The fishy smell is a peculiar smell generated by components such as trimethylamine oxide, delta-aminopentanoic acid, piperidine, aldehydes, ketones or fatty acids contained in fish, and is caused by the metabolism and putrefaction of fish protein and the culture environment. The odor belongs to a relatively complex mixed odor, and the bad odor is the odor shown by the mixture of various compounds. In the prior art, a fishy smell treatment technology is developed from an initial embedding, adsorption, acid-base salt and other physicochemical methods to a green natural fishy smell removing method of a natural product, a microbial fermentation biological method and the like, and due to the complex fishy smell components and different fishy smell compounds of different raw material fishes, the single fishy smell removing method has limitation in effect. In addition, the fishy smell of dead fish is relatively difficult to remove compared with the fishy smell of live fish.
