Die Erfindung betrifft ein Verfahren zur Herstellung von in heissem Wasser quellbarem Kartoffeltrockengranulat für die Zubereitung von Klössen durch Einbringen von mit dem Granulat und gegebenenfalls anderen Trockenprodukten gefüllten, wasserdurchlässigen Beuteln in heisses oder kochendes Wasser, wobei aus rohen und/oder halbgaren und/oder gargekochten Kartoffeln oder Kartoffelstärke, sowie gegebenenfalls Wasser bzw. kleineren Mengen anderer Ausgangsstoffe auf Stärkebasis und den weiter unten angegebenen Zutaten eine Teigmischung hergestellt, daraus ein Granulat geformt und dieses getrocknet wird. Bei diesem Verfahren wird aus rohen und/oder halbgaren und/oder gekochten Kartoffeln ein Teig hergestellt, welcher durch ein Walzwerk geleitet wird, so dass ein feuchter Film entsteht, der zu Flocken zerkleinert und anschliessend getrocknet wird. Bei der Trocknung der Flocken mit Heissluft entsteht eine hornartige verdichtete Oberfläche mit Schuppenstruktur. Dies ist wichtig, weil eine zu schnelle Wasseraufnahme des Trok-kenproduktes zu einem Verkleben der Aussenschicht des in dem Beutel enthaltenen Knödels führen würde. Ferner ist aus dieser Vorveröffentlichung bekannt, das derart hergestellte Flockenprodukt wieder zu einem Teig zu verarbeiten, aus dem Teig ein Granulat oder Würfel herzustellen und diese dann durch Puffung zu einem porösen Produkt aufzublähen. Die nach diesem bekannten Verfahren hergestellten Klösse oder Knödel besitzen nach der Zubereitung eine homogene Teigstruktur, wie sie von gekochten Kartoffelknödeln bzw. Knödeln-halb-und-halb her bekannt ist. Die Flok-ken mit der hornartig verdichteten Oberfläche sind nach der Zubereitung nicht mehr als Einzelteilchen erkennbar, d.h. die Flocken sind beim Quell- und Kochvorgang in eine kompakte homogene Masse überführt worden.
