It is further preferred that the calcium is present in the liquid nutritional supplement at a concentration of 8-32mg/100kJ and is derived from calcium caseinate, calcium carbonate, calcium gluconate, calcium citrate, calcium L-lactate, calcium hydrogen phosphate, calcium chloride, calcium phosphate, calcium glycerophosphate, calcium oxide, calcium sulfate and calcium oligo-phosphate.

It is further preferred that the zinc is present in the liquid nutritional supplement at a concentration of 0.10mg to 0.50mg per 100kJ, and the source of zinc includes zinc gluconate, zinc sulfate, zinc oxide, zinc lactate, zinc citrate, zinc chloride, zinc carbonate, and zinc acetate.
It is further preferred that the manganese is present in the liquid nutritional supplement in an amount of from 6 μ g to 146 μ g per 100kJ, and the source comprises manganese gluconate, manganese sulphate, manganese carbonate, manganese citrate and manganese chloride.
It is further preferred that the copper is present in the liquid nutritional supplement in an amount of from 11 μ g to 120 μ g per 100kJ, and the source comprises copper gluconate, copper carbonate, copper sulfate and copper citrate.
It is further preferred that the magnesium is present in the liquid nutritional supplement at 1.8-5.0mg/100kJ and the sources include magnesium carbonate, magnesium sulfate, magnesium chloride, magnesium lactate, magnesium oxide, magnesium hydrogen phosphate and magnesium gluconate.
It is further preferred that the iodine is present in the liquid nutritional supplement at 1-5 μ g/100kJ, and the source thereof includes potassium iodate, potassium iodide, and sodium iodide.
Further preferably, the selenium is contained in the liquid nutritional supplement at a concentration of 0.3-5 μ g/100kJ, and the source thereof includes sodium selenate, sodium selenite and selenium-enriched yeast.
By adopting the technical scheme, the sources of the trace element and mineral substance mixture are all suitable for preparing the liquid full-nutrition supplement suitable for mental workers.

step three, homogenizing: the working pressure of the homogenizer is 20MPa, and the flow rate is 2000L/h; preheating is needed before homogenizing to 60-65 ℃, and a homogenizing method generally adopts a two-stage type, namely the pressure set by the first stage of homogenizing is 15-20MPa, and the pressure set by the second stage of homogenizing is 4-8 MPa;
step four, sterilizing and filling: the sterilization condition is 135-; the materials can be canned after being cooled to 10-30 ℃ in an aseptic tank; packaging with 120ml of tetra Pak brick, and sterilizing with 30-50% hydrogen peroxide solution before packaging at a filling speed of 8000 boxes/hr;
step five, code spraying and packaging: and conveying the canned finished product from the filling room to a packaging room through a conveyor belt, automatically printing a code-spraying batch number on line, placing the canned finished product at room temperature for 21 days after the production date, packaging the canned finished product after all physicochemical items and qualified microbial items are inspected.
Through adopting above-mentioned technical scheme, adopt A, B, C, D little batching jar to mix each raw materials, send into the mixed constant volume in the holding jar again, not only be favorable to making each component raw materials intensive mixing, and whole have higher production efficiency. Two-stage homogenization is adopted, wherein the first stage of homogenization aims at breaking fat globules, and the second stage of homogenization aims at dispersing the broken small fat globules to prevent adhesion, thus being beneficial to keeping the quality of the liquid total nutrient supplement suitable for brainworkers high. The ultra-high temperature sterilization and hydrogen peroxide sterilization are adopted in the sterilization process, so that the liquid total nutrient supplement suitable for mental workers can be kept with good stability in the storage process. (1) the high-energy-density liquid total nutrient supplement not only specifies the specific proportion of protein sources, but also assists the specific proportion of carbohydrate and fat sources, and is still stable after ultra-high temperature sterilization, so that the final product can be kept in a stable state for one year at normal temperature, and is kept in a stable state for 3 months under the condition of accelerating the experiment temperature to be 30 ℃ and humidity RH 60%.
(2) Meanwhile, the high energy density liquid nutritionally complete supplement has a lower fat energy supply ratio of 20% -25%. Mental workers often sit still for a long time, have low energy consumption, are easy to cause lipodystrophy, and cause chronic diseases such as hyperlipidemia, arteriosclerosis, diabetes, obesity, hypertension, hyperuricemia and the like. (3) Meanwhile, the carbohydrate source is prepared by raw materials with different chain lengths of one-carbon sugar to more than seven-carbon sugar in a gradient ratio, and the absorption rate of a human body to the carbohydrates with different molecular sizes is utilized to present a special physiological metabolic process of gradient gradual absorption and slowly convert energy. Example 1: a liquid nutritionally complete supplement for brainworkers, which provides 140kcal per 100ml of the liquid nutritionally complete supplement for brainworkers, has a total fat energy supply ratio of 22.5%, a carbohydrate energy supply ratio of 60%, and a protein energy supply ratio of 18.5%, and has the components and corresponding parts by weight per 120ml of the liquid nutritionally complete supplement for brainworkers as shown in Table 1, and is prepared by the following steps:
step one, mixing materials: an online mixer is adopted, and materials are mixed for 4 times by taking 2.5 tons as an example; 300L of pure water is added into a small batching tank and circulates together with an online mixer each time, powdery raw materials are added into the online mixer to be mixed with water, 150 kg of raw materials are added each time, after uniform mixing is confirmed by visual inspection in the small batching tank, all the raw materials are sent into a constant volume tank, and fat raw materials are directly added into an emulsifying tank;

