The invention has the beneficial effects that: according to the crayfish formula based on the medicinal food concept and the cooking method, the rapeseed oil used in the cooking process contains unsaturated fatty acids such as linoleic acid and vitamin E and can soften blood vessels and delay aging, and the traditional Chinese medicine theory considers that the rapeseed oil is sweet in taste, pungent and warm in nature and has the functions of clearing heat and removing toxicity; secondly, the angelica dahurica and the myrcia in the traditional Chinese medicine material bag have the functions of dispelling wind, relieving pain, dispelling cold, invigorating stomach and the like, and the tsaoko amomum fruits, the cinnamon and the like can effectively remove the fishy smell of the crayfish. Importantly, the rock sugar added in the cooking process can effectively reduce the irritation of the pepper to intestines and stomach and taste buds on the premise of not influencing the spicy taste, and improves the taste. In addition, side dish such as lettuce and onion can stimulate appetite and improve immunity. The crayfish cooked by the method has good market reaction, and after eating the spicy crayfish, the customers have spicy taste and no uncomfortable symptoms such as dryness heat, excessive internal heat and the like.

Detailed Description
The invention is further described with reference to the following figures and examples.
Example 1, in the crayfish formula based on the medicinal diet concept, the raw materials are respectively in parts by weight: crayfish: 1000 g; pi county bean breaking sauce: 100g of the total weight of the mixture; oyster sauce: 50g of the total weight of the mixture; rock sugar: 150g of the total weight of the mixture; thirteen spices: 5g of the total weight of the mixture; radix angelicae: 3g of the total weight of the mixture; and (3) bay leaf: 3g of the total weight of the mixture; and (4) tsaoko: 2g of the total weight of the mixture; cassia bark: 3g of the total weight of the mixture; rapeseed oil: 300g of the total weight of the mixture; beer: 500 g; dried chili pepper: 20g of the total weight of the mixture; and (3) spicy pepper: 10g of a mixture; scallion: 50g of the total weight of the mixture; ginger: 30g of the total weight of the mixture; garlic: 50g of the total weight of the mixture; and (3) sesame oil: 0.5 g.
The raw materials of the crayfish formula also comprise a proper amount of salt, lettuce slices, onion slices, green pepper slices and sesame oil. The angelica dahurica and the myrcia have the functions of dispelling wind, relieving pain, dispelling cold and invigorating stomach, and the tsaoko amomum fruits and the cinnamon can remove the fishy smell of crayfish. The rock candy can reduce the stimulation of the pepper to intestines and stomach; the lettuce and onion can stimulate appetite and improve immunity.
Example 2, in the crayfish formula based on the medicinal diet concept, the raw materials are respectively in weight: crayfish: 900 g; pi county bean breaking sauce: 80g of the total weight of the mixture; oyster sauce: 40g of the total weight of the mixture; rock sugar: 135g of the total weight of the mixture; thirteen spices: 4g of the total weight of the mixture; radix angelicae: 2.5 g; and (3) bay leaf: 2.5 g; and (4) tsaoko: 1.5 g; cassia bark: 2.5 g; rapeseed oil: 250g of the total weight of the mixture; beer: 400 g; dried chili pepper: 17.5 g; and (3) spicy pepper: 7.5 g; scallion: 40g of the total weight of the mixture; ginger: 25g of the total weight of the mixture; garlic: 40g of the total weight of the mixture; and (3) sesame oil: 0.4 g.
Example 3, in the crayfish formula based on the medicinal diet concept, the raw materials are respectively in weight: crayfish: 1100 g; pi county bean breaking sauce: 120g of a mixture; oyster sauce: 60g of the total weight of the mixture; rock sugar: 165g of a soybean milk powder; thirteen spices: 6g of a mixture; radix angelicae: 3.5 g; and (3) bay leaf: 3.5 g; and (4) tsaoko: 2.5 g; cassia bark: 3.5 g; rapeseed oil: 350 g; beer: 600g of the total weight of the mixture; dried chili pepper: 22.5 g; and (3) spicy pepper: 12.5 g; scallion: 60g of the total weight of the mixture; ginger: 35g of a soybean milk powder; garlic: 60g of the total weight of the mixture; and (3) sesame oil: 0.6 g.
The invention relates to a cooking method of xiaolong based on a medicinal food concept, which is realized by the following steps:
a) firstly, taking and grinding angelica dahurica, myrcia, tsaoko amomum fruits, cassia bark and thirteen spices according to an appointed proportion, and preparing into a traditional Chinese medicine material bag for later use;
b) secondly, removing shrimp threads and shrimp stomachs of the crayfishes, cleaning the crayfishes, frying the crayfishes to be red by heating rapeseed oil at high temperature, and controlling oil for later use;
c) thirdly, another pot is taken to heat a small amount of rapeseed oil, the Pixian bean paste, the spicy pepper, the dried chili, the scallion, the ginger and the garlic are added, the prepared traditional Chinese medicine material bag is added for flavor explosion, then the fried crayfish is added, the fried crayfish is evenly stirred, then the beer is added, a small amount of clear water is added to the crayfish, the salt, the rock sugar and the oyster sauce are further added for seasoning, and the crayfish is boiled for 10 minutes;
d) finally, adding lettuce slices, onion slices, green pepper slices and sesame oil, taking out and dishing.
