本发明公开了一种切片机用切刀装置,包括具有上下和左右复合运动的刀架,刀架由大刀架和小刀架组成,大刀架和小刀架通过导向柱形成滑动连接,大刀架和小刀架之间设有高频振动源和复位弹簧,高频振动源和复位弹簧用于使小刀架形成相对于大刀架的上下高频振动。优选,高频振动源包括变频电机,变频电机的输出轴上固定连接有凸轮,该凸轮用于推动小刀架远离大刀架。大刀架通过水平导轨副设在刀架座上,大刀架通过水平设置的第一链传动结构的第一链条直接驱动水平移动;刀架座通过竖向设置第二链传动结构的第二链条直接驱动上下移动。本发明的有益效果是,传动结构简单、切片效率高,且可切出宽度大于厚度的食材薄片。

技术领域
本发明专利涉及到一种厨房设施,特别是一种切片机用切刀装置。
背景技术
切片机是一种将食材原料切成片状或丝状厨房切菜设备,其与传统的人工手工切菜比较具有切菜速度快、效率高和劳动强度低的优点。因此,切片机在现代厨房或食材来料加工领域得到越来越广泛的应用。现有切片机大多采用刀片旋转的方式进行切削,其切削速度快、效率高,特别是在食材来料加工领域应用广泛。但这种切片切削时,刀具对食材的挤压力大,容易破坏食材的分子结构,带来口感差和营养成分流失的不足。为此,人们发明了剪切式切片机,以克服现有技术的不足。但现有剪切式切片机的切刀装置传动结构复杂,食材切片依靠切刀下和横向移动的复合运行裁切,切片速度慢、效率低。为此,需进行进一步改进。
发明内容
本发明目的是针对现有技术的不足,提供一种切片机,该切片机的动刀片用刀架由相互滑动连接的大刀架和小刀架组成,且在大刀架和小刀架之间设有高频振动源,以使刀片在具有上下左右符合运动轨迹的同时,还沿上下方向具有高频振动运动,从而利用高频振动能形成冲击剪切,从而有效提高切片速度,调高切片效率。
为实现上述目的,本发明采用如下技术方案。
一种切片机用切刀装置,包括具有上下和左右复合运动的刀架,所述刀架由大刀架和小刀架组成,大刀架和小刀架通过导向柱形成滑动连接,大刀架和小刀架之间设有高频振动源和复位弹簧,高频振动源和复位弹簧用于使小刀架形成相对于大刀架的上下高频振动。
采用前述技术方案的本发明,小刀架用于安设切刀,小刀架通过高频振动源和复位弹簧形成相对于大刀架上下高频振动。在切割过程中,小刀架上的切刀随大刀架一起既具有上下和左右方向的复合切削运动,同时,其还具有相对于大刀架的高频振动,该振动运动对食材形成冲击切削。其切削速度和效率显著提高。
优选的,所述高频振动源包括变频电机,变频电机的输出轴上固定连接有凸轮,该凸轮用于推动所述小刀架远离大刀架。以形成振动动能大的机械振动,确保切片效率高。同时,可通过调控变频电机的转速获得理想的高频振动频率,如将市场直接采购的调频电机转速调整在每分钟6000~9000转时,可获得100~150HZ的振动频率。
优选的,所述大刀架通过水平导轨副设在刀架座上,刀架座通过竖直导轨副设在刀座支架上。以确保小刀架具有可靠的水平运动和竖直运动形成的复合运行轨迹。
进一步优选的,所述大刀架通过水平设置的第一链传动结构的第一链条直接驱动水平移动。简化水平驱动传动结构,降低制造和使用成本,减少故障率。
更进一步优选的,所述第一链条的一设定链节上设有沿链节宽度方向伸出的第一拨销,该第一拨销配合在大刀架上设置的条形槽中,以通过连接的移动带动大刀架水平往复移动。进一步确保刀架水平运动驱动结构简单和运行可靠性。
进一步优选的,所述刀架座通过竖向设置第二链传动结构的第二链条直接驱动上下移动。简化竖向驱动传动结构,降低制造和使用成本,减少故障率。
更进一步优选的,所述第二链条的一设定链节上设有沿链节宽度方向伸出的第二拨销,该第二拨销配合在刀架座上设置的条形槽中,以通过连接的移动带动刀架座上下往复移动。进一步确保刀架竖向运动驱动结构简单和运行可靠性。
优选的,所述刀座支架通过下端形成可转位结构,可转位结构的回转轴线平行于刀座支架宽度方向。以使切刀的竖向运动形成为水平倾斜的斜向运动,以将食材切成宽度大于食材厚度的薄片。
进一步优选的,所述可转位结构包括与所述刀座支架固定连接的支撑构件,该支撑构件一端固定连接有转位驱动用从动轮。以便于通过从动轮使刀座支架转动设定角度,便于转位操作,如人工手动转动从动轮,或通过传动机构转动从动轮等。
更进一步优选的,所述从动轮为蜗轮,该蜗轮连接有蜗杆。以通过蜗杆驱动转动,利用蜗轮蜗杆副的自锁特性确保刀座支架转动到任意位置时均处于自锁状态,而省去锁紧机构。
本发明的有益效果是,传动结构简单、切片效率高,且可切出宽度大于厚度的食材薄片。

