本发明涉及饮料和食品制备的改进,特别是,在机器中用于制备饮料和食品的改进的组合物。通过向所述组合物中加入液体而制备组合物,并且包含一种或多种饮料或食品成分和至少一种制备助剂。制备助剂包含多个由基本不溶性材料形成的主体,并且制备助剂选为对于液体与组合物之间的相互作用具有预定的效果。主体具有在0.1mm-200mm范围,优选在1-20mm范围,或在100-200mm范围的直径。
Description
本发明涉及饮料和食品制备的改进,特别是,在机器中用于制备饮料和食品的改进的组合物。
用于泡煮饮料(例如咖啡和茶)的自动化泡煮机(也称为按需(on-demand)系统)通常具有泡煮水储器,其中通过加热元件加热水。已加热的水随后从储器转移至含有泡煮成分(例如咖啡粉或茶叶)的泡煮室,已加热的水流过该泡煮室以产生泡煮的饮料。饮料流入容器,例如位于泡煮室出口下面的壶或杯。
许多现代家用饮料机分配单份饮料直接进入饮用容器,并且由大量供应的饮料成分或由饮料成分的单个包装(例如囊、袋或料筒)得到饮料。使用这种包装的机器降低清洁的要求,并且可使使用者选择饮料(例如咖啡、茶、热巧克力等)以及食品(例如汤、乳蛋糕等)。饮料由饮料或食品成分在水中泡煮、混合、溶解或悬浮而形成。例如,对于咖啡饮料,已加热的水在加压下受迫通过包装,以从其中所含的压实的咖啡粉提取芳香族成分。由于它们的方便性和生产的饮料的品质,在这样的机器中使用包装变得日益流行。
EP-A-0904717描述了一种软的柔性囊或小袋形式的包装,其由两个滤纸圆盘制成,滤纸通过接缝围绕它们的周长连接。该囊设计成使得热水可在加压下进料,并且经过填充饮料成分的囊。然而,这种类型的软囊的显著的问题在于其形状和设计不能理想地使水通过囊的流动精确受控。因此,EP-A-0904717的囊需要使用专门设计的容器,其中在囊可用于饮料机之前放置囊。
该问题可在更加刚性的包装(例如在EP-A-1440903中描述的料筒)中得到克服。这种类型的料筒由高密度聚乙烯、聚丙烯、聚苯乙烯、聚酯或两种或更多种这些材料的层压材料形成。所述料筒具有用于将水引入料筒中的入口和用于由所述饮料成分生产的饮料的出口。所述料筒包含外部构件、插入外部构件中的内部构件和使入口与出口连接的饮料流动路径中的孔,用于生产一股饮料。为了优化一些类型的饮料的品质,需要使饮料成分(例如咖啡)的有益香味的提取最大化,同时使苦味化合物和不期望的组分的提取最小化。
这通过优化多个不同的泡煮参数实现。有见识的咖啡饮用者公认,使用比最佳温度冷的水生产的咖啡味道酸,而使用比该最佳温度热的水生产的咖啡味道苦。温度太低时出现的酸味是由于在提取下,由于来自豆类的酸为溶解的第一物质。一些咖啡师主张浓缩咖啡的最佳温度为92-96℃。影响咖啡品质的其它因素包括咖啡豆的烘烤和龄期、研磨尺寸、在泡煮前研磨料的压紧和泡煮时间。通过平衡泡煮过程的这些关键要素实现最高品质咖啡。
通过按需饮料机的泡煮水(或其它液体)的不同的流速将因此导致泡煮的饮料的特性(特别是其味道)变化。US-B-5901635阐明,与通过较慢的流速产生的相比,在泡煮室中热水通过咖啡粉相对快的流速将导致相对稀释的咖啡,具有较少香味和咖啡因。因此应使用相对缓慢的速率,以正确泡煮去咖啡因的咖啡饮料,其具有与使用相对较快的流速泡煮的“常规”或含咖啡因咖啡可比的味道。流速可通过多个变量确定,例如将水引入储器的速率、在储器和泡煮室之间的导管或通道的尺寸、以及在水分布器中的孔或在泡煮室之上的喷淋头的尺寸。US-B-5901635在填充室和储器之间使用可调节的阀,以调节从填充室到储器的水的流速。
