Abstract

Through the control of the unfreezing temperature and the combination of the slicing machine, the meat grinder and the colloid mill in the grinding process of fresh meat, the fineness of meat pulp is guaranteed in the first step, the problem that the mobility of the meat pulp can be guaranteed without adding water is solved, and the problem of material blockage caused by the situations of bone spurs, meat ribs, large-particle meat particles and the like cannot occur in the subsequent production process.
Fresh meat pulp homogenization treatment selects a diaphragm pump which can efficiently convey high-viscosity pulp to pump the ground meat pulp into a stirring tank, the stirring tank is provided with an anchor type stirring device, the anchor type stirring device is driven by a motor, the rotating speed is 55-60r/min, and the uniformity of the meat pulp entering a conditioner is ensured.
