本发明公开了一种用于面筋生产的齿轮齿条啮合式面粉漂洗装置,包括支撑座,支撑座上端中部安装有漂洗槽,漂洗槽内部设有扰动叶,扰动叶下端中部安装有旋转轴,旋转轴下端中部安装有旋转电机,支撑座上端两侧安装有支撑架,支撑架顶端安装有顶板,顶板中部安装有驱动轴,驱动轴前端中部安装有驱动齿轮,驱动齿轮外侧啮合有齿轮框,齿轮框两端中部安装有导向杆,导向杆下端两侧安装有固定杆,固定杆下端安装有升降杆,升降杆下端安装有漂洗框,漂洗框底端安装有底板。本发明,实现着对漂洗框的左右摆动,进而实现着对面粉的非人工漂洗作用,既降低着工人的劳动强度,同时也增加着漂洗效率和漂洗质量。

[0002] 面粉是一种由小麦磨成的粉状物。按面粉中蛋白质含量的多少,可以分为高筋面 粉、中筋面粉、低筋面粉及无筋面粉。面粉(小麦粉)是中国北方大部分地区的主食,用面粉 制成的食物品种繁多,花样百出,风味迥异。
[0003] 面筋是植物性蛋白质,由麦醇溶蛋白和麦谷蛋白组成。将面粉加入适量水、少许食 盐,搅匀上劲,形成面团,稍后用清水反复搓洗,把面团中的淀粉和其它杂质全部洗掉,剩下 的即是面筋。油面筋用手团成球形,投入热油锅内炸至金黄色捞出即成。将洗好的面筋投入 沸水锅内煮80分钟至熟,即是“水面筋”。
[0004] 目前在面粉漂洗过程中,均采用人工漂洗,将小麦面粉和成面团之后,放在水里直 接洗,或者将面团放在筛网上放在水中来回滚动,洗至面团的体积不再缩小,剩下的面团便 是面筋,这种漂洗方式不仅增加着我们的工作强度,同时效率低,难以满足大批量的面粉漂 洗,实用性不强。