step four, sterilizing and filling: sterilizing at 140 deg.C for 4s, and feeding into a sterile tank; the materials can be canned after being cooled to 20 ℃ in the aseptic tank; packaging with 120ml of tetra Pak brick, sterilizing with 40% hydrogen peroxide solution before packaging, and filling at 8000 boxes/hr;
step five, code spraying and packaging: and conveying the canned finished product from the filling room to a packaging room through a conveyor belt, automatically printing a code-spraying batch number on line, placing the canned finished product at room temperature for 21 days after the production date, packaging the canned finished product after all physicochemical items and qualified microbial items are inspected.
The protein component is obtained by mixing casein salt and concentrated milk protein, and the mass ratio of the casein salt to the concentrated milk protein is 1.15: 1. the casein salt can be sodium caseinate. The energizing ratio of saturated fatty acids in the fat was 5%, and the energizing ratio of polyunsaturated fatty acids and monounsaturated fatty acids therein was 0.9: 1. The content of the individual components of the fat in the finished product is preferably as follows: 1.25% of sunflower seed oil; 0.65% of perilla seed oil; 1.25% of olive oil; 1.5% of canola oil; 1% of soybean oil; 1% of coconut oil; 0.5 percent of camellia oil; 0.5 percent of corn oil; medium-chain fatty glyceride 0.5%. The components of the carbohydrate and the proportion of each component in the finished product are as follows: 2.5 percent of carbon sugar; 10.5% of a secondary carbon sugar; 3% of three-six carbon sugar; 6.5 percent of the seven-carbon sugar. The one-carbon sugar includes glucose, fructose, galactose and sorbose. The two-carbon sugar comprises isomaltulose and lactose, sucrose, and maltose. The three-six carbon sugar comprises oligosaccharide, fructo-oligosaccharide and xylitol. The seven-carbon sugar comprises maltodextrin and resistant dextrin, galactomannan, starch, modified starch, cellulose, inulin, agar, carrageenan, xanthan gum and arabic gum. The content ratio of the two-carbon sugar to the seven-carbon sugar is 2: 1.
Example 2: a liquid total nutrient supplement for mental workers, which is different from example 1 in that it is prepared by the following steps:
step one, mixing materials: an online mixer is adopted, and materials are mixed for 4 times by taking 2.5 tons as an example; 300L of pure water is fed into a small batching tank and circulates together with an online mixer each time, powdery raw materials are fed into the online mixer to be mixed with water, 100kg of raw materials are fed into the small batching tank each time, after uniform mixing is confirmed by visual inspection in the small batching tank, all the raw materials are fed into a constant volume tank, and fat raw materials are directly fed into an emulsifying tank;

step four, sterilizing and filling: sterilizing at 145 deg.C for 5s, and feeding into a sterile tank; the materials can be canned after being cooled to 30 ℃ in the aseptic tank; packaging with 120ml of tetra Pak brick, sterilizing with 50% hydrogen peroxide solution before packaging, and filling at 8000 boxes/hr;