WO-02/074661描述了一种用于制备可定制泡煮饮料的装置,并且提出使用两个各自含有不同体积的成分(例如烘烤和研磨咖啡)的成分提取室。通过将泡煮流体引向通过一个室或另一个室,或者将流分开以通过每个室,可改变完成的泡煮饮料的强度。在该现有技术文件中描述的另一个实施方案中,不同的成分在不同的室中提供。
然而,大多数按需机器通常具有预先设定的不可变的水流速和温度。因此,期望找到其它方式来改变至少一个制备参数,以改变特性,优选改进饮料或食品的品质。对于使用软囊的机器,特别期望这一点,比起刚性料筒,通过软囊更难以控制水流动。
因此,本发明提供了一种组合物,用于通过向所述组合物中加入液体而制备饮料或食品,所述组合物包含一种或多种饮料或食品成分和至少一种制备助剂,所述制备助剂对液体与组合物之间的相互作用具有预定的效果,所述制备助剂包含多个由基本不溶性材料形成的主体,其中所述主体的直径在0.1mm-200mm范围,优选在1-20mm范围,或在100-200mm范围。
可采用多种方式来改变相互作用,以实现特定效果,例如提高的提取、提高的咖啡脂(crema)或泡沫、更好的溶解、更大的固体分离、提高的水合等。因此,本发明提供了优化饮料和食品的制备的装置,其方式可用于具有预定的水流速和温度的开放式按需机器。
所述主体的材料优选基本不可渗透。
预定的效果优选基本防止液体中的成分的移动或促进液体中的成分的搅动。
所述主体优选为非漂浮的。
优选所述主体具有包括多个边缘和/或角的形状或结构和/或促进液体在主体中或围绕主体流动的湍流流动的形状或结构。
所述主体可具有形状、结构或带纹理的表面,使得当将主体压实在一起时,在其之间产生小的流动路径或者它们可具有光滑的表面。
所述主体优选为漂浮的。
所述主体基本具有相同的尺寸或具有至少两种不同的尺寸。
制备助剂优选包含非漂浮和漂浮主体的组合。
本发明还包含含有上述组合物的包装,所述包装包含在其中制备饮料或食品的室,该室具有用于向室中加入液体的入口和用于分配制备的产品的出口。
优选包装为软囊或至少半刚性料筒。
本发明还包含生产上述包装的方法,所述方法包括使用上述组合物填充所述包装的步骤。

虽然本发明主要旨在改进的泡煮饮料,例如通过泡煮机生产的茶和咖啡,本发明还应用于制备许多其它饮料和食品,其通过将饮料或食品成分在液体(例如水)中混合、溶解或悬浮而形成。
本发明的饮料或食品组合物10包含一种或多种适于制备饮料或食品的成分11和至少一种包含多个主体12a的制备助剂12。主体12a可独立或连接,其方式使得它们可相对于彼此移动。
组合物10优选包含在包装15,20中,该包装具有其中发生制备过程的室(该术语包括在柔性囊中的封闭空间)23。制备助剂12保留在室23中,并且设计成在制备饮料或食品期间改变水或其它液体与室23中的成分的相互作用。相互作用可采用多种方式改变,以实现特定效果,例如提高的提取、提高的咖啡脂或泡沫、更好的溶解、更大的固体分离、提高的水合等。
制备助剂12的主体12a由食品级材料构成,即,耐饮料成分降解并且遵从食品/健康和安全规章的一种材料。材料本身不可渗透、不可溶并且优选没有味道并且赋予最终的饮料产品很少的香味或不赋予香味。主体12a的形式可使得,作为整体,它们不可渗透,即,液体可流过主体12a内的小的路径,但是不被材料本身吸收。制备助剂12可采用多种不同的形式,它的一些实例在以下描述。
