雷公菌,学名,普通念珠藻,又称地皮菜、地耳、地衣、地木耳、地皮菌、地软儿、地瓜皮等。雷公菌富含蛋白质、多种维生素和磷、锌、钙等矿物质,以色列魏茨曼研究的科学家研究发现,雷公菌所含的一种成分可以抑制人大脑中的乙酰胆碱酯酶的活性,从而能对老年痴呆症产生疗效。另一方面,雷公菌与嗜酸乳杆菌可以形成共生关系,地皮草可以促进乳酸菌的生长,从而可将雷公菌用作酸奶乳制品的配料,制成雷公菌酸奶乳制品。

本发明的目的在于,针对现有技术,提供一种含有雷公菌的乳制品。
为实现上述目的,本发明采取以下技术方案:一种含有雷公菌的乳制品由质量份的以下原料组成:鲜牛乳200份、雷公菌20~25份、芝麻1~3份、花生2~5份、核桃3~5份、红糖4~8份、红枣1~5份、发酵剂10~15份、从银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓中提取而成的中草药混合提取液5~10份。
其中,所述的发酵剂由嗜酸乳杆菌、嗜热链球菌、保加利亚杆菌组成。
其中,所述的中草药混合提取液中银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓的质量之比为7:5:3:2:4:3:6:1:5:2。
其中,其制备方法为:
(1)雷公菌的预处理:将雷公菌洗净,在40℃下烘干后,再置于研磨机中捣碎,加入1~3倍质量份的水,置于超声波细胞破碎机中,在超声波功率为250~300W的条件下,超声1~3min得到超声波粉碎的雷公菌;
(2)芝麻、花生、核桃、红枣的预处理:将红枣去核,将花生浸泡2~3h,与核桃、芝麻置于打浆机中打浆得到混合浆液备用;
(3)中草药混合提取液的制备:将银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓进行微粉碎,过300目筛,加入3~5倍质量份的水,置于超声波功率为250~300W的条件下,超声5~7min,过滤取得中草药混合提取液;
(4)发酵:将鲜牛乳与处理过的雷公菌、混合浆液、中草药混合提取液混合,加入红糖,搅拌均匀,置于均质机中均质,再进行巴氏灭菌,冷却至室温后加入发酵剂,在30~40℃下发酵4~6h,再置于0~4℃下冷藏12h得到酸奶乳制品。

1、本发明在制备方法上,将雷公菌进行超声波破碎,避免高温高热对营养物质的破坏,能较好的保持雷公菌的营养。
2、本发明的雷公菌酸奶乳制品还添加了中草药组分以及芝麻、花生、核桃、红枣等原料,与雷公菌搭配,能补虚扶正、健脾益胃、补气益髓、安神益智、豁痰开窍,具有预防老年痴呆的保健效果。
3、本发明的雷公菌可以促进乳酸菌的生长,有利于酸奶乳制品的制作,提高乳制品的营养价值。
具体实施方式
下面结合具体实施例,对本发明进一步的说明。
实施例1
一种含有雷公菌的乳制品由质量份的以下原料组成:鲜牛乳200份、雷公菌25份、芝麻3份、花生5份、核桃5份、红糖8份、红枣5份、发酵剂15份、由质量之比为7:5:3:2:4:3:6:1:5:2的银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓提取而成的中草药混合提取液10份。
其制备方法为:
(1)雷公菌的预处理:将雷公菌洗净,在40℃下烘干后,再置于研磨机中捣碎,加入3倍质量份的水,置于超声波细胞破碎机中,在超声波功率为300W的条件下,超声3min得到超声波粉碎的雷公菌;
(2)芝麻、花生、核桃、红枣的预处理:将红枣去核,将花生浸泡3h,与核桃、芝麻置于打浆机中打浆得到混合浆液备用;
(3)中草药混合提取液的制备:将银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓进行微粉碎,过300目筛,加入5倍质量份的水,置于超声功率为300W的条件下,超声7min,过滤取得中草药混合提取液;
(4)发酵:将鲜牛乳与处理过的雷公菌、混合浆液、中草药混合提取液混合,加入红糖,搅拌均匀,置于均质机中均质,再进行巴氏灭菌,冷却至室温后加入发酵剂,在40℃下发酵6h,在置于4℃下冷藏12h得到酸奶乳制品。
实施例2
一种含有雷公菌的乳制品由质量份的以下原料组成:鲜牛乳200份、雷公菌20份、芝麻1份、花生2份、核桃3份、红糖4份、红枣1份、发酵剂10份、由质量之比为7:5:3:2:4:3:6:1:5:2的银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓提取而成的中草药混合提取液5份。
其制备方法为:
(1)雷公菌的预处理:将雷公菌洗净,在40℃下烘干后,再置于研磨机中捣碎,加入1倍质量份的水,置于超声波细胞破碎机中,在超声波功率为250W的条件下,超声1min得到超声波粉碎的雷公菌;

