During operation, each fermentation parameter such as fermentation temperature, humidity and time is set through the control cabinet 22, and the control cabinet 22 controls the heating value of the electric heating wire 3 in each section of heating zone according to the temperature in each section of heating zone detected by the temperature sensor, so that the temperature in the cylinder 1 is automatically adjusted to be uniform; the control cabinet 22 controls the opening and closing of the electromagnetic valve 6 on the exhaust port 4 according to the humidity in the cylinder 1 detected by the humidity sensor, and realizes the accurate control of the humidity by discharging the steam outwards; the opening and closing of the electromagnetic valve 6 on the liquid outlet 5 can be controlled according to the time set by the control cabinet 22, and the work of the driving mechanism can be controlled according to the program set in the control cabinet 22, so that the automatic control of fermentation parameters is realized, the personnel is not required to watch, the labor intensity of workers is reduced, and the labor cost is saved.

By adopting the rotating frame 8 structure, the fermented product is distributed more dispersedly, heated more uniformly and fully, the consistency of the product quality can be optimally ensured, the fermentation time is shortened, but the defects are that the space utilization rate is lower and the whole volume of the equipment is larger.
According to the horizontal rotary food fermentation equipment, in the fermentation process, the product rotates in the fermentation cylinder, is heated more uniformly, the quality of the fermented product is better, and the consistency of the quality of the fermented product is ensured; meanwhile, the fermentation time of the product is greatly shortened, and the production efficiency of the product is improved; the full-automatic unattended operation can be realized, the automation degree is high, and the method is particularly suitable for the fermentation production of black garlic, and is also suitable for other products which are fermented by adopting similar fermentation processes.