完成的饮料或食品可为例如咖啡、茶、巧克力或基于乳品的饮料、汤、甜点、果汁等。使用的成分11为粒状固体,并且可为粉末状、粉或基于叶子。成分11可为不溶性的或可溶性的,或者包括一些为不溶性而一些为可溶性的成分的混合物。因此,这样的成分的实例包括烘烤和研磨咖啡、茶叶、粉末状汤、奶粉、巧克力粉末、有香味的咖啡-混合粉末、果汁浓缩物、药草、调味品、乳蛋糕粉末、肉汁、药物制剂、可再次水合的流感药物等。
在示于图1的本发明的第一实施方案中,制备助剂12包含多个与成分11混合的小的漂浮的主体12a。漂浮的主体12a可为球形、假-球形、椭圆形或另一种形状。漂浮的主体12a的表面可为光滑的,或者可包括突出如脊或刺。漂浮的主体12a可为实心的或者包括内部空心,其允许液体从中流过。用于主体12a的合适的材料尤其包括玻璃、塑料例如聚丙烯和聚乙烯、纤维素、种子外壳、金属复合物和材料的组合。
漂浮的主体12a可均具有基本相同的尺寸,或者它们可具有不同的尺寸。根据成分11的性质和待制备产品的期望的特性来选择主体12a的最佳尺寸和分布。漂浮的主体12a的直径的合适的范围在0.1mm-200mm范围,更优选在1mm-200mm范围。在一些应用中,直径可在100-200mm范围。漂浮的主体12a与成分的体积比可在1-25%范围。
当液体进入室23并且与成分11混合时,漂浮的主体12a在液体中漂浮,并随着液体的湍流流动而移动。结果是,它们撞击成分11,引起其物理搅动,这提高传质和可溶性固体从成分11的释放。
在示于图2的本发明的第二实施方案中,助剂12包含多个小的非漂浮的主体12b。非漂浮的主体12b同样可为球形或另一种形状,并且可具有与上述那些类似的尺寸范围。
用于非漂浮的主体12b的合适的材料尤其包括玻璃、塑料例如聚丙烯和聚乙烯、咖啡过程流(例如,提取过的废渣的压缩粒料)、金属复合物和材料的组合。
非漂浮的主体12b的效果为压紧成分11,以产生致密的床。结果是,液体流入室23基本不妨碍该压紧床,并且非漂浮的主体12b防止制备过程早期阶段期间的初始搅拌。它们还防止或进一步降低在提取期间的混合。这一点特别适于待泡煮的饮料。
在本发明的第三实施方案中,组合物10包含两种制备助剂12,其为漂浮的主体12a和非漂浮的主体12b的混合物。非漂浮的主体12b在室23的底部产生致密的压紧床,其产生背压,而漂浮的主体12a撞击疏松的成分材料,以提高可溶性固体从中释放。这特别适于具有两种成分的产品,例如咖啡和乳脂或糖,或茶和乳脂或糖。咖啡粉或茶叶将保持被非漂浮的主体12b压紧,而乳脂或糖将被漂浮的主体12a撞击。
在本发明的第四实施方案中,制备助剂12包含多个促进湍流的主体12c,其包括或产生穴和小的流动路径,液体从中流过。穴和小的流动路径在液体中产生另外的湍流,因为液体在主体12c中或围绕主体12c通过,这产生高压和低压区域,从而使混合物充气和提高来自成分11的收率。这可提高来自成分11的芳香味提取,并且在一些情况下,可用于提高最终产品中泡沫或咖啡脂的产生。
各种不同的形状适于这些促进湍流的主体12c,但是具有边缘或角或具有带纹理的表面的形状特别有用。形状或表面纹理可设计成产生穴和微通道,与在实际的图中未提及的一种或多种其它主体12c组合。备选地,促进湍流的主体12c本身可掺入内部或外部穴或通道。互连形状也是非常合适的。促进湍流的主体12c的一些合适的形状示于图3。
适用于由本发明的组合物制备饮料或食品的柔性囊15在图4中说明,并且更充分地描述于EP-A-0904717。囊15包含由滤纸制成的圆形顶片16和圆形底片17或类似的滤纸。片材16,17沿着环形接缝18围绕它们的周长连接,以封闭组合物10。
