本发明涉及一种屠宰的处理方法,具体涉及一种羊屠宰前减少应激的处理方法;该处理方法是通过以下步骤实现的:首先将羊屠宰前6‑8h,喂食特制饲料,供给充足的饮水;食用后断食,屠宰前3h断水,屠宰前,将舍内首先提高氧气浓度,保持2‑3min后,再次通入惰性气体,降低氧气浓度后,保持3‑4min,然后进行屠宰即可。通过本发明的提供的处理方法,能够减少屠宰前羊的应激反应,屠宰后羊肉品质好,口感细嫩,鲜美多汁。

背景技术
应激是动物在外界和内在环境中,一些具有损伤性的生物、物力、化学以及特种心理上的强烈刺激作用于机体后,随即产生的一系列非特异性全身性反应或曰特异性反应的总和。
屠宰前的应激会导致PSE肉的出现,屠宰后肉的品质下降,肌肉苍白,质地松软没有弹性,并且肌肉表面渗出肉汁。近年来,随着人们生活水平的提高,对羊肉的需求越来越大,提高我国羊肉的产量和品质具有深远的意义。
发明内容
针对现有技术存在的问题,本发明提供了一种羊屠宰前减少应激的处理方法。
本发明为了实现上述目的所采用的技术方案为:
本发明提供了一种羊屠宰前减少应激的处理方法,包括以下步骤:
(1)将羊屠宰前6-8h,喂食特制饲料,供给充足的饮水;
(2)食用后断食,屠宰前3h断水,屠宰前,将舍内首先提高氧气浓度,保持2-3min后,再次通入惰性气体,降低氧气浓度后,保持3-4min,然后进行屠宰即可。
进一步的,步骤(1)中,所述特制饲料采用以下方法制备而成:将新鲜的槟榔果打碎后,向槟榔果碎渣表面喷洒一层糖浆,然后加入青草粉,搅拌均匀后即可。
上述青草粉和槟榔果的质量比为3:1。
进一步的,步骤(2)中,所述提高氧气浓度至25-26%。
进一步的,所述糖浆中还含有D-甘露糖和柠檬酸。
上述糖浆、D-甘露糖和柠檬酸的质量比为:10:1:0.2。
进一步的,步骤(2)中,所述降低氧气浓度为向室内通入氮气,降至氧气浓度为5-8%。
本发明的有益效果为:通过本发明的提供的处理方法,能够减少屠宰前羊的应激反应,屠宰后羊肉品质好,口感细嫩,鲜美多汁。

实施例1
一种羊屠宰前减少应激的处理方法,包括以下步骤:
(1)将羊屠宰前6h,喂食特制饲料,供给充足的饮水;
所述特制饲料采用以下方法制备而成:将新鲜的槟榔果打碎后,向槟榔果碎渣表面喷洒一层糖浆(糖浆、D-甘露糖和柠檬酸以质量比为:10:1:0.2组成),喷洒至槟榔果表面均匀包裹一层,然后加入3倍的青草粉,搅拌均匀后即可;
(2)食用后断食,屠宰前3h断水,屠宰前,将舍内首先提高氧气浓度至25-26%,保持2min后,再次通入氮气,降低氧气浓度至5-8%后,保持4min,然后进行屠宰即可。

(1)将羊屠宰前8h,喂食特制饲料,供给充足的饮水;

剪切力值:剪切时切刀与肉样垂直。用嫩度仪进行检测;N/cm3
PH值:将电极插入待检测部位,深度不小于1cm,读取PH值;
具体结果见表1。

(二)感官评价
将4℃排酸相同天数后的羊的股二头肌部位经冷冻解冻后剔除脂肪和结缔组织,选取精瘦肉切成1cm3的肉丁待用,煮熟后取出,沥干水分。感官评价小组为感官特性敏感的,经常吃羊肉的10名员工组成;感官评价具体参考标准如下:
嫩度:非常硬(0分)~非常软(5分);
多汁性:非常干(0分)~非常多汁(5分);
香气:非常弱(0分)~非常强(5分);
颜色:苍白(0分)~紫红或鲜红(5分);
具体评价结果见表2。

1.一种羊屠宰前减少应激的处理方法,其特征在于,包括以下步骤:
(1)将羊屠宰前6-8h,喂食特制饲料,供给充足的饮水;
(2)食用特制饲料后断食,屠宰前3h断水,屠宰前,将舍内首先提高氧气浓度,保持2-3min后,通入惰性气体,降低氧气浓度后,保持3-4min,然后进行屠宰即可;
所述特制饲料采用以下方法制备而成:将新鲜的槟榔果打碎后,向槟榔果碎渣表面喷洒一层糖浆,然后加入青草粉,搅拌均匀后即可。
