饮料的减毒保鲜方法,适用于啤酒等各种饮料的 减毒保鲜处理。本发明采用直接向饮料加入有益于 人体的抗氧剂,不但能有效抑制饮料的氧化变质和亚 硝胺这一强致癌物的合成,还能在饮料进入机体后阻 断体内亚硝酸盐的生成。与国外正在研制的吸氧瓶 盖保鲜法相比较,本发明技术简易而费用较低。

饮料的减毒保鲜方法,适用于啤酒、汽水等各种饮料,特别是瓶、罐装饮料的减毒保鲜处理。
1989年10月19日的《人民日报》,报道了美国研究致癌问题的权威、加里福尼亚大学生化系主任布鲁斯·阿密斯等人的实验:啤酒或葡萄酒的致癌毒物是严重污染清水的1000倍!这是因为饮料、特别是酒类在长期的发酵、酿制和储运过程中,不断生成氧化物尤其是亚硝胺。后者是强制癌物。正因为此,加里福尼亚州阿拉米达市的某公司已与生产啤酒瓶盖的企业合作,准备投资250万美元,联合研制一种内带类似血红蛋白的“吸氧瓶盖”,以防止啤酒氧化失鲜。
本发明的目的是要提供一种直接向饮料加入一种或多种强抗氧化剂以阻止内容物氧化和亚硝胺合成的方法。
本发明的目的是这样实现的:在饮料中加入维生素C或C、E、A等混合物,利用它们的抗氧化特性阻止氧化和亚硝酸盐的合成。
本发明采用直接向饮料加入有益于人体的抗氧剂,不但能有效抑制饮料的氧化变质和减少亚硝胺的合成,还能在饮料进入机体后阻断体内亚硝酸盐的生成。与“吸氧瓶盖”相较,本发明技术简易而费用低廉。
本发明的实施例如下:
将维生素C、E、A依17∶2∶1混合,加水、并加入蔗糖酯等既亲水又亲油的“偶联剂”,经震荡乳化溶融,再根据饮料生产周期和方法的不同,分别采取逐次或一次性加入。一般啤酒等酒类在不明显影响酸碱度的前提下,宜尽早采取逐次递增、分批添加的办法,以抑制每一过程中有效物的氧化和亚硝胺的合成。汽水类则可于灌装前作一次性加入。维生素的总加入量一般不超过15PPM。

Claims (1)

1、饮料的减毒保鲜方法,是直接向饮料加入抗氧剂以防止饮料氧化变质、阻止亚硝胺合成的方法,其特征在于:使用维生素C、E、A等有益人体的抗氧剂,通过蔗糖酯等中介体使水溶性物和脂溶性物乳化共融。根据饮料生产周期和方法的不同,分别采取逐次或一次性加入。
