Abstract

本发明高活性免疫牛奶饮料配方,它属于牛初乳系列产品中的配方发明。本发明的最大特点是对传统牛初乳系列产品的配方和加工艺进行了全面改进。把最终产品由单一成分改成6种成分,把固态(冷冻干燥或喷雾干燥)改成了液态无菌罐装。在工艺方面增加了脂肪的双级分离、活性碳吸附后除味脱色、陶瓷膜除菌和无菌罐装设备,还增加了抗生素检测试剂盒、免疫球蛋白检测试剂盒,高效液相色谱(HPLC)检测仪、和原子吸收检测仪等设备。从而为本产品的长期安全生产奠定了基础并为中国牛初乳的系列食品的开发打开了又一条通路。

Description

高活性免疫牛奶饮料配方
一、技术领域:
本发明属于牛初乳领域内的液体奶系列产品。这种产品是以牛乳中的全部乳清蛋白为主要原料,添加乳铁蛋白、溶菌酶低聚果糖等制成的冷除菌的非发酵乳产品。
二、背景技术:
本发明是根据中国现在孩子的食物中缺少活性免疫元素而引起的体能不佳情况而研制出的需要专利保护的儿童系列非发酵型乳饮料产品。这种产品是以现代免疫学理论与功能性食品的最新科研成果为理论支持,以多次试验结果为技术支持而研制成功的适合青少年食用的食品。此产品的技术要求如下:
1.原料质量要求
牛初乳及所有原料要达到最新出版的国家质量标准、农业部行业标准和企业标准要求(GB6914-2006);企业生产环境达到GMP规定;乳铁蛋白和溶菌酶要符合中国食品添加剂标准要求(我国没有行标和国标)。2.生产工艺流程要求:净乳→分离→检验→配料→均质→除菌→冷却→罐装

酸甜与牛乳特有的风味。

5.其它要求
除了产品配方需要保护外,包括产品外包装需要保护。
三、发明内容
本发明属配方发明。它包括主原料和配料的选取,各种营养素添加量的确定,冷除菌时间的调整与各参数的确定,本产品在加工过程中执行的工艺路线在中国是首创。可以说这种产品也是在我国牛初乳产品的种类和功能上都是一个创造。本发明主要是配方发明,还涉及到了设备、工艺及加工技术方面。可以说本次的发明内容与现有配及技术都有较大的进步。
四、具体实施方式:
以我国现有牛初乳的加工设备为基础,配备膜除菌(冷除菌)设备后制定一个新的配方,本产品配方中的牛初乳用脱脂的牛初乳浓缩蛋白粉替代,但不许使用普通牛初乳粉,乳铁蛋白是牛初乳深加工后的产品,溶菌酶是外购产品。除菌温度要控制在10-45℃,杂菌控制在500cfu/L。

Claims (1)

1.本产品是含有高活性蛋白的液体保健食品(口服液)。它的配方是在经过严格计算和试验的基础上才完成的。产品的保护范围是配方中所用主要原料的比例(总组分100%)和组分含量。共有如下7项:
第一项:无脂肪牛初乳               (含量在8-30%);
        低聚果糖                   (含量在2-12%);
        溶菌酶                      0.02-0.45%;
        富铬酵母粉(2000ppm)         0.02-0.05%;
        无菌水                      58-90%;
第二项:免疫球蛋白的含量限定        0.5-3.0mg/100ml;
第三项:有机铬含量限定              0.5-2.0mg/100ml;
第四项:乳铁蛋白含量限定            0.045-0.075mg/100ml;
每五项:溶菌酶含量限定              0.015-0.025mg/100ml;
第六项:有机钼的含量限定            40-85微克/100ml;
第七项:低聚果糖含量限定            50-70微克/100毫升;
