技术领域
本发明涉及一种保护涂布于食品表面的红曲红色素色泽的护色剂,尤其是食品用红曲红色素护色剂。
背景技术
红曲红色素是红曲霉菌在生长代谢过程中产生的一种食用色素,也是目前世界上唯一利用发酵法得到的天然色素。据研究,红曲霉代谢产物不仅可以改变食品的色泽,还具有明显的抑菌、增强免疫力、降血脂、降血压、降血糖的功效,因此以红曲红色素作为食用色素不但可以改善食品色泽,还具有功能性和营养价值。
红曲红色素是最有开发前景的食用色素之一,目前主要用肉类制品的着色,但是由于色素的稳定性不理想,在日光或灯光直接照射下,会很快褪色,影响了在实际中的应用。
发明内容
本发明的目的是提供一种加入后可以使红曲红色素涂布于食品表面时耐高温、抗氧化,在长时间的日光和灯光照射下不变色的食品用红曲红色素护色剂。
为实现上述目的,本发明采用的技术方案是:
一种食品用红曲红色素护色剂,以重量百分含量计其组成为
儿茶素    5~10%
维生素C    10~25%
葡萄糖     30~40%
余量为芦丁。
进一步的,以重量百分含量计其组成为
儿茶素     6%
维生素C    21%
葡萄糖     31%
余量为芦丁。
使用本发明作食品添加剂,可以使涂布于食品表面的红曲红色素耐高温、抗氧化,在长时间的日光和灯光照射下不变色。本发明为固体结晶性粉末,方便运输和储存。本发明生产方法简单,将芦丁、维生素C、葡萄糖、儿茶素等化合物按一定比例混合即可。使用方法也不复杂,在红曲红色素使用前,将本发明与其混合均匀,然后按照红曲红色素的通常使用方法使用即可,本发明护色剂用量为红曲红色素重量的0.1-1%。

具体实施方式
实施例1
食品用红曲红色素护色剂,以重量百分含量计其组成为
儿茶素     6%
维生素C    21%
葡萄糖     31%
余量为芦丁。
仪器与试药:722S型分光光度计(上海精密科学仪器有限责任公司),100mL容量瓶,护色剂,红曲红色素(瑞德天然色素公司)
实验方法:精密称取红曲红色素10mg,用含0.1mg护色剂的蒸馏水溶液溶解并定容于100mL容量瓶中;同法精密称取红曲红色素10mg,蒸馏水溶解并定容于100mL容量瓶中。放置于日光下,间隔一定时间,分别取两种溶液,在495nm下测定吸光度,结果如附图1所示。
结果显示,120小时内,护色剂可使红曲红色素显著减少退色。
