14. Maschine nach Anspruch 5, dadurch gekennzeichnet, dass die Flüssigkeitsverteileinrichtung (40) mehrere Flüssigkeitsverteilelemente (136, 138, 140, 142, 144, 146) aufweist, die sich quer zum Träger erstrecken, wobei mehrere Verdrängerpumpen (92, 94, 96, 98, 100, 102) vorgesehen sind, von denen jede eines der Flüssigkeitsverteilelemente (136, 138, 140, 142, 144, 146) beliefert.
Technisches Gebiet
Diese Erfindung befasst sich mit einem Verfahren zum Injizieren einer Flüssigkeit in ein Fleischprodukt und mit einer Maschine zur Durchführung dieses Verfahrens.
In der fleischverarbeitenden Industrie wird eine Beizoder Pökellösung in Bäuche und andere Fleischprodukte eingespritzt um das Fleischprodukt haltbar zu machen und zu würzen. Um geeignete Haltbarmachung und Würzung zu erreichen, ist es höchst erwünscht, dass eine gesteuerte Flüssigkeitsmenge eingespritzt und zum Produkt gleichmässig verteilt werde.
Stand der Technik
Zur jetzigen Zeit besteht das allgemeinakzeptierte Verfahren zum Haltbarmachen von Bäuchen und anderen Fleischprodukten darin, dass eine Pökel- oder Beizlösung durch eine Reihe von Nadeln in das Produkt eingespritzt, und dann das Produkt in einem Räucherhaus geräuchert wird. Es ist äusserst erwünscht, dass eine gesteuerte Menge von Flüssigkeit in das Produkt eingespritzt werde, und die gewünschte Menge oder Prozentanteil wird von vielen Faktoren abhängig.
Die auf den Anmelder lautende US-PS 3 863 556 beschreibt eine Maschine zum Injizieren einer Flüssigkeit in Fleischprodukte, welche die Dicke der Produkte abtastet und eine entsprechende Flüssigkeitsmenge injiziert. Beim Injektor dieser Maschine wird die Injektionsmenge durch die Länge der Zeit bestimmt, während der ein Steuerventil offen ist, wobei die Zeit, während der das Steuerventil offen ist, durch die Dicke des Bauches oder Fleischproduktes bestimmt wird. Bei dieser Maschine bewegt sich eine Abtaststange nach unten und ruht auf dem Fleischprodukt. Die durchschnittliche Höhe der Abtaststange bestimmt die Zeitdauer, während der Flüssigkeit fliesst. Eine Nockenanordnung wird dazu verwendet, die Ventilöffnungszeit in Abhängigkeit von der Dicke des Bauches zu regeln.
Wie bereits festgestellt, ist bei dieser Maschine die Injektionsmenge von der Zeit abhängig, während der das Ventil offen ist. Dieser Zeitfaktor ändert sich aber nicht genau proportional zur Dicke des Bauches, und zwar wegen einer Kurbelwirkung, durch welche der Flüssigkeitsverteiler und die Nadeln aufund abbewegt werden. In anderen Worten heisst das, wenn eine Kurbel sich am unteren Ende des Hubs befindet, dann sind die Nadeln in einem z. B. 2,5 cm dicken Bauch viel länger als in einem gleich dicken Bauch in der Mitte des Hubs.
Infolgedessen wird das Timing der Ventilöffnung kompliziert, was einen äusserst diffizilen Nocken erforderlich macht.
Es ist praktisch unmöglich, die Nadeln mit einer kon stanzen Geschwindigkeit in ein Fleischprodukt hineinzuführen. Es ist in der Technik üblich, einen Nocken oder eine Kurbel zu verwenden, wodurch die Nadeln im Fleischprodukt durch eine Kurbelwirkung bewegt werden. Dies beiden.
tet, dass sich die Geschwindigkeit der Nadeln während des gesamten Einstichs und Rückzugs ständig ändert. Die Geschwindigkeit der Nadeln startet von null an der Oberseite des Einstichhubs, geht zu einer Maximalgeschwindigkeit in der Mitte des Einstichhubs und fällt wieder auf null, wenn der maximale Einstich erreicht ist und der Rückzugshub beginnt. Der Rückzugshub verdoppelt die Geschwindigkeitskurve des Einstichhubs.
