Abstract
本发明提供了一种用于实现茶多酚可控释放的食品级W/O/W型乳浊液的制备方法,以质量份计取茶多酚水溶液1份、油相1‑3份、亲油性乳化剂0.1‑0.5份进行混合,经10‑20 MPa压力均质,得到W/O型初乳,然后取W/O型初乳1份,外水相1‑3份进行混合,经2‑6 MPa压力均质,其中,所述外水相是含有重量0.5‑5%亲水性乳化剂的水溶液,得到W/O/W型复乳。采用本发明所述的制备方法对茶多酚进行包埋,大大提高了茶多酚的稳定性,实现了茶多酚在水溶液中的可控释放,所用原料均为食品级,能进一步扩大茶多酚在食品领域的使用范围,并且得到的W/O/W型乳浊液具有非常好的稳定性,放置6个月不分层,能提高茶多酚的抗氧化能力,从而提高了茶多酚的生物利用度。

技术领域
本发明属于食品工业技术领域,特别涉及一种用于实现茶多酚可控释放的食品级W/O/W型乳浊液的制备方法。
背景技术
茶多酚(Tea Polyphenols)是茶叶中多酚类物质的总称,包括黄烷醇类、花色苷类、黄酮类、黄酮醇类和酚酸类等。主要为黄烷醇(儿茶素)类,儿茶素占60~80%。 类物质茶多酚又称茶鞣或茶单宁,是形成茶叶色香味的主要成份之一,也是茶叶中有保健功能的主要成份之一。研究表明,茶多酚等活性物质具解毒和抗辐射作用,能有效地阻止放射性物质侵入骨髓,并可使锶90和钴60迅速排出体外,被健康及医学界誉为“辐射克星”。
因为茶多酚具有较强的抗氧化活性,在潮湿、阳光、高温等条件下,极易发生氧化、聚合、缩合等反应,因此,目前在非保护状态下,茶多酚的生物利用率非常低。
发明内容
针对上述存在的问题,本发明的目的是提供一种用于实现茶多酚可控释放的食品级W/O/W型乳浊液的制备方法。采用本发明所述的方法,能够得到一种茶多酚的食品级W/O/W型乳浊液,所述乳浊液能够对茶多酚起到保护、缓释的作用,从而实现茶多酚在不同体系中的可控释放。
本发明的目的是通过以下技术方案实现的:
一种用于实现茶多酚可控释放的食品级W/O/W(水包油包水)型乳浊液的制备方法,包括以下步骤:
以质量份计取茶多酚水溶液1份、油相1-3份、亲油性乳化剂0.1-0.5份进行混合,经10-20 MPa压力均质,得到W/O型初乳,然后取W/O型初乳1份,外水相1-3份进行混合,经2-6 MPa压力均质,其中,所述外水相是含有重量0.5-5%亲水性乳化剂的水溶液,得到W/O/W型复乳。
进一步的,所述油相为豆油、大豆油、菜籽油、葵花籽油、花生油、玉米油、棕榈油中的一种或几种的混合物。
进一步的,所述亲油乳化剂为亲油性乳化剂为司盘80、单甘油脂肪酸酯、聚甘油脂肪酸酯、聚甘油蓖麻醇酸酯中的一种或几种的混合物。
进一步的,所述亲水性乳化剂是吐温80、聚甘油脂肪酸酯、蔗糖脂肪酸酯、酶解大豆磷脂、阿拉伯胶或辛烯基琥珀酸淀粉钠中的一种或几种的混合物。
以上述制备方法制备得到的茶多酚乳浊液的应用,所述茶多酚乳浊液在制备降血压、降血脂、抗氧化、抗衰老、抗炎、抗肿瘤药物或保健品、保健食品中的用途。
本发明相比现有技术的有益效果为:
1、本发明所述的用于实现茶多酚可控释放的食品级W/O/W(水包油包水)型乳浊液的制备方法,在不改变茶多酚化学结构及生物活性的情况之下,采用物理包埋法进行制备,有效避免了茶多酚在潮湿、阳光、高温等条件下,极易发生氧化、聚合、缩合等反应的问题,实现了茶多酚在水溶液中的可控释放,大大提高了茶多酚的生物利用率;
2、本发明所述的用于实现茶多酚可控释放的食品级W/O/W(水包油包水)型乳浊液的制备方法,所使用的原料均为食品级,符合食品安全相关法律法规要求,无健康安全隐患,可放心食用,能进一步扩大茶多酚在食品领域的使用范围,;
3、本发明所述的用于实现茶多酚可控释放的食品级W/O/W(水包油包水)型乳浊液的制备方法,得到的W/O/W型乳浊液具有非常好的稳定性,放置6个月不分层,能提高茶多酚的抗氧化能力,从而提高了茶多酚的生物利用度。

本实施例是实施例1基础上的优选方案,所用原料和设备均与实施例1相同,本实施例所述用于实现茶多酚可控释放的食品级W/O/W型乳浊液的制备方法包括以下步骤:

上表所述结果表明,实施例2、实施例3所述方法制备得到的W/O/W型复乳,均具有较高的离心稳定性。
尽管本发明通过实施例进行了详细的描述,但这种描述仅仅是为了说明的目的并且不应当解释为是对随附的权利要求书的本发明的精神和范围的限制。另外,上述实施例仅为例举的目的,其可具有各种变形,本领域技术人员能够理解这些变形也属于本发明保护的范围。
Claims (6)
1.一种用于实现茶多酚可控释放的食品级W/O/W(水包油包水)型乳浊液的制备方法,其特征在于,所述制备方法包括以下步骤:
以质量份计取茶多酚水溶液1份、油相1-3份、亲油性乳化剂0.1-0.5份进行混合,经10-20 MPa压力均质,得到W/O型初乳,然后取W/O型初乳1份,外水相1-3份进行混合,经2-6 MPa压力均质,其中,所述外水相是含有重量0.5-5%亲水性乳化剂的水溶液,得到W/O/W型复乳。
2.根据权利要求1所述的制备方法,其特征在于,所述油相为豆油、大豆油、菜籽油、葵花籽油、花生油、玉米油、棕榈油中的一种或几种的混合物。
3.根据权利要求1所述的制备方法,其特征在于,所述亲油乳化剂为亲油性乳化剂为司盘80、单甘油脂肪酸酯、聚甘油脂肪酸酯、聚甘油蓖麻醇酸酯中的一种或几种的混合物。
4.根据权利要求1所述的制备方法,其特征在于,所述亲水性乳化剂是吐温80、聚甘油脂肪酸酯、蔗糖脂肪酸酯、酶解大豆磷脂、阿拉伯胶或辛烯基琥珀酸淀粉钠中的一种或几种的混合物。
5.一种茶多酚乳浊液,其特征在于,所述茶多酚乳浊液由权利要求1-4任一制备方法制备得到。
6.一种如权利要求5所述的茶多酚乳浊液的应用,其特征在于,所述茶多酚乳浊液在制备降血压、降血脂、抗氧化、抗衰老、抗炎、抗肿瘤药物或保健品、保健食品中的用途。
