during production, raw and auxiliary materials of the selenium-rich chicken cake are prepared, wherein the raw and auxiliary materials comprise chicken breast, chicken back skin, corn starch, protein isolate, ice water, egg liquid and dietary fiber; the small materials are salt, sugar, selenium-enriched yeast, carrageenan, pepper powder, ginger powder, scallion oil, monosodium glutamate, nisin, chicken extract, VC sodium, phosphate and TG enzyme;
during processing, a first station is arranged on the batching platform; manually adding carrageenan and ice water into a chopper mixer on a first station, adjusting the chopper mixer to be stirred at a low speed for one minute through a batching console so that the carrageenan is dissolved in the ice water to be pasty, then adding the separated protein and the ice water into the chopper mixer to be chopped at a low speed for two minutes so that the viscosity of the ice water is uniform and the ice water is used as an auxiliary material of the selenium-enriched chicken cake;
when in processing, the chicken breast and the chicken back skin are firstly and continuously fed into a feeding port of a meat grinder in a blocking manner, the chicken back skin and the chicken breast are processed into stuffing by the meat grinder, the stuffing continuously falls into a cut mixer through an outlet of the meat grinder, the stuffing of the chicken back skin and the chicken breast is processed and falls into auxiliary materials in the cut mixer, and then the cut mixer is adjusted to be stirred at a high speed for two minutes by a batching console, so that the auxiliary materials and the stuffing are uniformly stirred into the processed stuffing.
After the stuffing processing is finished, the processed stuffing enters the rolling and kneading machine through a stuffing conveying pipeline between the chopping machine and the rolling and kneading machine through a conveying pump, and after the processed stuffing enters the rolling and kneading machine, the small stuffing: salt, sugar, selenium-enriched yeast, pepper powder, ginger powder, scallion oil, monosodium glutamate, nisin, chicken paste, VC sodium, phosphate and TG enzyme are sequentially added into the processed stuffing through a feeding port on a rolling and kneading machine, and then ice water, corn starch, egg liquid and dietary fiber are added into the processed stuffing; and adjusting the rolling and kneading machine through the batching console to roll and knead 25-35 the processed stuffing added with the small materials and the auxiliary materials to obtain the added stuffing.
After the processing of the fed stuffing is finished, the fed stuffing enters and fills two pressure refrigeration tanks through a rolling and kneading machine and a stuffing conveying pipeline between the two pressure refrigeration tanks in sequence, after the fed stuffing fills one pressure refrigeration tank, the electromagnetic valve of the feed port is automatically closed through a batching console, and after the electromagnetic valve of the feed port is closed, an air pump in the pressure refrigeration tank is automatically pressurized.
The low-temperature forming box is a second station, after a pressure refrigerating tank is filled with the filling materials, the discharge port electromagnetic valve is started and opened, all the split charging flow electromagnetic valves, the refrigerating machine and the air curtain on the operation window of the low-temperature forming box are started simultaneously through a blanking forming console manually on the second station, and the refrigerating machine drives the tumbling machine, the pressure refrigerating tank and the heat exchanger on one side of the low-temperature forming box to refrigerate; then starting a vacuum racking machine, manually controlling the die cavities of the meat cake dies to correspond to the racking ports, simultaneously discharging the fed stuffing materials from the racking ports and injecting the fed stuffing materials into the racking die cavities of the meat cake dies, and injecting the second row of die cavities of the meat cake dies after the first row of die cavities of the meat cake dies are filled with the fed stuffing materials into the racking die cavities of the meat cake dies; manually placing the meat cake mould filled with the filling material in a meat cake forming machine, and injecting the filling material of the next meat cake mould; after the meat cake die is fully filled in the meat cake forming machine, the pressing plate and the transverse beam are placed on the meat cake die, and the meat cake die is pressed through the hydraulic lifting base of the meat cake forming machine by manually lifting upwards, so that the charging stuffing in the die cavity of the meat cake die is formed.
After the filling materials in the die cavity of the meat cake die are shaped, lowering a hydraulic lifting base of the meat cake shaping machine, removing a transverse beam and a pressing plate, manually boxing the steam box, pulling out a slideway telescopic rod of a steam box telescopic slideway on a first layer of the steam box to correspond to the first layer of the meat cake die, pushing the first layer of the meat cake die through a handle, enabling the first layer of the meat cake die to enter the steam box through a sliding touch switch sealing door, and pushing the slideway telescopic rod to retract through the handle; then pulling out a slideway telescopic rod of a steamer telescopic slideway on a second layer of the steamer to correspond to a second layer of the meat cake mould, pushing the meat cake mould into the steamer through a handle and a touch switch sealing door, and pushing the slideway telescopic rod to retract through the handle; thus, each layer in the steam box is filled with the meat cake molds to finish the boxing of the steam box; and after the steam box is heated to 98 ℃ through a steam hot water pot at the bottom, the constant temperature is kept for 55 minutes to finish the cooking of the meat cake, and the steam hot water pot stops heating.