(3)中草药混合提取液的制备:将银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓进行微粉碎,过300目筛,加入3倍质量份的水,置于超声功率为250W的条件下,超声5min,过滤取得中草药混合提取液;
(4)发酵:将鲜牛乳与处理过的雷公菌、混合浆液、中草药混合提取液混合,加入红糖,搅拌均匀,置于均质机中均质,再进行巴氏灭菌,冷却至室温后加入发酵剂,在30℃下发酵4h,在置于0℃下冷藏12h得到酸奶乳制品。
实施例3
一种含有雷公菌的乳制品由质量份的以下原料组成:鲜牛乳200份、雷公菌22份、芝麻2份、花生4份、核桃4份、红糖6份、红枣3份、发酵剂12份、由质量之比为7:5:3:2:4:3:6:1:5:2的银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓提取而成的中草药混合提取液8份。
其制备方法为:
(1)雷公菌的预处理:将雷公菌洗净,在40℃下烘干后,再置于研磨机中捣碎,加入2倍质量份的水,置于超声波细胞破碎机中,在超声波功率为300W的条件下,超声2min得到超声波粉碎的雷公菌;
(2)芝麻、花生、核桃、红枣的预处理:将红枣去核,将花生浸泡2h,与核桃、芝麻置于打浆机中打浆得到混合浆液备用;
(3)中草药混合提取液的制备:将银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓进行微粉碎,过300目筛,加入4倍质量份的水,置于超声功率为250W的条件下,超声6min,过滤取得中草药混合提取液;
(4)发酵:将鲜牛乳与处理过的雷公菌、混合浆液、中草药混合提取液混合,加入红糖,搅拌均匀,置于均质机中均质,再进行巴氏灭菌,冷却至室温后加入发酵剂,在35℃下发酵5h,在置于3℃下冷藏12h得到酸奶乳制品。
Claims (4)
1.一种含有雷公菌的乳制品,其特征在于,其由质量份的以下原料组成:鲜牛乳200份、雷公菌20~25份、芝麻1~3份、花生2~5份、核桃3~5份、红糖4~8份、红枣1~5份、发酵剂10~15份、从银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓中提取而成的中草药混合提取液5~10份。
2.根据权利要求1所述的一种含有雷公菌的乳制品,其特征在于,所述的发酵剂由嗜酸乳杆菌、嗜热链球菌、保加利亚杆菌组成。
3.根据权利要求1所述的一种含有雷公菌的乳制品,其特征在于,中草药混合提取液中银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓的质量之比为7:5:3:2:4:3:6:1:5:2。
4.根据权利要求1-3任一所述的一种含有雷公菌的乳制品,其特征在于,其制备方法为:
(1)雷公菌的预处理:将雷公菌洗净,在40℃下烘干后,再置于研磨机中捣碎,加入1~3倍质量份的水,置于超声波细胞破碎机中,在超声波功率为250~300W的条件下,超声1~3min得到超声波粉碎的雷公菌;
(2)芝麻、花生、核桃、红枣的预处理:将红枣去核,将花生浸泡2~3h,与核桃、芝麻置于打浆机中打浆得到混合浆液备用;
(3)中草药混合提取液的制备:将银杏叶、远志、当归、山茱萸、石菖蒲、丹参、麦冬、熟地、川芎、茯苓进行微粉碎,过300目筛,加入3~5倍质量份的水,置于超声波功率为250~300W的条件下,超声5~7min,过滤取得中草药混合提取液;
(4)发酵:将鲜牛乳与处理过的雷公菌、混合浆液、中草药混合提取液混合,加入红糖,搅拌均匀,置于均质机中均质,再进行巴氏灭菌,冷却至室温后加入发酵剂,在30~40℃下发酵4~6h,再置于0~4℃下冷藏12h得到酸奶乳制品。
