本发明涉及饮料制品,尤其涉及一种红景天饮料及其制备方法。
背景技术
红景天系景天科红景天属植物,藏语称“苏罗玛布”。系草本或亚灌木植物,生长于海拔3500~5000米左右的石灰岩、花岗岩山地、冰川地和山梁草地或山谷岩石上。由于生长在极其恶劣而多变的自然环境条件下,经受了低氧、低温、干燥、狂风、强紫外线照射,昼夜温差悬殊的耐受,红景天已从遗传上适应了高寒多变的恶劣环境,孕育出其他植物所没有的特殊适应性物质,具有抗癌、抗氧化、抗缺氧、抗疲劳、抗辐射、延缓衰老等功效。同时,它对改善中度高原人的短时间记忆、提高人的血氧分压水平降低心脏的前后负荷、改善心脏功能等有显著作用。
目前市场多数虽然定位于抗疲劳饮料、但由于工艺问题,其功能作用甚微,口感较差,大部分人不易接受。红景天的抗疲劳、抗辐射的作用没有发挥出来。而目前随着信息产业的发展,从事电脑工作的人群越来越多,市场的极力竞争,使人们的生活节奏加快,但目前市场上销售的功能性饮料很少。红景天饮料以含有多种人体必须氨基酸、多糖等有效成分为主要原料,配以抗疲劳、抗缺氧、抗辐射的红景天和其它食品添加剂,制成一种风味独特的具有一定保健功能的饮料。

本发明的目的在于以红景天为主要原料,提供红景天饮料及其制备方法,更好地利用红景天的资源和有效成分,制成红景天饮品。
为实现上述目的本发明采用的技术方案是:一种红景天饮料,其特征在于,该红景天饮料以红景天为主要原料,并配以白砂糖、柠檬酸、葡萄糖、高钾低钠盐加工而成,其中各原料按重量百分比为:
红景天提取液10-25%,白砂糖6-7.5%,柠檬酸0.1-2%,葡萄糖1.5-2.5%,高钾低钠盐0.1-2%,其余量为纯净水61%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
上述的一种红景天饮料,其特征在于,该红景天饮料,其中各原料按重量百分比为:
红景天提取液10-17.5%,白砂糖6-7%,柠檬酸0.1-1%,葡萄糖1.5-2%,高钾低钠盐0.1-1%,其余量为纯净水71.5%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
上述的一种红景天饮料,其特征在于,该红景天饮料,其中各原料按重量百分比为:
红景天提取液10-23%,白砂糖6-7.5%,柠檬酸0.1-0.17%,葡萄糖1.5-2.5%,高钾低钠盐0.1-0.17%,其余量为纯净水66.66%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
上述任意一种红景天饮料的制作方法,其特征在于,该方法包括如下步骤:
(1)原料处理
将红景天原料剔除杂质,破碎,过1.5mm筛子;
(2)醇提与浓缩
将红景天按原料重量计加入25倍量的70%乙醇,在60℃条件下浸提2h,过滤;将滤渣加入15倍量的70%乙醇,在60℃条件下浸提2h,过滤,合并两次滤液,然后减压浓缩至原料量的5倍,并回收乙醇;
(3)水沉与抽滤
将醇提的红景天浓缩液中加入不少于2.5倍量的水,然后在4℃的条件下静置72h以上进行沉淀,过滤;
(4)除鞣
在醇提红景天水沉的滤液中,加入滤液量0.067-0.08倍的4%明胶溶液,沉淀24h后过滤,最后获得红景天提取液;
(5)调配
将白砂糖、柠檬酸、葡萄糖和高钾低钠盐分别用少量水溶解调稀后倒入配料锅内,按上述用量将红景天提取液,白砂糖,柠檬酸,葡萄糖,高钾低钠盐进行调配,加热到60℃-65℃进行溶解,然后进行均质、过滤;
质量标准
(5.1)感官指标
棕黄色且色泽均匀;酸甜适口,具有红景天本身特有的风味,微涩;呈澄清的液体饮料,久置后允许有微量沉淀;
(5.2)理化指标
可溶性固形物含量(以折光计)≥8%,总酸(以柠檬酸计)0.15%-0.2%,红景天苷的含量≥10g/100ml;
(5.3)微生物指标
细菌总数<100个/ml,大肠菌群≤3个/100ml,致病菌不得检出;
(6)灌装、杀菌、冷却
将调配好过滤后的滤液在90℃-95℃条件下进行常压灭菌30分钟,然后灌装在洗净灭菌后的饮料瓶、罐装成饮料制品。