After the steam hot water pot stops heating, the handle pulls out the slide way telescopic rod layer by layer to take out the meat cake die to be placed on a packaging platform for cooling, the meat cake die is cooled to normal temperature and then poured out of the meat cake die in the die cavity, the meat cake is sliced through a cutter machine, the sliced meat cake is manually bagged, the meat cake is placed into a vacuum packaging machine on one side for vacuumizing and sealing after being bagged and then is placed into a turnover box for being sent to a fresh-keeping warehouse to complete the processing of the selenium-enriched chicken cake.
Has the advantages that: the automatic production line of the invention is divided into three groups of centralized combinations, the three groups are high, middle and low step type conveying raw materials, and the three groups are: the batching platform irritates with cold-stored batching, low temperature shaping case and steam ager really, packing platform and vacuum packaging machine operate through the control cabinet respectively, and its compact structure is orderly, and the production line only need five persons to operate simultaneously, has reduced a large amount of use manual works, can the profit of increase of production and product, and the space that occupies is little, and this product utilizes traditional technology to add selenium-enriched yeast, can effectually supply the crowd that selenium lacks. The product has compact and firm structure, elasticity, strong meat grain sense, good slicing performance, no dense pores, unique flavor, freshness, fragrance and good market prospect.

when in processing, the chicken breast and the chicken back skin are firstly and continuously fed into a feeding port of the meat grinder 2 in a blocking manner, the chicken back skin and the chicken breast are processed into stuffing through the meat grinder 2, the stuffing continuously falls into the cut mixer 3 through an outlet of the meat grinder 2, the stuffing of the chicken back skin and the chicken breast is processed and falls into the auxiliary material in the cut mixer 3, and then the cut mixer 3 is adjusted to be stirred at a high speed for two minutes through the batching control console 15, so that the auxiliary material and the stuffing are uniformly stirred to be processed stuffing.
Example 2
After the stuffing processing is finished, the processed stuffing enters the kneading machine 4 through the conveying pipeline between the chopping machine 3 and the kneading machine 4 by the conveying pump, and after the processed stuffing enters the kneading machine 4, the small stuffing: salt, sugar, selenium-enriched yeast, pepper powder, ginger powder, scallion oil, monosodium glutamate, nisin, chicken paste, VC sodium, phosphate and TG enzyme are sequentially added into the processed stuffing through a feeding port on the rolling and kneading machine 4, and then auxiliary materials of ice water, corn starch, egg liquid and dietary fiber are added; the mixing control console 15 is used for adjusting the tumbling machine 4 to carry out tumbling processing on the processed stuffing added with the small materials and the auxiliary materials for 25 to 35 minutes to obtain the added stuffing.
Example 3
After the processing of the fed stuffing is finished, the two pressure refrigerating tanks 5 are filled with the fed stuffing through the stuffing conveying pipeline between the tumbler 4 and the feed opening electromagnetic valve 19 in sequence, after one pressure refrigerating tank 5 is filled with the fed stuffing, the feed opening electromagnetic valve 19 is automatically closed through the batching console 15, and the air pump in the pressure refrigerating tank 5 is automatically pressurized after the feed opening electromagnetic valve 19 is closed.
Example 4
The low-temperature forming box 6 is a second station, after a pressure refrigerating tank 5 is filled with the filling materials, the discharge port electromagnetic valve 20 is simultaneously started and opened on the second station through the blanking forming console 16 by manpower, all the split charging flow electromagnetic valves 23, the refrigerating machine 9 and the air curtain on the operation window of the low-temperature forming box 6 are started, and the refrigerating machine 9 drives the rolling and kneading machine 4, the pressure refrigerating tank 5 and the heat exchanger on one side of the low-temperature forming box 6 to refrigerate; the vacuum racking machine 10 is started again, after the cavities of the meat cake molds 7 are manually controlled to correspond to the racking ports 24, the racking ports 24 simultaneously discharge the fed fillings and inject the fed fillings into the racking cavities of the meat cake molds 7, after one row of the cavities of the meat cake molds 7 are filled, the second row of the cavities of the meat cake molds 7 are injected, and after the fed fillings in the racking cavities of the meat cake molds 7 are filled; the meat cake mould 7 filled with the filling is manually placed in a meat cake forming machine 8, and then the filling of the next meat cake mould 7 is injected; after the meat cake die 7 is fully filled in the meat cake forming machine 8, the pressing plate and the transverse beam are placed on the meat cake die 7, the meat cake die 7 is pressed through the hydraulic lifting base of the meat cake forming machine 8 through manual upward lifting, and the charging stuffing in the die cavity of the meat cake die 7 is formed.
