The jacket 2 is provided with a steam inlet 21 and a steam outlet 22, and steam is introduced into the jacket 2 to heat the high-pressure digester 1. And the high-pressure cooking pot 1 is adopted for cooking, so that the heating cooking efficiency is high, and the high-pressure cooking pot is suitable for plateau areas, so that the material can achieve the high-temperature cooking effect.
The high-pressure digester 1 is provided with the water inlet 13, so that the high-pressure digester 1 can be conveniently added with water and cleaned.
The pottery jar is placed and is provided with a plurality of fixed orificess 41 on the cabinet 4, fermentation pottery jar 5 is placed in fixed orificess 41, the pottery jar is placed 4 bottoms of cabinet and is provided with a plurality of universal wheels 42, makes things convenient for the removal of fermentation pottery jar 5, makes each fermentation pottery jar 5 can both move the discharge gate that discharging pipe 11 is located fermentation chamber 3, connects operations such as material.

The high-pressure cooking pot is provided with a cooking pot temperature sensor, a pressure sensor and an exhaust port; the high-pressure cooking pot comprises a cooking pot body and a cooking pot cover, wherein the cooking pot cover is provided with a sealing ring, the high-pressure cooking pot is sealable, and a material lifting basket is arranged in the cooking pot body, so that material lifting and discharging can be automatically carried out up and down in the heating and pressurizing cooking process according to needs.
The fermentation chamber is provided with a heater, a humidifier, a fan and an air filter, so that the fermentation chamber has the capabilities of heating, humidifying and air circulating.
The fermentation chamber is provided with a fermentation temperature sensor, a humidity sensor and an oxygen sensor. The device is characterized by further comprising a controller, wherein the controller is in communication connection with the digester temperature sensor, the fermentation temperature sensor, the humidity sensor and the oxygen sensor, and the controller is in control connection with the flow electromagnetic valve, the heater, the humidifier and the fan. The controller is the current controlling means commonly used such as singlechip, and its temperature that can know the high pressure digester, the temperature of fermentation chamber, humidity and the dissolved oxygen volume can also control flow solenoid valve, heater, humidifier and fan as required, controls the temperature of high pressure digester promptly, the temperature of fermentation chamber, humidity and the dissolved oxygen volume. Realizes automatic control in the traditional jar fermentation.
The controller is a master device for controlling the starting, speed regulation, braking and reversing of the motor by changing the wiring of a main circuit or a control circuit and changing the resistance value in the circuit according to a preset sequence. The system consists of a program counter, an instruction register, an instruction decoder, a time sequence generator and an operation controller, and is a decision mechanism for issuing commands, namely, the decision mechanism is used for coordinating and commanding the operation of the whole computer system. The controller of the invention can be selected from a PLC or a singlechip.
As shown in FIG. 4, the invention also provides a plateau jar type static fermentation method, which comprises the following steps:
a. pretreatment: cleaning dry materials, filling the cleaned dry materials into a filter mesh bag and sealing the filter mesh bag for later use; the filter mesh bag is 20 meshes.
b. Leaching: placing the mesh bag filled with the dry materials into a high-pressure cooking pot for leaching;
c. dissolving auxiliary materials: dissolving auxiliary materials in the leached liquid, and then carrying out sterilization treatment; the sterilization temperature is 105-110 ℃.
d. Putting into a jar: conveying the sterilized feed liquid into a fermentation pottery jar through a discharge pipe;
e. inoculation: after the feed liquid in the fermentation pottery jar is cooled, inoculating;
f. fermentation: : controlling the conditions of temperature, humidity, dissolved oxygen and the like, and starting static fermentation. The temperature in the fermentation chamber is 25-35 ℃, the humidity is 30-40%, and the fermentation time is 15-20 days.
Naturally, operations such as cooking, dissolving auxiliary materials, inoculation, transferring, cleaning and the like in the fermentation chamber all need to be carried out manually.
According to the plateau jar type static fermentation system and method, the temperature, the humidity and the clean air dissolved oxygen can be regulated and controlled, and the enzyme jar type static fermentation can be carried out in the environments of plateau low temperature, drying, oxygen deficiency and the like; by utilizing the plateau jar type static fermentation system and method, the ferment obtained by plateau jar type static fermentation has better taste and flavor than metal fermentation tank fermentation ferment; the high-pressure cooking pot provided by the invention is provided with a temperature, pressure and automatic material lifting regulation and control system, can select the required leaching temperature, pressure and material lifting times according to the material properties and the leaching process, improves the material leaching rate, is particularly suitable for material leaching in a plateau environment, and can avoid the problems of low atmospheric pressure of the plateau environment, low cooking leaching temperature, low material leaching rate, long leaching time and the like; the high-pressure cooking pot is provided with a temperature and pressure regulating system, and feed liquid can be subjected to in-situ high-temperature high-pressure sterilization after being mixed, so that the pollution of the feed liquid by mixed bacteria is avoided; the fermentation chamber is provided with the ozone inlet pipe, and an ozone machine can be connected to carry out integral ozone sterilization on the fermentation chamber and the pottery jar before fermentation, so that the pollution of environmental sundry bacteria is avoided, and the quality safety of fermentation liquor is ensured; the fermentation chamber is provided with the air filter, so that the air cleanliness can be controlled in the fermentation process, the air mixed bacteria pollution in the fermentation process is avoided, and the quality safety of the fermentation liquor is ensured; the plateau jar type static fermentation system and the plateau jar type static fermentation method are used for producing ferment, the process conditions are intelligent and controllable, the quality difference of the product in batches is small, compared with the traditional jar type static fermentation, the plateau jar type static fermentation system and the plateau jar type static fermentation method are high in product homogenization degree, large-scale, standardized and standardized production is easy to realize, and the product quality is guaranteed.
