背景技术
现有的果蔬类罐头食品生产,是果蔬类罐头食品经前处理后,即装罐、加液(或不加液)、封罐,然后水浴或蒸汽杀菌。
发明内容
本发明提供了一种对果蔬类罐头食品,经微波杀菌和封罐后,进行二次微波杀菌。工艺路线与现有的微波杀菌工艺不同之处是:1.本工艺的果蔬类罐头食品,经微波杀菌后,进行二次微波杀菌。2.本工艺在二次微波杀菌时,罐头是全罐倒转的。其好处是:第一次微波杀菌和排汽时,温度可以低一些,防止罐头内的液体外溢。但是这样做,罐头有可能杀菌不彻底,所以罐头杀菌后封罐,再进行二次微波杀菌,这样,杀菌既彻底又均匀。
具体实施方式
实施例:
第一次微波杀菌后,罐头中心温度达到88-90摄氏度。封罐后,二次微波杀菌时,罐头整罐倒转,杀菌后出来的罐头,中心温度仍达到88-90摄氏度。

2.根据权利要求1所述的,二次微波杀菌生产工艺,其特征在于:进行二次微波杀菌前,罐头是倒转的。