Example 5
After the filling materials in the die cavity of the meat cake die 7 are shaped, the hydraulic lifting base of the meat cake shaping machine 8 is lowered, the transverse beam and the pressing plate are removed, the steam box 11 is manually boxed, the slideway telescopic rod of the steam box telescopic slideway 25 which is pulled out of the first layer of the steam box 11 corresponds to the first layer of the meat cake die 7, the first layer of the meat cake die 7 is pushed by the handle, the first layer of the meat cake die 7 enters the steam box 11 through the sliding touch switch sealing door, and the slideway telescopic rod is pushed by the handle to be retracted; then pulling out a slideway telescopic rod of a steamer telescopic slideway 25 on the second layer of the steamer 11 corresponding to the second layer of the meat cake mould 7, pushing the meat cake mould 7 through a handle to enter the steamer 11 through a touch switch sealing door, and pushing the slideway telescopic rod to retract through the handle; filling each layer in the steam box 11 with the meat cake moulds 7 in this way completes the boxing of the steam box 11; and after the steam box 11 is heated to 98 ℃ through the steam hot water pot at the bottom, the constant temperature heating is carried out for 55 minutes to finish the cooking of the meat cake, and the steam hot water pot stops heating.
Example 6
After the steam hot water pot stops heating, the handle pulls out the slide telescopic rod layer by layer to take out the meat cake die 7, the meat cake die 7 is placed on the packaging platform 12 to be cooled, the meat cake die 7 is cooled to normal temperature and then poured out of the die cavity, the meat cake is sliced through the cutter 14, the sliced meat cake is manually bagged, the meat cake is placed into the vacuum packaging machine 13 on one side after being bagged to be vacuumized and sealed, and the meat cake is placed into the turnover box after being bagged and sealed to be sent to the fresh-keeping warehouse to complete the processing of the selenium-enriched chicken cake.

the steamer (11) is internally provided with at least three layers of cavities of the meat cake moulds (7), the bottom of the steamer (11) is provided with a steam hot water pot, two sides of the cavity in the middle of the steamer (11) are provided with a penetrating inlet and outlet, the inlet and outlet are provided with a touch switch sealing door, the bottom of the cavity of the steamer (11) is provided with a telescopic slideway (25) of the steamer, and two ends of the telescopic slideway (25) of the steamer are symmetrically provided with slideway telescopic rods; a slideway telescopic rod at one end of the steam box telescopic slideway (25) is arranged corresponding to the meat cake forming machine (8), and a slideway telescopic rod at the other end of the steam box telescopic slideway (25) is arranged corresponding to the packaging platform (12);
one end of the packaging platform (12) is provided with a vacuum packaging machine (13), the front part of the upper surface of the vacuum packaging machine (13) is provided with a vacuum packaging opening, the rear part of the upper surface of the vacuum packaging machine (13) is provided with a vacuum packaging control platform (18), and the middle part of the inner side of the packaging platform (12) is provided with a cutter (14); a cooking and packaging control table (17) is arranged on the outer side of one end of the packaging platform (12), a control line and a circuit are arranged between the cooking and packaging control table (17) and the steam box (11) and the vacuum packaging machine (13), and a power circuit is arranged between the steam box (11) and the vacuum packaging machine (13) and the power supply;
during production, raw and auxiliary materials of the selenium-rich chicken cake are prepared, wherein the raw and auxiliary materials comprise chicken breast, chicken back skin, corn starch, protein isolate, ice water, egg liquid and dietary fiber; the small materials are salt, sugar, selenium-enriched yeast, carrageenan, pepper powder, ginger powder, scallion oil, monosodium glutamate, nisin, chicken extract, VC sodium, phosphate and TG enzyme;
during processing, a first station is arranged on the batching platform (1); manually adding carrageenan and ice water into a chopper mixer (3) at a first station, adjusting the chopper mixer (3) through a batching console (15) to stir at a low speed for one minute to enable the carrageenan to be dissolved in ice water to be sticky, then adding the protein separation and ice water into the chopper mixer (3) to chop at a low speed for two minutes to enable the carrageenan and the ice water to have uniform viscosity and serve as auxiliary materials of the selenium-enriched chicken cake;
when in processing, chicken breast and chicken back skin are firstly and continuously fed into a feeding port of a meat grinder (2) in a blocking manner, the chicken back skin and the chicken breast are processed into stuffing through the meat grinder (2), the stuffing continuously falls into a chopper mixer (3) through an outlet of the meat grinder (2), the stuffing of the chicken back skin and the chicken breast is processed and falls into auxiliary materials in the chopper mixer (3), and then the chopper mixer (3) is adjusted to be stirred at a high speed for two minutes through a batching control console (15), so that the auxiliary materials and the stuffing are uniformly stirred to be processed stuffing.