Da die Geschwindigkeit der von einer Kurbel angetriebenen Nadeln sich ändert, wird eine kontinuierlich liefernde Flüssigkeitspumpe eine unterschiedliche Menge Flüssigkeit in die verschiedenen Schichten des Fleischproduktes liefern.
Die Schichten, durch welche die Nadeln rascher hindurchgehen, erhalten weniger Flüssigkeit, und die Schichten, durch welche die Nadeln langsamer hindurchgehen, erhalten mehr Flüssigkeit. Dies erschwert die gleichförmige Verteilung der Flüssigkeit durch die Dicke des Fleischprodukts.
Darstellung der Erfindung
Demgemäss liegt ein Hauptziel der Erfindung in der Schaffung eines verbesserten Verfahrens und Maschine zum Injizieren von Flüssigkeit in Fleischprodukte so, dass der Fluss von Flüssigkeit durch die Injiziernadeln bei einer Geschwindigkeit erfolgt, die zur Geschwindigkeit der Nadeln proportional ist.
Ausgehend von einem Verfahren, wie es im Oberbegriff von Patentanspruch 1 umschrieben ist, wird diese Aufgabe gelöst durch eine Ausbildung wie sie im kennzeichnenden Teil des Patentanspruches 1 umschrieben ist. Ausgehend von einer Maschine wie sie im Oberbegriff von Patentanspruch 5 umschrieben ist, wird diese Aufgabe gelöst durch eine Ausbildung wie sie im kennzeichnenden Teil dieses Anspruches 5 umschrieben ist.
In bezug auf weitere Besonderheiten von Ausführungsarten des Verfahrens und der Maschine wird auf die abhängigen Ansprüche hingewiesen.

Bester Weg zur Ausführung der Erfindung
Die Injektionsmaschine gemäss der Erfindung zusammenfassend mit 10 bezeichnet und weitgehend mit der Injektionsmaschine 10, die in der US-PS 3 687058 und mit der Injektionsmaschine 10, die in der US-PS 3 863 556 beschrieben ist, identisch; sie wird deshalb nicht im Detail beschrieben, und es wird auf die Offenbarung in besagten Patentschriften
Bezug genommen, um die vorliegende Offenbarung zu er gänzen.
Die Maschine 10 besitzt einen Tisch 11 mit einem Förderer 12, welcher Fleischprodukte von links nach rechts, gesehen in Fig. 1, fördert.
Das Bezugszeichen 14 bezieht sich auf eine Antriebsquelle, die eine sich von ihr weg erstreckende Antriebswelle 16 hat, die ihrerseits eine Flüssigkeitspumpe 18 und eine Kette 20 antreibt, wobei sich die Kette 20 zu einem Kettenzahnrad 24 auf einer Welle 26 erstreckt, die drehbar auf der Maschine 10 gelagert ist. Die Welle 26 besitzt an den beiden Enden Exzenter 28 und 30. Hin- und hergehende Stangen 32 und 34 sind an den Exzentern 28 bzw. 30 angelenkt. Mit ihren oberen Enden sind sie an Tragarmen 36 und 38 angelenkt, von denen jeweils ein Ende an der Maschine angelenkt ist. Eine Flüssigkeitsverteileinrichtung 40 ist an den freien Enden der Tragarme 36 und 38 befestigt, wie es in Fig. 12 zu sehen ist.
Stäbe 42 und 44 sind mit den Exzentern 28 und 30 in der üblichen Weise verbunden und treiben den Förderer 12 an.
Auf der Welle 26 sitzt ein Nocken 46, wie dies in den Fig.
11 und 12 zu sehen ist. Weiterhin ist eine Welle 48 drehbar auf der Maschine 10 gelagert. Ein Kurbelarm 50 ist an einem Ende und ein Kurbelarm 52 ist etwa in der Mitte dieser Welle 48 befestigt. Eine Nockenrolle 54 ist am Kurbelarm 52 befestigt und liegt an der Nockenoberfläche des Nockens 46 an. Ein Stab 56 ist an einem Ende des Kurbelarms 52 angelenkt und wird durch einen Stossdämpfer, der auf Druckluftoder Federbasis arbeitet, nachgiebig nach unten gezogen.
