Description
気泡層の高さを抽出から10秒以内に標準的な透明の実験用ビーカ(内径85mm)の中で測定し、その結果を以下の表と棒グラフに示す。調製助剤12を収容したポッドにおいては、統計的に有意な(ANOVAとTukeys法を採用、n=6、P<0.05)気泡層の高さの増大が見られた。この結果は、焙煎、粉砕したコーヒー素材の原料重量を減らすと一般的に観察される減少とは正反対である。
第一のセットのポッドを上述のように、充填重量7.2gの焙煎、粉砕コーヒーを入れて作製し、第二のセットのポッドを、非浮揚性、直径10mm、凹凸表面のガラス製ビーズの形態の調製助剤12を2g添加して作製した。抽出後、両方のポッドにおいて、主要な香気化合物を、標準的実験方法を用いてGC−MSで測定した。調製助剤12を含むポッドから放出された香気化合物には、下表に示すような統計的に有意な(ANOVAとTukeys法を採用、n=4、P<0.05)増大が見られた。

Claims (20)
- 液体を加えることによって飲料または食料生成物を調製するための組成物において、前記組成物は1種類または複数種類の飲料または食料原料と、前記液体と前記組成物の間の相互作用に所定の影響を与える少なくとも1種類の調製助剤を含み、前記調製助剤は、実質的に不溶性の材料から形成される複数の物体を含み、前記物体の直径は0.1mm〜200mmの範囲、好ましくは1〜20mmの範囲または100〜200mmの範囲であることを特徴とする組成物。
- 前記物体が製造される材料が実質的に不浸透性であることを特徴とする、請求項1に記載の組成物。
- 前記所定の影響が、実質的に、前記液体中の前記原料の運動を実質的に防止することであることを特徴とする、請求項1または2に記載の組成物。
- 前記所定の影響が、前記液体中の前記原料の撹拌を促進することであることを特徴とする、請求項1または2に記載の組成物。
- 前記物体が非浮揚性であることを特徴する、請求項1〜4のいずれか1項に記載の組成物。
- 前記物体が、複数の縁辺および/または角を含む形状または構造を有することを特徴とする、請求項1〜5のいずれか1項に記載の組成物。
- 前記物体が、前記物体の中または周囲を流れる液体の乱流を促進する形状または構造であることを特徴とする、請求項1〜6のいずれか1項に記載の組成物。
- 前記物体が、前記物体が相互に圧縮された時に、それらの間に小さな流路ができるような形状、構造または凹凸表面を有することを特徴とする、請求項1〜7のいずれか1項に記載の組成物。
- 前記物体が平滑な表面を有することを特徴とする、請求項1〜5のいずれか1項に記載の組成物。
- 前記物体が浮揚性であることを特徴とする、請求項1または9に記載の組成物。
- 前記物体が実質的に同じ大きさであることを特徴とする、請求項1〜10のいずれか1項に記載の組成物。
- 前記物体が少なくとも2種類の大きさであることを特徴とする、請求項1〜10のいずれか1項に記載の組成物。
- 前記調製助剤が非浮揚性と浮揚性の物体の組み合わせを含むことを特徴とする、請求項1に記載の組成物。
- 請求項1〜13のいずれか1項に記載の組成物を収容したパッケージであって、前記パッケージが、飲料または食料生成物がその中で調製されるチャンバであって、前記チャンバに液体を加えるための入口と、調製された生成物を吐出するための出口を有するチャンバを備えることを特徴とするパッケージ。
- 柔らかいポッドまたは少なくとも半剛性のカートリッジを含むことを特徴とする、請求項14に記載のパッケージ。
- 請求項14または15に記載のパッケージを製造する方法において、請求項1〜13のいずれか1項の組成物を前記パッケージに充填するステップを含むことを特徴とする方法。
- 動作サイクル中に、請求項14または15に記載のパッケージから飲料または食料生成物を吐出させる方法において、前記チャンバの前記入口から液体を通過させて、前記飲料または食料生成物を前記出口から受容器の中へと吐出させるステップを含むことを特徴とする方法。
- 請求項14または15に記載のパッケージと、前記パッケージを受け、液体を加えることによってそこから飲料または食料生成物を吐出するようになされた飲料または食料吐出機と、を含むことを特徴とする、飲料または食料吐出システム。
- 複数の物体が前記飲料または食料生成物中に移動可能に分散されており、該物体は非浮揚性であり、該物体は、前記液体が前記飲料または食料生成物に加えられたときに、前記飲料または食料生成物を圧縮して圧縮床層を作るように構成されていることを特徴とする請求項14に記載のパッケージ。
- 複数の物体が前記飲料または食料生成物中に移動可能に分散されており、該物体は非浮揚性であり、該物体は、前記液体が前記飲料または食料生成物に加えられたときに、前記液体中に浮遊して前記液体の乱流とともに移動し、前記飲料または食料生成物に衝突して、前記飲料または食料生成物を撹拌するように構成されていることを特徴とする請求項14に記載のパッケージ。