具体实施方式
本发明的一种红景天饮料,该红景天饮料以红景天为主要原料,并配以白砂糖、柠檬酸、葡萄糖、高钾低钠盐加工而成,其中各原料按重量百分比为:
红景天提取液10-25%,白砂糖6-7.5%,柠檬酸0.1-2%,葡萄糖1.5-2.5%,高钾低钠盐0.1-2%,其余量为纯净水61%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
上述的一种红景天饮料,其特征在于,该红景天饮料,其中各原料按重量百分比为:
红景天提取液10-17.5%,白砂糖6-7%,柠檬酸0.1-1%,葡萄糖1.5-2%,高钾低钠盐0.1-1%,其余量为纯净水71.5%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
上述的一种红景天饮料,其特征在于,该红景天饮料,其中各原料按重量百分比为:
红景天提取液10-23%,白砂糖6-7.5%,柠檬酸0.1-0.17%,葡萄糖1.5-2.5%,高钾低钠盐0.1-0.17%,其余量为纯净水66.66%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
上述任一一种红景天饮料的制作方法,该方法包括如下步骤:
(1)原料处理
将红景天原料剔除杂质,破碎,过1.5mm筛子;
(2)醇提与浓缩
将红景天按原料重量计加入25倍量的70%乙醇,在60℃条件下浸提2h,过滤;将滤渣加入15倍量的70%乙醇,在60℃条件下浸提2h,过滤,合并两次滤液,然后减压浓缩至原料量的5倍,并回收乙醇;
(3)水沉与抽滤
将醇提的红景天浓缩液中加入不少于2.5倍量的水,然后在4℃的条件下静置72h以上进行沉淀,过滤;
(4)除鞣
在醇提红景天水沉的滤液中,加入滤液量0.067-0.08倍的4%明胶溶液,沉淀24h后过滤,最后获得红景天提取液;
(5)调配
将白砂糖、柠檬酸、葡萄糖和高钾低钠盐分别用少量水溶解调稀后倒入配料锅内,按上述用量将红景天提取液,白砂糖,柠檬酸,葡萄糖,高钾低钠盐进行调配,加热到60℃-65℃进行溶解,然后进行均质、过滤;
(6)灌装、杀菌、冷却
将调配好过滤后的滤液在90℃-95℃条件下进行常压灭菌30分钟,然后灌装在洗净灭菌后的饮料瓶、罐装成饮料制品。
实施例1
红景天提取液10%,白砂糖6%,柠檬酸0.1%,葡萄糖1.5%,高钾低钠盐0.1%,其余量是纯净水82.3%。
实施例2
红景天提取液17.5%,白砂糖6.75%,柠檬酸1%,葡萄糖2%,高钾低钠盐1%,其余量是纯净水71.75%。
实施例3
红景天提取液23%,白砂糖7.5%,柠檬酸1.7%,葡萄糖2.5%,高钾低钠盐1.7%,其余量是纯净水63.6%。
原料大花红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
产品包装与使用方法
本发明的产品是以瓶、罐装的包装方式,饮用前将瓶盖打开即可饮用。

1.一种红景天饮料,其特征在于,该红景天饮料以红景天为主要原料,并配以白砂糖、柠檬酸、葡萄糖、高钾低钠盐加工而成,其中各原料按重量百分比为:红景天提取液10-25%,白砂糖6-7.5%,柠檬酸0.1-2%,葡萄糖1.5-2.5%,高钾低钠盐0.1-2%,其余量为纯净水61%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
2.根据利要求1所述的一种红景天饮料,其特征在于,该红景天饮料,其中各原料按重量百分比为:红景天提取液10-23%,白砂糖6-7.5%,柠檬酸0.1-0.17%,葡萄糖1.5-2.5%,高钾低钠盐0.1-0.17%,其余量为纯净水66.66%-82.3%,原料红景天→除杂→粉碎过筛→醇提→减压抽滤→浓缩→水沉淀→减压抽滤→除鞣→调配→均质、过滤→杀菌→灌装→贴标→成品制成瓶、罐装成饮料制品。