Dadurch wird der Kurbel arm 52 nach unten gehalten, so dass die Nockenrolle 54 auf der Nockenoberfläche des Nokkens 46 abläuft.
Ein Stab 58 ist am unteren Ende des Kurbelarms 50 angelenkt und erstreckt sich nach oben. Wie in den Fig. 1 und 11 ersichtlich, ist der Kurbelarm 50 mit einem Schlitz 60 versehen, so dass der Stab 58 veränderlich befestigt werden kann, um damit den Hub des Stabs 58 zu verändern. Das obere Ende des Stabs 58 ist an einer Schwenkvorrichtung 62 angelenkt. Die Schwenkvorrichtung 62 besitzt eine Dreieckplatte 64, an welcher das obere Ende des Stabs 58 an einem Anlenkpunkt 66 angelenkt ist. Die Platte 64 ist drehfest an einem Befestigungspunkt 70 mit einer Welle 68 verbunden, so dass eine Schwenkbewegung der Platte 64 eine Drehung der Welle 68 zur Folge hat. Die Welle 68 ist mit beiden Enden an der Maschine 10 gelagert, wie dies in Fig. 12 dargestellt ist. Ein Arm 72 ist drehfest mit der Welle 68 verbunden und erstreckt sich von dieser nach unten.
Am unteren Teil ist ein Stab 74 angelenkt, der sich im wesentlichen horizontal erstreckt. Ein Stab 76 ist an einem Ende der Platte 64 angelenkt und erstreckt sich ebenfalls horizontal und parallel zum Stab 74. Eine Welle 78 ist an den freien Enden der Stäbe 74 und 76 angelenkt und betätigt daran befestigte Pumpenstössel 80, 82,84, 88 und 90. Diese Pumpenstössel stehen aus Verdrängerpumpen 92, 94, 96, 98, 100 und 102 vor. Da alle diese Verdrängerpumpen identisch sind, wird nur eine einzige Verdrängerpumpe mit den zugeordneten Teilen näher beschrieben. Die Fig. 6, 7 und 8 erläutern eine typische Verdrängungspumpe. Wie in den Zeichnungen ersichtlich ist, ist die Pumpe 92 in einem Pumpenrahmen 104 angeordnet. Die Verdrängungspumpe 92 besitzt einen Kolben 106, der fest mit dem Stab 80 verbunden ist.
Wie in Fig. 6 ersichtlich ist, ist der Kolben 106 mit einer Dichtung 108 versehen, die auf der Innenwandung der Pumpe 92 gleitet. Der Innenraum der Pumpe ist mit 110 bezeichnet. Die Pumpe 92 besitzt eine Zwischenwand 112 mit einer Öffnung 114. Die Öffnung 114 steht mit einer Bohrung 116 in Verbindung, die sich nach unten erstreckt und die mit einer Öffnung 118 in einem Ventilgehäuse 120 in Verbindung steht. Ein Ventil 122 ist im Ventilgehäuse 120 beweglich angeordnet. Ihm ist eine Feder 124 zugeordnet, die das Ventil 122 von der in Fig. 6 gezeigten Stellung in die in Fig. 7 gezeigte Stellung drückt. Das Ventil 122 ist mit einer ringförmigen Ausnehmung 126 versehen.
Das Ventil 122 besitzt ausserdem ein Endteil 128. Das innere Ende des Ventilgehäuses 120 steht mit einer Vorratskammer 130 in Verbindung, die ihrerseits mit einer Quelle für unter Druck stehende Injektionsflüssigkeit verbunden ist. Das Ventilgehäuse 120 besitzt eine Austrittsöffnung 132, von welcher sich eine Leitung 134 wegerstreckt.
Durch Einstellung des Hubs des Stabs 58 durch Bewegen im Schlitz 60 des Kurbelarms 50 kann die durch jede der Pumpen gelieferte Flüssigkeitsmenge sorgfältig reguliert und eingestellt werden. Dies unterscheidet die vorliegende Erfin dung von der bekannten Vorrichtung der US-PS 3 381 603, in welcher keine Mittel für die Einstellung der an das Fleischprodukt durch die Pumpen abgegebenen Flüssigkeitsmenge vorgesehen sind.
