Abstract

本发明属于食品加工领域,涉及肠衣还原护色剂和应用。所述护色剂成分为BHT、VE、异VC钠、BHA、AP,各组分质量比为1:2:1:2:4。还原护色剂总用量为所需护色肠衣质量的0.02%。添加方式为将护色剂直接添加至肠衣盐中。本发明采用五种具有除氧,除自由基,螯合金属离子等功能成分的抗氧化剂,同时利用了抗氧化剂之间的协同作用,有效抑制肠衣脂肪氧化,从而延缓了肠衣脂肪氧化,保护了肠衣的色泽。本发明的护色剂成本低,配制方便,肠衣贮藏过程色泽劣变程度低,能有效克服外界环境条件对肠衣的不利影响,保护了肠衣的色泽,减少了经济损失,增加了生产效益。

Description

一种肠衣还原护色剂及其配制方法和应用
技术领域
本发明主要针对天然肠衣贮藏及运输过程中肠衣脂肪氧化造成肠衣色泽劣变的问题,研究具有不同抗氧化功能的肠衣还原护色剂对天然肠衣贮藏保鲜效果的影响。涉及一种肠衣还原护色剂的配方及应用。
背景技术
肠衣是蛋白质、脂肪含量较为丰富,可食用但易于变质的产品,其加工也是来自于健康牲畜的食道、胃、小肠、大肠等器官,加工及后期贮藏过程中肠衣理化成分的改变很容易造成肠衣色泽发生劣质变化。对于肠衣色泽的改变,一些研究仅仅是从色变后处理工艺上来考虑,后处理工艺也多为化学手段漂白,对肠衣组织结构造成了一定的损坏,也增加了化学物质残留的风险。200910169618.X号中国专利申请公开了一种护色剂,虽然在一定程度上减少了肠衣色泽的裂变,但未了解肠衣色泽裂变的本质原因,因此不能完全解决肠衣色变问题,而且随着时间增加,护色剂各成分稳定性下降,护色效果降低。此外,已有护色剂成分中的茶多酚为浅黄或绿色,茶多酚的添加会对肠衣本身色泽产生很大程度上的不利影响。因此,为了更好更持久的保持肠衣的天然品质,充分发挥其实用价值和经济效益,对肠衣还原护色技术的研究有着极大的现实意义。
 目前肠衣包装及贮藏的方式比较简单,多为塑料桶、套管、以及真空小包装后于低温冷藏库中放置,这些包装及贮藏方式虽然一定程度上控制了脂肪的氧化,但均存在不足,肠衣色泽仍旧会发生不可逆的劣变,不能完全解决肠衣色泽劣变问题。因此,开发一种能够抑制脂肪氧化的还原护色剂,从根本上解决肠衣色泽劣变问题,对于肠衣品质的保护至关重要。
发明内容
本发明根据肠衣脂肪氧化的影响因素,研究一种能够清除氧,清除自由基,螯合金属离子等来抑制脂肪氧化的肠衣还原护色剂。
本发明的肠衣还原护色剂配制技术方案是:还原护色剂主要成分为二丁基羟基甲苯(BHT)、生育酚(VE)、异VC钠、叔丁基羟基茴香醚(BHA)、抗坏血酸棕榈酸酯(AP)五种常规抗氧化剂,各组分质量比为1:2:1:2:4。
所述肠衣还原护色剂的配制方法是:将肠衣还原护色剂各组分按质量比进行混合均匀。
所述肠衣还原护色剂在使用时总用量为所需护色肠衣质量的0.02%。添加方式为将护色剂直接添加至肠衣盐中。各组分所采用配方均为食品添加剂级别。
本发明有益效果:能够清除氧气,清除自由基,螯合金属离子等。可有效抑制肠衣脂肪氧化,降低肠衣色泽的劣变程度,更好的保证了肠衣的品质。

具体实施方式
本发明肠衣还原护色剂由BHT、VE、异VC钠、BHA、AP五种常规抗氧化剂组成,各组分质量比为1:2:1:2:4。
配制方法:将肠衣还原护色剂各组分按质量比进行混合均匀,总量控制在所需护色肠衣质量的0.02%。
本发明结合实例做进一步说明。
实施试验:试验比较添加单一抗氧化剂、现有护色还原剂、本发明肠衣还原护色剂以及未加抗氧化剂对肠衣还原护色效果的影响,结果见表1。所述现有护色还原剂是依据200910169618.X专利申请公开的内容配制。
肠衣原料:如皋坝新肠衣有限公司提供。
试验时间:三个月。
测定指标:酸价(参照GBT 5009.37-2003食用植物油卫生标准的分析方法),过氧化值(参照GBT 5009.37-2003食用植物油卫生标准的分析方法),色差△E(SC-80C全自动色差计测定,采用反射测量、内部目标比较色差方式,CIE Lab均匀色空间系统)。

注:** p﹤0.01表示与肠衣还原护色剂比较差异极显著;* p﹤0.05 表示与肠衣还原护色剂比较差异显著。
处理方法:试验组添加本发明肠衣还原护色剂,添加量为所需护色肠衣质量的0.02%,添加时间为肠衣上盐腌制阶段,添加方式为直接添加至肠衣盐中。空白组不加还原护色剂。
结果表明,单一抗氧化剂处理肠衣一定程度上能有效抑制肠衣脂肪氧化,对肠衣护色有一定的促进作用。肠衣还原护色剂处理肠衣酸价和过氧化值明显低于单一抗氧化组和空白组,说明抗氧化剂的协同作用对脂肪氧化的抑制作用明显优于单一抗氧化组,结合肠衣三个月后色泽变化,复合抗氧化组色差(△E)低于单一抗氧化组和空白组,可以看出本发明肠衣还原护色剂对肠衣良好色泽的保持有更加明显的效果。
综上试验结果表明,本发明还原护色剂对于天然肠衣的色泽保鲜具有很明显的效果,可广泛应用于企业天然肠衣的贮藏。

1. 一种肠衣还原护色剂,其特征是:由质量比为1:2:1:2:4的二丁基羟基甲苯、生育酚、异VC钠、叔丁基羟基茴香醚和抗坏血酸棕榈酸酯组成。
2.一种制备权利要求1所述肠衣还原护色剂的方法,其特征在于是将所述肠衣还原护色剂各组分按质量比进行混合均匀。
3.权利要求1所述肠衣还原护色剂的应用,是将肠衣质量的0.02%的肠衣还原护色剂直接添加至肠衣盐中。
