本发明公开了一种有抗癌功效且口感又好的茯苓黑豆保健食品,由按重量份配比计的茯苓粉10‑15,黑豆80‑85,根霉孢子粉0.1‑0.3,罗汉果香甜晶2‑3,淮山粉5‑10经发酵制成。本产品不仅营养丰富,易消化吸收,口感香甜,而且还含有茯苓、罗汉果和淮山的活性成份,具有增强人体免疫力和抗癌的功效。

本发明涉及食品,具体是一种有抗癌功效且口感又好的茯苓黑豆保健食品。
背景技术
黑豆的传统食用方法主要是作畜禽的蛋白质饲料,口感差,卖相也不好,其实它是很好的食材,有人将其制成发酵食品,但只具营养价值,缺乏特殊保健功能,另外,口感也不好。
发明内容
针对现有技术的不足,本发明提供一种有抗癌功效且口感又好的茯苓黑豆保健食品。
实现本发明目的的技术方案是:
一种有抗癌功效且口感又好的茯苓黑豆保健食品,由下述按重量份配比计的原料经发酵制成:
茯苓粉10-15
黑豆80-85
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3
淮山粉5-10。
所述茯苓粉,是无数菌丝及营养物质紧密聚集而成的菌核打成的粉,菌核是茯苓的存储器官和休眠器官,也是茯苓的药用部分,茯苓具有镇静、抗癌效果。
所述罗汉果香甜晶,保留了罗汉果的药用价值,口感清甜,有一种特殊的香气,甜度约为蔗糖的8-10倍。
所述根霉孢子粉为一种发酵菌,为现有技术。
本保健食品的制作方法,包括如下步骤:
(1)按配方用料重量份配比称料;
(2)将黑豆用清水泡胀;
(3)将泡胀的黑豆煮熟,冷却,与茯苓粉、根霉孢子粉、罗汉果香甜晶和淮山粉混合拌匀;
(4)将拌匀的混合物装入食品袋中,封口,并在袋面上打孔,然后
(5)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
所得食材保鲜期4-5天,应趁鲜食用,或烘干加工成休闲食品。
本产品不仅营养丰富,易消化吸收,口感香甜,而且还含有茯苓、罗汉果和淮山的活性成份,具有增强人体免疫力和抗癌的功效。
具体实施方式
一种有抗癌功效且口感又好的茯苓黑豆保健食品,其配方原料及用料重量份配比为:
茯苓粉10,黑豆85,根霉孢子粉0.2,罗汉果香甜晶2,淮山粉5。
其制备方法是:
1、将黑豆用清水浸泡7小时,使其泡胀;
2、将泡胀的黑豆煮熟,冷却;
3、将冷却后的黑豆与茯苓粉、根霉孢子粉、罗汉果香甜晶和淮山粉混合拌匀;然后
4、将拌匀的混合物装入扁平的食品袋中,封口,在食品袋面上打15个通气孔;
5、置于28℃的环境中,发酵30小时即成。

1.一种有抗癌功效且口感又好的茯苓黑豆保健食品,其特征是:由下述按重量份配比计的原料经发酵制成:
茯苓粉10-15
黑豆80-85
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3
淮山粉5-10。
2.根据权利要求1所述的保健食品,其特征是:采用包括如下步骤的方法制成:
(1)按配方用料重量份配比称料;
(2)将黑豆用清水泡胀;
(3)将泡胀的黑豆煮熟,冷却,与茯苓粉、根霉孢子粉、罗汉果香甜晶和淮山粉混合拌匀;
(4)将拌匀的混合物装入食品袋中,封口,并在袋面上打孔,然后
(5)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