Although the spicy crawfish implementation method is described in the example of the invention, due to the diversity of spicy tastes of customers, the proportion of the spicy pepper, the pepper and the rock candy of the specific materials is changed along with the tastes, but the related specific implementation method does not depart from the scope of the invention. 1. The crayfish formula based on the medicinal diet idea is characterized by comprising the following raw materials in parts by weight:
crayfish: 800-1200 parts;
pi county bean breaking sauce: 60-140 parts;
oyster sauce: 30-70 parts of a solvent;
rock sugar: 120-180 parts;
thirteen spices: 3-7 parts;
radix angelicae: 2-4 parts;
and (3) bay leaf: 2-4 parts;
and (4) tsaoko: 1-3 parts;
cassia bark: 2-4 parts;
rapeseed oil: 200-400 parts;
beer: 300-700 parts;
dried chili pepper: 15-25 parts;
and (3) spicy pepper: 5-15 parts of a solvent;
scallion: 30-70 parts of a solvent;
ginger: 20-40 parts of a solvent;
garlic: 30-70 parts of a solvent;
and (3) sesame oil: 0.3 to 0.7 portion.
2. The crayfish formula based on medicinal diet concept as claimed in claim 1, wherein the raw materials are by weight:
crayfish: 1000 g;
pi county bean breaking sauce: 100g of the total weight of the mixture;
oyster sauce: 50g of the total weight of the mixture;
rock sugar: 150g of the total weight of the mixture;
thirteen spices: 5g of the total weight of the mixture;
radix angelicae: 3g of the total weight of the mixture;
and (3) bay leaf: 3g of the total weight of the mixture;
and (4) tsaoko: 2g of the total weight of the mixture;
cassia bark: 3g of the total weight of the mixture;
rapeseed oil: 300g of the total weight of the mixture;
beer: 500 g;
dried chili pepper: 20g of the total weight of the mixture;
and (3) spicy pepper: 10g of a mixture;
scallion: 50g of the total weight of the mixture;
ginger: 30g of the total weight of the mixture;
garlic: 50g of the total weight of the mixture;
and (3) sesame oil: 0.5 g.
3. The crayfish formula based on medicinal diet concept as claimed in claim 1, wherein the raw materials are by weight:
crayfish: 900 g;
pi county bean breaking sauce: 80g of the total weight of the mixture;
oyster sauce: 40g of the total weight of the mixture;
rock sugar: 135g of the total weight of the mixture;
thirteen spices: 4g of the total weight of the mixture;
radix angelicae: 2.5 g;
and (3) bay leaf: 2.5 g;
and (4) tsaoko: 1.5 g;
cassia bark: 2.5 g;
rapeseed oil: 250g of the total weight of the mixture;
beer: 400 g;
dried chili pepper: 17.5 g;
and (3) spicy pepper: 7.5 g;
scallion: 40g of the total weight of the mixture;
ginger: 25g of the total weight of the mixture;
garlic: 40g of the total weight of the mixture;
and (3) sesame oil: 0.4 g.
4. The crawfish formula based on herbal cuisine as claimed in claim 1, wherein the formula comprises: the weight of each raw material is as follows:
crayfish: 1100 g;
pi county bean breaking sauce: 120g of a mixture;
oyster sauce: 60g of the total weight of the mixture;
rock sugar: 165g of a soybean milk powder;
thirteen spices: 6g of a mixture;
radix angelicae: 3.5 g;
and (3) bay leaf: 3.5 g;
and (4) tsaoko: 2.5 g;
cassia bark: 3.5 g;
rapeseed oil: 350 g;
beer: 600g of the total weight of the mixture;
dried chili pepper: 22.5 g;
and (3) spicy pepper: 12.5 g;
scallion: 60g of the total weight of the mixture;
ginger: 35g of a soybean milk powder;
garlic: 60g of the total weight of the mixture;
and (3) sesame oil: 0.6 g.
5. The crayfish formula based on a medicinal diet concept as claimed in claim 1, 2, 3 or 4, wherein: comprises salt, lettuce slices, onion slices, green pepper slices and sesame oil.
6. A cooking method of Xiaolong based on the medicinal food idea in claim 1 is realized by the following steps:
a) firstly, taking and grinding angelica dahurica, myrcia, tsaoko amomum fruits, cassia bark and thirteen spices according to an appointed proportion, and preparing into a traditional Chinese medicine material bag for later use;
b) secondly, removing shrimp threads and shrimp stomachs of the crayfishes, cleaning the crayfishes, frying the crayfishes to be red by heating rapeseed oil at high temperature, and controlling oil for later use;
c) thirdly, another pot is taken to heat a small amount of rapeseed oil, the Pixian bean paste, the spicy pepper, the dried chili, the scallion, the ginger and the garlic are added, the prepared traditional Chinese medicine material bag is added for flavor explosion, then the fried crayfish is added, the fried crayfish is evenly stirred, then the beer is added, a small amount of clear water is added to the crayfish, the salt, the rock sugar and the oyster sauce are further added for seasoning, and the crayfish is boiled for 10 minutes;