Die Flüssigkeitsverteileinrichtung 40 umfasst sechs einzelne Flüssigkeitsverteilelemente 136, 138, 140, 142, 144 und
146. Da alle Flüssigkeitsverteilelemente und ihre Tragestruktur identisch sind, wird nur ein Flüssigkeitsverteilelement
146 und die zugeordneten Teile näher beschrieben. Jedes der Flüssigkeitsverteilelemente bewegt sich aufgrund der Befestigung an den Tragarmen 36 und 38 als Einheit auf und ab.
Jedes Flüssigkeitsverteilelement besitzt eine Vielzahl von Injektionsnadeln 150, die sich von diesem wegerstrecken und in das Fleischprodukt 152 eindringen können. Wie in Fig. 4 ersichtlich, ist jede der Injektionsnadeln 150 gleitbar in Bohrungen angeordnet, die mit einer Leitung 134 in Verbindung steht. Jedes Flüssigkeitsverteilelement besitzt eine daran beweglich befestigte Abstreiferplatte 154, wie dies in den Fig. 3 und 4 dargestellt ist. Die Abstreiferplatte ist mit einer Vielzahl von Offnungen ausgerüstet, durch welche sich die Injektionsnadeln 150 erstrecken. Die Abstreiferplatte 154 besitzt einen sich nach aufwärts erstreckenden Teil 156 mit einem an dessen oberem Ende befestigten Stab 158, welcher sich nach innen in einen Zylinder 160 erstreckt. Wie in Fig. 5 ersichtlich ist, ist am Stab 158 ein Kolben 162 vorgesehen, der auf der Innenoberfläche des Zylinders 160 gleitet.
Der Zylinder 160 ist durch Bolzen 166 mit einem Träger 164 verbunden. Der Träger 164 ist starr mit dem Flüssigkeitsverteilelement verbunden und bewegt sich mit diesem. Ein Ventilbetätigungsarm 168 ist an einem Anlenkpunkt 170 am unteren Teil der Abstreiferplatte 154 angelenkt und erstreckt sich in einer Biegung nach oben und zur Seite, wie dies in Fig. 4 ersichtlich ist. Eine Rolle 172 ist drehbar am Träger 164 befestigt und liegt an einer Kurvenoberfläche 174 des Betätigungsarms 168 an. Wie in Fig. 4 zu sehen, liegt eine Kurvenoberfläche 176 des Betätigungsarms 168 an einem der Ventile einer Verdrängerpumpe an. Die Rolle 172 kann in eine Kerbe 172A am Betätigungsarm 168 (siehe Fig. 1) einrasten, zu welchem Zeitpunkt keine Flüssigkeit durch das Ventil 122 hindurchgeht.
Wenn es erwünscht ist, ein Fleischprodukt 152 zu injizieren, dann wird das Fleischprodukt 152 auf den Förderer 12 gelegt, wobei der Motor 14 angeschaltet ist. Durch den Motor 14 wird die Pumpe 18 betätigt, so dass Injektionsflüssigkeit zur Kammer 130 geführt wird. Der laufende Motor 14 treibt dabei auch die Welle 26 an, was zur Folge hat, dass der Flüssigkeitsverteiler 40 nach oben und unten hin- und herbewegt wird. Die Drehung der Welle 26 hat auch zur Folge, dass die Stäbe 42 und 44 hin- und hergehen, so dass der Förderer betätigt wird und das Fleischprodukt unterhalb des hin- und hergehenden Flüssigkeitsverteilelementes vorwärtsbewegt wird.
Angenommen, die Flüssigkeitsverteileinrichtung 40 befindet sich in ihrer oberen Stellung, dann ist die Lage des Nockens 46 zum Kurbelarm 52 derart, dass der Stab 58 sich in seiner obersten Stellung befindet, so dass die Pumpenstössel 80, 82, 84, 86, 88 und 90 aus den Zylindern der Verdrängerpumpen herausgezogen sind. Bei herausgezogenem Stössel kann Flüssigkeit von der Vorratskammer 130 über das innere Ende des Ventilgehäuses 120 nach oben durch die Bohrung 116 und durch die Öffnung 114 in den Pumpenraum 110 fliessen. Dieses Auffüllen des Raumes 110 mit der Flüssigkeit ist deshalb möglich, weil die Feder 124 das Ventil 122 nach rechts drückt und weil die Flüssigkeitsverteileinrichtung sich in ihrer obersten Lage befindet, so dass der Ventilbetätigungsarm 158 das Endteil 128 nicht nach innen drückt.