Example 6: a liquid total nutrient supplement for brainworkers, which is different from example 1 in that a protein component is obtained by mixing a caseinate and concentrated milk protein, and the mass ratio of the caseinate to the concentrated milk protein is 0.8: 1. the casein salt can be selected from sodium caseinate, potassium caseinate and magnesium caseinate, and the mixing ratio is 1:1: 1.
Example 7: a liquid total nutrient supplement for brainworkers, which is different from example 1 in that a protein component is obtained by mixing a caseinate and concentrated milk protein, and the mass ratio of the caseinate to the concentrated milk protein is 1.5: 1. the casein salt can be selected from sodium caseinate, magnesium caseinate and calcium caseinate, and the mixing ratio is 1:1: 1.
Example 8: a liquid total nutritional supplement suitable for mental workers, which is different from example 1 in that the energizing ratio of saturated fatty acids in fat is 1%, and the energizing ratio of polyunsaturated fatty acids and monounsaturated fatty acids therein is 0.6: 1. The content of the individual components of the fat in the finished product is preferably as follows: 0.5 percent of sunflower seed oil; 0.3 percent of perilla seed oil; 0.5% of olive oil; 1% of canola oil.
Example 9: a liquid nutritionally complete supplement for brainworkers, differing from example 1 in that the ratio of energy supply of saturated fatty acids in the fat is 1-9%, and in that the ratio of energy supply of polyunsaturated fatty acids and monounsaturated fatty acids is 1.2: 1. The content of the individual components of the fat in the finished product is preferably as follows: 2% of sunflower seed oil; 1% of perilla seed oil; 2% of olive oil; 2% of canola oil; 2% of soybean oil; 2% of coconut oil; 1% of camellia oil; 1% of corn oil; 1% of medium-chain fatty glyceride.
Example 10: a liquid total nutrient supplement for mental workers, which differs from example 1 in that the components of the carbohydrate and the proportions of the components in the finished product are as follows: 6% of a two-carbon sugar; 1% of three-six carbon sugar; 3% above hepta-carbon sugar, and the content ratio of two-carbon sugar to hepta-carbon sugar is 1: 1.
Example 11: a liquid total nutrient supplement for mental workers, which differs from example 1 in that the components of the carbohydrate and the proportions of the components in the finished product are as follows: 5% of carbon sugar; 15% of a secondary carbon sugar; 5% of three-carbon-six-carbon sugar; more than 10% of heptacarbon sugar, and the content ratio of the two-carbon sugar to the heptacarbon sugar is 3: 1.
Example 12: a liquid nutritionally complete supplement for brainworkers, differing from example 1 in that 100kcal of total fat, 55% carbohydrate and 25% protein energy is provided per 100ml of the liquid nutritionally complete supplement for brainworkers.
Example 13: a liquid nutritionally complete supplement for brainworkers, differing from example 1 in that 180kcal of total fat, 65% carbohydrate and 12% protein energy per 100ml of the liquid nutritionally complete supplement for brainworkers is provided.

Comparative example 1: a liquid total nutrient supplement for brainworkers, which is different from example 1 in that a protein component is obtained by mixing a caseinate and concentrated milk protein, and the mass ratio of the caseinate to the concentrated milk protein is 0.75: the casein salt can be sodium caseinate.
Comparative example 2: a liquid total nutrient supplement for brainworkers, which is different from example 1 in that a protein component is obtained by mixing a caseinate and concentrated milk protein, and the mass ratio of the caseinate to the concentrated milk protein is 1.55: the casein salt can be sodium caseinate.
Comparative example 3: a liquid nutritionally complete supplement for brainworkers, differing from example 1 in that the energizing ratio of saturated fatty acids in the fat is 0.5%, and in that the energizing ratio of polyunsaturated fatty acids and monounsaturated fatty acids is 0.55: 1.
Comparative example 4: a liquid total nutritional supplement suitable for mental workers, which is different from example 1 in that the energizing ratio of saturated fatty acids in fat is 10%, and the energizing ratio of polyunsaturated fatty acids and monounsaturated fatty acids therein is 1.25: 1.
Performance testing
Test samples: the liquid total nutrient supplements for brainworkers obtained in examples 1 to 16 were used as test samples 1 to 16, and the liquid total nutrient supplements for brainworkers obtained in comparative examples 1 to 4 were used as control samples 1 to 4.
The test method comprises the following steps: taking two equal test samples 1-16 and two equal control samples 1-4, dividing each test sample 1-16 and the control sample 1-4 into two groups, placing one group in the same environment, keeping the temperature at room temperature (25 ℃), and measuring the specific gravity, the viscosity, the pH, the sedimentation volume ratio, the appearance and the flavor after 1 month, 3 months, 6 months and 12 months; the other group was placed in the same environment and kept at 40 ℃ and measured for specific gravity, viscosity, pH, sedimentation volume ratio, appearance and flavor after 1 month, 2 months and 3 months.
And (3) test results: the test results of the test samples 1 to 16 and the control samples 1 to 4 are shown in Table 2. As can be seen from Table 2, the liquid total nutrient supplement for brainworkers in the present invention, which is obtained by comparing the test results of the test sample 1 and the control samples 1 to 4, not only specifies the specific ratio of the protein source, but also assists the specific ratio of the fat source, and is still stable after ultra-high temperature sterilization, thereby helping to achieve the purpose that the final product is kept in a stable state for one year at normal temperature, and is kept in a stable state for 3 months at 40 ℃ in an accelerated experiment.

