技术领域
本发明涉及食物的烹饪。更具体地,本发明涉及烹饪食物的电气器具和使用其烹饪食物的方法。
背景技术
对于烹饪食物存在许多方法。最常见的三种方式为:将食物放到烹饪锅例如煎锅或炒锅中,通过将烹饪锅放到炉灶加热器上而通过燃气或电加热;将食物放到烤箱中的托盘上,在烤箱中通过电或通过燃气火焰加热整个烤箱腔;将食物暴露于辐射热,所述辐射热能由燃气、木炭或电来提供。
在炉灶上烹饪由于从热源经烹饪锅底部到食物中的直接热传递而相对较快。在这种食物从底部加热的方法中,食物必须时不时地被搅拌或翻面以被彻底烹饪。
在烤箱中烹饪花费时间较长,因为没有从加热器到食物的直接热传递。但其优点是在大多情况下食物不需要被搅拌或翻面,因为从所有的方向提供热。
使用辐射热赋予了相对较快的热传递,但是仅仅适合于特定模式的食物制备,例如炙烤和烧烤。
在这里公开的是将在炉灶上烹饪的速度与不必将食物搅拌或翻面的附加优点相结合的器具。
发明内容
本发明可体现为一种台面烹饪器具或使用该台面烹饪器具来实施,所述台面烹饪器具具有限定布置成接收烹饪锅的烹饪腔的壳体,其中所述烹饪腔包括下加热元件和上加热元件,所述下加热元件布置成使得烹饪锅可被支承在其上以从其接收传导热,所述上加热元件配置在烹饪锅上方并且与烹饪锅间隔开以向烹饪锅中的食物提供辐射加热。

具体实施方式
根据本发明的或者在实施本发明中有用的示例性台面烹饪器具100在附图中描绘并且包括由上部分102和下部分104构成的壳体,上部分102和下部分104通过位于壳体后部的铰链106保持在一起。每一壳体部分包括电加热元件,在上部分中的上加热元件108和在下部分中的下加热元件110。
所述器具还包括进入开口114,通过所述进入开口含有食物的烹饪锅116可被插入到壳体中。所述进入开口具有门118,所述门在其底端附近铰接,如在图2、3、5和7中看到的,所述门在食物被插入到壳体中时处于基本水平位置,在烹饪过程期间在烹饪食物时处于关闭位置以最小化热损失,如在图1、4、6、9和11中看到的。

与烹饪锅的基部相邻的下加热元件提供了通过对流从烹饪锅的底部到与其接触的食物的快速热传递。热然后通过经过食物的传导行进以加热食物的内部。食物上方的热源通过辐射加热食物的上表面;一旦食物的上表面被加热,则热然后通过传导经食物传递以加热食物的内部。已经通过实验发现,为了优化采用不同类型的食材和遵循不同烹饪方法的烹饪,将会需要来自下加热元件和上加热元件的不同程度的加热能量。
参照图8、9、19和20,两个加热元件中的每一加热元件被插入到电连接器,即上连接器126和下连接器128,以使得它们能根据需要由使用者移除,例如用于更换护板或为了便于清洁护板。加热元件是以蜿蜒形状配置的加热元件棒130和支承横杆134的组件,支承横杆134由能承受加热棒的温度的金属制成。这些杆与护板接合以保证加热元件就位。为了进一步将上加热元件紧固到上护板,设置与横杆之一接合的弹簧锁136,如在图19中看到的。所述弹簧锁必须被手动地拉回,如图20中所示,以允许加热元件与上部连接器脱离接合并从器具移除。如所希望的,所述弹簧锁也可通过下加热元件而被结合。

金属护板的使用帮助保护了器具外壳体的大部分以免暴露于高温,因此壳体的大部分可以由具有约100℃耐受温度的热学性能的塑料材料模制形成。但是,上壳体部分的顶部暴露于烹饪腔中增加的热中并且在烹饪期间其所实现的温度超过100℃,要求壳体的所述部分由金属板150制成,优选地由铝、铁或不锈钢制成。为了允许在护板和金属板之间聚积的热的逸出,需要金属板为开口或开孔的。该开口使用多个细长向外伸出肋154,所述肋沿其侧边具有开放口。所述肋的向上伸出的端部是共面的并且形成用于支承其中将食物保持温热的餐盘的水平表面。当器具在图10和12中的打开位置使用时,所述肋还用作用于将所述上部部分从灶台面支起的腿。
门118可被手动地打开,但也可适于使用永磁体DC齿轮电动机156和齿轮系158电动地打开和关闭,如在图13和14中示出的。齿轮电动机可由使用者操作,或者作为控制回路的一部分被编程以例如随着时间的流逝或者当所选择的温度实现时关闭或打开。可以使用限位开关、簧片开关或在本领域内已知的其它装置形式的一个或多个传感器与可编程控制器通讯,使得所述门完全地打开和/或关闭。

Claims (18)

其中,所述壳体包括具有所述上加热元件的上部分、具有所述下加热元件的下部分以及将上部分和下部分连接的铰链;所述铰链使得上部分能够搁靠在下部分上方以限定烹饪腔,以使得所述上加热元件位于烹饪锅中食物顶部上方的预定距离处,并且所述铰链可替代地使得上部分能够相对于下部分转动,以使得上部分和下部分处于平行并排关系且两加热元件布置成使得烹饪锅能够被支承在任一加热元件上以从其接收传导热,或者两个烹饪锅能够被支承在两加热元件上以从其接收传导热;

12.根据权利要求11所述的台面烹饪器具,其特征在于,所述可编程控制器根据累计时间和/或测量温度使所述门打开。
13.根据权利要求11所述的台面烹饪器具,其特征在于,所述可编程控制器根据烹饪程序引起烹饪腔中的不同加热水平。
14.根据权利要求13所述的台面烹饪器具,其特征在于,所述可编程控制器根据累计时间和/或测量温度使所述门打开。
15.根据权利要求11所述的台面烹饪器具,其特征在于,所述门能机电地打开和关闭。
16.根据权利要求15所述的台面烹饪器具,其特征在于,所述门能由永磁体DC电动机和齿轮系打开和关闭。
17.根据权利要求16所述的台面烹饪器具,其特征在于,所述永磁体DC电动机由所述可编程控制器控制。
18.根据权利要求17所述的台面烹饪器具,其特征在于,还包括用于在所述门打开和/或关闭时与所述可编程控制器通讯的传感器。