Wenn sich nun die Flüssigkeitsverteileinrichtung 40 nach unten bewegt, dann bewegt sich auch jede der Abstreiferplatten mit dem zugeordneten Flüssigkeitsverteilelement nach unten, und zwar aufgrund des durch den Kolben 162 im Zylinder 160 ausgeübten Drucks. Wenn die Abstreiferplatte 154 die obere Oberfläche des Fleischproduktes berührt, dann bleibt die Abstreiferplatte stehen, aber die Flüssigkeitsverteileinrichtung wandert immer noch nach unten. Wenn die Flüssigkeitsverteileinrichtung sich weiter als die Abstreiferplatte bewegt, dann hat die Rolle 172 auf der Flüssigkeitsverteileinrichtung ein Schwenken des Ventilbetätigungsarms 168 entgegen dem Uhrzeigersinn zur Folge, wie dies in Fig. 4 zu sehen ist.
Dies hat wiederum zur Folge, dass das Ventil 122 sich in seinem Gehäuse 120 nach innen bewegt, so dass Flüssigkeit vom Raum 110 durch die Öffnung 114, die Bohrung 116, die Öffnung 118 und die Öffnung 132 in die Leitung 134 gelangt, und zwar aufgrund der Stellung des Ventils 122, die in Fig. 4 zu sehen ist. Wenn zu diesem Zeitpunkt nichts geschieht, dann wird keine Flüssigkeit der Flüssigkeitsverteileinrichtung zugeleitet, da innerhalb des Raums 110 kein Druck herrscht, bis die Verdrängerpumpe nach rechts bewegt wird, wie dies in Fig. 6 zu sehen ist. Die Bewegung der Verdrängerpumpe wird durch den Nocken 46 kontrolliert, wie dies weiter oben beschrieben wurde, um die Bewegung der Verdrängerpumpen im Verhältnis zur Bewegung der Flüssigkeitsverteileinrichtung zu koordinieren.
Wenn also der Nocken 46 die Stössel der Verdrängerpumpe nach innen drückt, dann gibt die Verdrängerpumpe ein vorbestimmtes Volumen an Injektionsflüssigkeit zur Flüssigkeitsverteileinrichtung ab, wobei die Menge der der Flüssigkeitsverteileinrichtung zugeführten Flüssigkeit von der Flüssigkeitsmenge abhängt, die am Ventil 122 vorbeifliessen kann.
Wenn nun ein extrem dickes Fleischprodukt durch die Abstreiferplatte abgetastet wird, dann wird die Rolle 172 den Ventilbetätigungsarm 168 viel eher während der Bewegung der Flüssigkeitsverteileinrichtung schwenken, so dass eine zusätzliche Menge an Injektionsflüssigkeit zur Flüssigkeitsverteileinrichtung abgegeben wird. Die Rolle 172 rastet normalerweise in der Kerbe 1 72A ein, bis die Nadeln in das Fleischprodukt eindringen, und auch beim Herausziehen aus dem Fleischprodukt, so dass der Flüssigkeitsfluss abgeschaltet ist, wenn die Nadeln nicht in das Fleischprodukt eindringen.
Dadurch, dass mehrere Abstreiferplatten und Verdrängerpumpen vorgesehen sind, ist es möglich, die Dicke des Fleischproduktes in viel genauerer Form abzutasten, wie dies in Fig. 3 zu sehen ist.
Die Abwärtsbewegung der Nadeln wird hier als Einstichhub und die Aufwärtsbewegung als Auszughub bezeichnet. Die Nadeln sind in der Tat nur während des unteren Teils des Einstichhubs und des Auszughubs im Fleischprodukt. Die Geschwindigkeit der Nadeln ist in der Mitte eines jeden Hubs am grössten und fällt am Ende eines jeden Hubs praktisch augenblicklich auf null ab.