具体实施方式
下面结合附图对本发明作进一步的说明,但并不因此将本发明限制在所述的实施例范围之中。
参见图1、图2、图3,一种切片机用切刀装置,包括具有上下和左右复合运动的刀架,刀架由大刀架1和小刀架2组成,小刀架2上设有切刀20,大刀架1和小刀架2通过导向柱3形成滑动连接,大刀架1和小刀架2之间设有高频振动源和复位弹簧4,高频振动源和复位弹簧4用于使小刀架2形成相对于大刀架1的上下高频振动,高频振动源包括变频电机5,变频电机5的输出轴上固定连接有凸轮6,该凸轮6通过小刀架2上设置的滚轮16与小刀架2连接,凸轮6用于推动小刀架2远离大刀架1,复位弹簧4用于使滚轮16与凸轮6保持抵接。
其中,大刀架1通过水平导轨副设在刀架座7上,刀架座7通过竖直导轨副设在刀座支架8上,水平导轨副和竖直导轨副均由矩形导轨副和燕尾形导轨副形成组合导轨副结构。大刀架1通过水平设置的第一链传动结构的第一链条9直接驱动水平移动,第一链条9由第一驱动电机17通过第一驱动链轮驱动,并通过第一换向链轮换向,第一链条9的一设定链节上设有沿链节宽度方向伸出的第一拨销10,该第一拨销10配合在大刀架1上呈竖向设置的条形槽中,以通过连接的移动带动大刀架1水平往复移动。
刀架座7通过竖向设置第二链传动结构的第二链条11直接驱动上下移动,第二链条11由第二驱动电机18通过第二驱动链轮驱动,并通过第二换向链轮换向,第二链条11的一设定链节上设有沿链节宽度方向伸出的第二拨销12,该第二拨销12配合在刀架座7上呈水平设置的条形槽中,以通过连接的移动带动刀架座7上下往复移动。
刀座支架8通过下端形成可转位结构,可转位结构的回转轴线平行于刀座支架8宽度方向;可转位结构包括与刀座支架8固定连接的支撑构件13,支撑构件13呈圆管结构,并通过其管孔形成可转动的支撑结构,该支撑构件13一端固定连接有转位驱动用从动轮14,从动轮14为蜗轮,该蜗轮连接有蜗杆15,蜗杆15一端固定连接有手轮19。
在本实施例中,支撑构件13也可呈圆杆结构,或者其他形状的结构,在两端形成圆杆或圆孔的可转动连接结构。其中,蜗杆15也可采用电机驱动,并由控制系统控制刀座支架8的转位角度。
本实施例中,还可通过在大刀架1水平运行驱动电机的输出轴上设置偏心销的方式,并由偏心销驱动大刀架1水平往返移动,以形成较小幅度的水平往返移动。

1.一种切片机用切刀装置,包括具有上下和左右复合运动的刀架,刀架由大刀架(1)和小刀架(2)组成,大刀架(1)和小刀架(2)通过导向柱(3)形成滑动连接,大刀架(1)和小刀架(2)之间设有高频振动源和复位弹簧(4),高频振动源和复位弹簧(4)用于使小刀架(2)形成相对于大刀架(1)的上下高频振动;其特征在于,所述高频振动源包括变频电机(5),变频电机(5)的输出轴上固定连接有凸轮(6),该凸轮(6)用于推动所述小刀架(2)远离大刀架(1);所述大刀架(1)通过水平导轨副设在刀架座(7)上,刀架座(7)通过竖直导轨副设在刀座支架(8)上;所述大刀架(1)通过水平设置的第一链传动结构的第一链条(9)直接驱动水平移动;所述第一链条(9)的一设定链节上设有沿链节宽度方向伸出的第一拨销(10),该第一拨销(10)配合在大刀架(1)上设置的条形槽中,以通过连接的移动带动大刀架(1)水平往复移动。
2.根据权利要求1所述的切片机用切刀装置,其特征在于,所述刀架座(7)通过竖向设置第二链传动结构的第二链条(11)直接驱动上下移动。
3.根据权利要求2所述的切片机用切刀装置,其特征在于,所述第二链条(11)的一设定链节上设有沿链节宽度方向伸出的第二拨销(12),该第二拨销(12)配合在刀架座(7)上设置的条形槽中,以通过连接的移动带动刀架座(7)上下往复移动。
4.根据权利要求1所述的切片机用切刀装置,其特征在于,所述刀座支架(8)通过下端形成可转位结构,可转位结构的回转轴线平行于刀座支架(8)宽度方向。
5.根据权利要求4所述的切片机用切刀装置,其特征在于,所述可转位结构包括与所述刀座支架(8)固定连接的支撑构件(13),该支撑构件(13)一端固定连接有转位驱动用从动轮(14)。
6.根据权利要求5所述的切片机用切刀装置,其特征在于,所述从动轮(14)为蜗轮,该蜗轮连接有蜗杆(15)。
