The invention discloses a method for cleaning a cooker based on an intelligent kitchen, wherein a cooking robot in a back kitchen executes cooking operation according to a menu ordered by a front-end customer, a cleaning database is established, the database records special cleaning requirements of food materials, cooking modes and seasonings of digital menus corresponding to dishes in the menu, the cooking robot performs pre-preparation work for cleaning the cooker according to the records while executing the cooking operation, a monitoring sensor is arranged on the cooker and records cooking process data of the cooker, after the cooking robot receives a signal that the cooker finishes cooking, the cooking robot executes cleaning of the cooker according to the cleaning mode corresponding to the current dish, and the cooking robot corrects the cleaning mode of the cooker according to the cooking process data. The invention realizes the efficient cleaning of the pot in the unmanned kitchen, so that the cooking robot can fry dishes for the next time as soon as possible, and the dish discharging efficiency is greatly improved.

Furthermore, different types of cleaning agents are correspondingly used in the cleaning process according to the ingredients of different food materials, and the cleaning agents comprise at least one of surfactants, alkyl glycoside, lauryl alcohol ether sulfate, cocoyl diethanol amine and lauryl alcohol ether phosphate.

Compared with the prior art, the invention realizes the efficient cleaning of the pot in the unmanned kitchen by adding cleaning cautions to different food materials, different cooking processes and seasonings, so that the cooking robot can fry the dish for the next time as soon as possible, and the dish discharging efficiency is greatly improved.

Further, the cooking mode at least comprises one of the following modes: cold mixing, stewing, steaming and stir-frying.
