, consumers have conflict psychology on food additives such as pectin, guar gum, carrageenan and the like in product labels and are not willing to take the products, and the products are poor in taste and lack of nutrition. For example: chinese patent CN110731457A discloses a production method of a thickening powder for assisting dysphagia people to eat, and provides that the thickening powder comprises the following raw materials in parts by mass: 26-45 parts of rice, 12-20 parts of corn, 2-3 parts of xanthan gum, 5-6 parts of Arabic gum, 3-5 parts of microcrystalline cellulose and 55-62 parts of maltodextrin, wherein the thickening powder has the problems of poor mouthfeel and lack of nutritional ingredients due to unreasonable matching of raw materials, and in addition, the xanthan gum and the Arabic gum belong to food additives, so that the conflicting psychology of consumers is easily caused; in addition, in the thickening powder, due to the use of maltodextrin, the maltodextrin is easily and rapidly absorbed, so that the blood sugar is rapidly increased, and the thickening powder is not suitable for middle-aged and old people with high blood sugar.

The swallowing protective agent obtained in the first to fifth examples of the present invention and a commercially available thickening powder (control) for eating by persons with swallowing disorder were added to 200mL of water, respectively, and dissolved to obtain a uniform solution, and the components thereof were measured, and the experimental results are shown in table 1.
As can be seen from Table 1, the viscosity of the swallowing protective agent obtained by the method of the invention is between 1835 and 2500cp, which is equivalent to the viscosity (2150cp) of a certain commercially available thickening powder for dysphagic people to eat, namely the viscosity of a control. As can be seen from Table 1, the energy of the swallowing protective agent obtained by the method of the invention is 77-144KJ/100g, which is lower than the energy requirement (170 KJ/100g) of the national standard for low-energy food, and is obviously lower than the energy (1270KJ/100g) of a certain commercially available thickening powder for dysphagia people to eat, so that the energy value of the swallowing protective agent obtained by the method of the invention is obviously reduced, and the swallowing protective agent is a low-energy swallowing protective agent. As can be seen from Table 1, the carbohydrate content of the swallowing protectant obtained by the method of the invention is 1-4g/100g, which is significantly lower than the carbohydrate content (60g/100g) of a certain commercially available thickening powder for eating by persons with swallowing disorders, i.e. a control sample, so that the carbohydrate content of the swallowing protectant obtained by the method of the invention is low; the swallowing protective agent of the invention can not cause the blood sugar to rise after being absorbed by human body, and the diabetes patient can eat the swallowing protective agent with ease. As can be seen from Table 1, the content of dietary fiber in the swallowing protective agent obtained by the method is 7-36g/100g, which is greater than the requirement of national standard on the content of dietary fiber (more than or equal to 3g/100g), and the content of dietary fiber can be adjusted according to the specific requirement, namely, the swallowing protective agent is a swallowing protective agent containing dietary fiber and low-energy and low-carbohydrate;

However, when the control sample is added to hot porridge, the dissolution speed is slow, lumps exist, the lumps are difficult to dissolve, and the obtained solution is not uniform; after the control sample is added into porridge, the color of the porridge is changed and is slightly white. In addition, after the swallowing protective agent is added into porridge, the smell is fragrant and sweet and is pleasant; when the porridge is eaten, the porridge has the original taste of porridge, no peculiar smell and good mouthfeel. However, after the control was added to the porridge, the porridge smell changed, slightly gummy; when the porridge is eaten, the porridge has slight water and glue taste on the basis of the original taste of the porridge, and the taste of the porridge is influenced.