在使用时,将囊15直接放置或于支撑容器中放置在机器中。热水(或其它液体)在加压下进料,使其经由顶片16渗透囊15,以与组合物10混合。完成的饮料或食品经过底片17,并且借助凹槽(通常在支撑容器中)引向出口排放到容器(例如杯或碗)中。
也适于由本发明的组合物制备食品或饮料产品的刚性类型料筒20在图5中说明,并且更充分地描述于EP-A-1440903。料筒20通常包含壳21和密封装置22。壳21至少部分限定含有组合物10的室23。室23具有入口24、出口25,并且提供连接入口24与出口25的流体流动路径。入口24和出口25开始时被密封装置22密封,并且在使用时通过刺穿或切割密封装置22而打开。
在使用时,水(或其它液体)在加压下进入料筒20,并且通过入口24流入室23。水流入室23中,并且与其中所含的组合物10混合。完成的饮料或食品通向出口25,在此它由机器引导排放到容器(例如杯或碗)中。
以下说明本发明的制备助剂12的效果。
将Jacobs Kroneung烘烤和研磨咖啡研磨至平均粒径为400-500微米,以用作成分11。使用标准滤纸构造三组软囊15,使用标准囊提取机器(例如在EP-A-0904717中描述的),由该三组软囊15制备咖啡饮料。评价所得到的饮料的芳香味特性、泡沫高度和泡煮收率。
一组囊15填充5.2g烘烤和研磨咖啡的填充重量。第二组囊15填充7.2g烘烤和研磨咖啡的填充重量。第三组囊15填充本发明的组合物,其包含5.9g烘烤和研磨咖啡和1.3g制备助剂12,该制备助剂12包含多个直径为10mm的高度带纹理的(脊状)卵形聚丙烯珠粒形式的非漂浮的主体12b。
评价1:咖啡脂/泡沫优化
在标准透明的实验室烧杯(内径为85mm)中,在10秒泡煮内测量泡沫高度,结果示于下表和柱形图。在含有制备助剂12的囊中,存在统计学上显著的(ANOVA with Tukeys,n=6,P<0.05)泡沫高度增加。该结果与当总烘烤和研磨咖啡材料成分重量降低时通常观察到的泡沫高度减小直接相对:

评价2:芳香味优化
如上所述,使用7.2g烘烤和研磨咖啡的填充重量制备第一组囊,通过加入2g非漂浮的10mm直径带纹理的表面玻璃珠粒形式的制备助剂12制备第二组囊。在泡煮时,使用标准实验室方法,通过GC-MS,在两种囊中测量关键的芳香味化合物。从含有制备助剂12的囊释放的芳香味化合物存在统计学上显著的(ANOVA with Tukeys,n=4,P<0.05)提高,如下表所示:

Claims (18)
1. 一种组合物,用于通过向所述组合物中加入液体而制备饮料或食品,所述组合物包含一种或多种饮料或食品成分和至少一种制备助剂,所述制备助剂对液体与组合物之间的相互作用具有预定的效果,所述制备助剂包含多个由基本不溶性材料形成的主体,其中所述主体具有在0.1mm-200mm范围,优选在1-20mm范围,或在100-200mm范围的直径。

16. 一种生产权利要求14或权利要求15的包装的方法,所述方法包括使用权利要求1-13中任一项的组合物填充包装的步骤。
17. 在操作循环期间由权利要求14或权利要求15的包装分配饮料或食品的方法,所述方法包括使液体经过室的入口的步骤,以将饮料或食品从出口分配出来并且进入容器。
18. 一种包含权利要求14或权利要求15的包装的饮料或食品分配系统,和适于接受包装并且通过加入液体从中分配饮料或食品的饮料或食品分配机。