3.0-6.0g fat;
15.0-25.0g of carbohydrate;
1.0-10.0g of dietary fiber;
0-5.0g of L-carnitine;
a proper amount of vitamin mixture;
the mixture of trace elements and minerals is proper.
2. The liquid complete nutritional supplement for brainworkers according to claim 1, wherein the protein component is obtained by mixing caseinate and concentrated milk protein, and the mass ratio of caseinate to concentrated milk protein is (0.8-1.5): 1.

4. The liquid nutritionally complete supplement for brainworkers of claim 1, wherein the energizing ratio of saturated fatty acids in the fat is 1-9%, and wherein the energizing ratio of polyunsaturated fatty acids and monounsaturated fatty acids is (0.6-1.2): 1.
5. The liquid complete nutritional supplement for brainworkers of claim 1, wherein said fat is any three or a mixture of any three or more of sunflower oil, canola oil, perilla oil, camellia oil, olive oil, soybean oil, coconut oil, medium chain fatty acid glycerides, corn oil and soybean oil.
6. A liquid nutritionally complete supplement for brainworkers according to claim 5, wherein the fat is preferably present in the following amounts of its components in the finished product:
0.5-2% of sunflower seed oil;
0.3-1% of perilla seed oil;
0.5-2% of olive oil;
1-2% of canola oil;
0-2% of soybean oil;
0-2% of coconut oil;
0-1% of camellia oil;
0-1% of corn oil;
0-1% of medium-chain fatty glyceride.
7. The liquid complete nutritional supplement for brainworkers of claim 1, wherein the carbohydrate components and the proportions of the components in the finished product are as follows:
1-5% of carbon sugar;
3% -10% of a disaccharide;
1-5% of three-carbon-six-carbon sugar;
3 to 10 percent of seven-carbon sugar.
8. The high energy density liquid nutritional supplement of claim 7 wherein the one carbon sugars comprise glucose, fructose, galactose and sorbose.
9. The high energy density liquid nutritional supplement of claim 7 wherein the two-carbon sugar comprises isomaltulose (palatinose) and lactose, sucrose, maltose.
10. The high energy density liquid nutritional supplement of claim 7 wherein the three-six carbon sugar comprises oligosaccharides, fructooligosaccharides and xylitol.
11. The high energy density liquid nutritional supplement according to claim 7 wherein the seven carbon sugars or more include maltodextrin and resistant dextrin, galactomannan, starch, modified starch, cellulose, inulin, agar, carrageenan, xanthan gum, gum arabic.
12. The high energy density liquid nutritional supplement of claim 7 wherein the ratio of the two-carbon sugar to the seven-carbon sugar is (1.0-3.0): 1.
13. The liquid nutritionally complete supplement for brainworkers according to claim 1, wherein the vitamin mixture comprises the following components and proportions (per 120 ml):
vitamin A60-180 μ gRE;
vitamin D1.0-3.5 μ g;
5.2-20.8mg of vitamin E;
vitamin K15.2-30.2 μ g;
vitamin B10.2-0.9 mg;
vitamin B20.2-0.9 mg;
60.2-0.9 mg of vitamin B;
120.2-7.4 mug of vitamin B;
10-48mg of vitamin C;
1.0-6.5mg of nicotinic acid;
folic acid 30-100 mug;
0.5-5.0mg pantothenic acid;
biotin 2.2-18 μ g.
14. The liquid complete nutritional supplement for brainworkers according to claim 1, wherein the mixture of trace elements and minerals is prepared as follows (per 120 ml):
50-135mg of sodium;
50-100mg of phosphorus;
60-180mg of potassium;
18-26mg of magnesium;
50-95mg of calcium;
0.8-2.6mg of iron;
0.5-1.7mg of zinc;
iodine 9-22 μ g;
selenium 3-25 μ g;
20-200mg of chlorine;
50-70 mu g of copper;
0.03-0.3mg of manganese.

