The water chestnut has remarkable bacteriostatic function, and the texture and thermal stability of the water chestnut is also a remarkable characteristic of the water chestnut. The water chestnut can be processed into various products such as cans, water chestnut cakes, water chestnut beverages and the like, and meanwhile, the water chestnut peel residues generated in the processing process contain rich fibers and pigments and can be further processed and utilized.
Water chestnuts are cultivated all over the country. Distribution is also seen in korea, japan, vietnam, india. The water chestnuts are cultivated for only one crop in one year, and annual production cannot be realized; and the water chestnuts grow in the wet soil, are thin in peel and much in juice, and are easy to lose water, shrink, rot and deteriorate. After the water chestnut is dug out of the soil, the water chestnut needs to be cleaned, then the surface of the water chestnut is cut, and then the water chestnut is eaten.