The liquid nutritional supplement for brainworkers of claim 14, wherein said sodium is present in the liquid nutritional supplement at a concentration of 7-40mg/100kJ and is derived from the group consisting of sodium caseinate, sodium chloride, sodium carboxymethyl cellulose, sodium selenite, sodium selenate, disodium hydrogen phosphate, sodium dihydrogen phosphate, sodium bicarbonate, sodium molybdate and sodium citrate.
16. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein said phosphorus is present in the liquid nutritionally complete supplement at 6-20mg/100kJ, and the sources thereof include phospholipids, monopotassium phosphate, calcium phosphate and calcium hydrogen phosphate.
17. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein the potassium is comprised between 10 and 64mg/100kJ in the liquid nutritionally complete supplement and the sources thereof include potassium dihydrogen phosphate, dipotassium hydrogen phosphate, potassium hydroxide, potassium chloride, potassium gluconate, potassium citrate and potassium caseinate.
18. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein the calcium is present in an amount of 8-32mg/100kJ in the liquid nutritionally complete supplement and the source of the calcium comprises calcium caseinate, calcium carbonate, calcium gluconate, calcium citrate, calcium L-lactate, calcium hydrogen phosphate, calcium chloride, calcium phosphate, calcium glycerophosphate, calcium oxide, calcium sulphate and calcium oligophosphate.
19. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein said iron comprises between 0.10mg and 0.55mg per 100kJ in the liquid nutritionally complete supplement and the sources thereof include ferrous sulphate, ferrous gluconate, ferric ammonium citrate, ferric citrate, ferrous lactate, ferric pyrophosphate, ferric sodium edetate, ferrous carbonate, ferrous citrate, ferrous fumarate, ferrous succinate and ferrous fumarate.
20. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein said zinc is present in the liquid nutritionally complete supplement at a concentration of 0.10mg to 0.50mg per 100kJ, and the sources thereof include zinc gluconate, zinc sulfate, zinc oxide, zinc lactate, zinc citrate, zinc chloride, zinc carbonate and zinc acetate.
21. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein said manganese is present in the liquid nutritionally complete supplement in the range of 6 μ g to 146 μ g per 100kJ, and the sources thereof include manganese gluconate, manganese sulphate, manganese carbonate, manganese citrate and manganese chloride.

The liquid nutritionally complete supplement for brainworkers of claim 14, wherein said copper is present in the liquid nutritionally complete supplement in the range of 11 μ g to 120 μ g/100kJ, and the sources thereof include copper gluconate, copper carbonate, copper sulfate and copper citrate.

The liquid nutritionally complete supplement for brainworkers of claim 14, wherein said magnesium is present in the liquid nutritionally complete supplement at 1.8-5.0mg/100kJ and the sources thereof include magnesium carbonate, magnesium sulfate, magnesium chloride, magnesium lactate, magnesium oxide, magnesium hydrogen phosphate and magnesium gluconate.
24. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein the iodine is present in the liquid nutritionally complete supplement at 1-5 μ g/100kJ, and the sources thereof include potassium iodate, potassium iodide and sodium iodide.
25. The liquid nutritionally complete supplement for brainworkers of claim 14, wherein the selenium comprises 0.3-5 μ g/100kJ in the liquid nutritionally complete supplement and the sources thereof include sodium selenate, sodium selenite and selenium enriched yeast.
26. A method of preparing a liquid nutritionally complete supplement for brainworkers according to any one of claims 1 to 25, comprising the steps of:
step one, mixing materials: an online mixer is adopted, and materials are mixed for 4 times by taking 2.5 tons as an example; 300L of pure water is fed into a small batching tank and circulates together with an online mixer each time, powdery raw materials are fed into the online mixer to be mixed with water, 200 kilograms of raw materials are fed into the small batching tank each time, after the mixture is confirmed by visual inspection in the small batching tank, the raw materials are all fed into a constant volume tank, and fat raw materials are directly fed into an emulsification tank;

B300L pure water, 50-100kg carbohydrate, 30-50kg protein raw material;
C300L pure water, 50-100kg carbohydrate, 30-50kg protein material;
D300L pure water, remaining all solid and oil feedstocks;
step two, volume fixing: confirming that the uniformly mixed materials are subjected to 30-50 mesh online filtration and then sent into a constant volume tank, keeping the constant volume to 2.5 tons according to the batch production, and continuously stirring for 10-20 minutes at the stirring speed of 40-70 rpm;
step three, homogenizing: preheating to 60-65 deg.C before homogenizing, wherein the first stage homogenizing pressure is 15-20MPa, and the second stage homogenizing pressure is 4-8 MPa;
step four, sterilizing and filling: the sterilization condition is 135-; the materials can be canned after being cooled to 10-30 ℃ in an aseptic tank; packaging with 120ml of tetra Pak brick, and sterilizing with 30-50% hydrogen peroxide solution before packaging at a filling speed of 8000 boxes/hr;
step five, code spraying and packaging: and conveying the canned finished product from the filling room to a packaging room through a conveyor belt, automatically printing a code-spraying batch number on line, placing the canned finished product at room temperature for 21 days after the production date, packaging the canned finished product after all physicochemical items and qualified microbial items are inspected.