Der Nocken 46 macht es möglich, Flüssigkeit durch die Nadeln sowohl während des Einstichhubs als auch des Auszughubs zuzuführen. Die Verwendung eines Kurbelarms anstelle eines Nockens würde es nur erlauben, dass Flüssigkeit nur während eines Hubs und nicht während des anderen fliesst. Wie oben bereits festgestellt, sind Mittel vorgesehen, dass Flüssigkeit durch die Nadeln nur dann fliesst, wenn sich die Nadeln im Fleischprodukt befinden. Diese wichtige Aufgabe des Nockens 46 und das Vermögen der Pumpe, Flüssigkeit durch die Nadeln mit einer Geschwindigkeit proportional zur Geschwindigkeit der Nadeln zuführen, wären auch dann gegeben, wenn die Flüssigkeit während der gesamten Zeit der Einstich- und Auszughübe fliessen würde und nicht nur während der Zeit, während der die Nadeln sich im Fleischprodukt befinden.
Es ist also ersichtlich, dass eine Maschine geschaffen wurde, durch welche Injektionsflüssigkeit dem Fleischprodukt zugeführt wird, wobei eine Abstreiferplatteneinheit die Dicke des Fleischproduktes abtastet und diese Abtastung dazu verwendet wird, das Fördervolumen der Pumpe und nicht die Betätigungszeit der Pumpe zu kontrollieren. Durch die Verwendung einer einfachen Verdrängerpumpe, deren Hub mit dem Hub des Injektors zeitlich abgestimmt ist, ist es möglich, die Fördermenge je Injektion zu kontrollieren. Eine solche Methode ergibt eine viel bessere und genauere Kontrolle der gewünschten Injektionsmenge. Es ist also ersichtlich, dass die Maschine mindestens alle die angeführten Zielsetzungen erfüllt.

State of the art
At the present time, the generally accepted method of preserving bellies and other meat products is to inject a pickle or pickling solution into the product through a series of needles and then smoke the product in a smokehouse. It is highly desirable that a controlled amount of liquid be injected into the product, and the desired amount or percentage will depend on many factors.
Applicant's U.S. Patent 3,863,556 describes a machine for injecting a liquid into meat products which scans the thickness of the products and injects a corresponding amount of liquid. In the injector of this machine, the amount of injection is determined by the length of time that a control valve is open, and the time that the control valve is open by the thickness of the belly or meat product. In this machine, a scanning rod moves down and rests on the meat product. The average height of the sensing rod determines the length of time that the liquid flows. A cam arrangement is used to regulate the valve opening time depending on the thickness of the abdomen.
As already stated, the injection quantity in this machine depends on the time during which the valve is open. However, this time factor does not change exactly in proportion to the thickness of the abdomen, because of a crank effect by which the liquid distributor and the needles are moved up and down. In other words, if a crank is at the lower end of the stroke, then the needles are in a z. B. 2.5 cm thick belly much longer than in an equally thick belly in the middle of the stroke.
As a result, the timing of the valve opening becomes complicated, which requires an extremely difficult cam.
It is practically impossible to insert the needles into a meat product at a constant speed. It is common in the art to use a cam or crank which causes the needles in the meat product to be moved by a crank action. These two.
that the speed of the needles changes constantly during the entire insertion and withdrawal. The speed of the needles starts from zero at the top of the puncture stroke, goes to a maximum speed in the middle of the puncture stroke and drops back to zero when the maximum puncture is reached and the retraction stroke begins. The retraction stroke doubles the plunge stroke speed curve.
As the speed of the needles driven by a crank changes, a continuously delivering liquid pump will deliver a different amount of liquid to the different layers of the meat product.
The layers through which the needles pass more quickly receive less fluid and the layers through which the needles pass more slowly receive more fluid. This complicates the uniform distribution of the liquid due to the thickness of the meat product.
Presentation of the invention
Accordingly, a primary object of the invention is to provide an improved method and machine for injecting liquid into meat products so that the flow of liquid through the injection needles occurs at a rate proportional to the speed of the needles.
Starting from a method as described in the preamble of claim 1, this object is achieved by a training as described in the characterizing part of claim 1. Starting from a machine as described in the preamble of claim 5, this object is achieved by a training as described in the characterizing part of this claim 5.
With regard to further special features of embodiments of the method and the machine, reference is made to the dependent claims.

Best way to carry out the invention
The injection machine according to the invention is referred to collectively as 10 and largely identical to the injection machine 10 described in US Pat. No. 3,688,7058 and with the injection machine 10 described in US Pat. No. 3,863,556; therefore it is not described in detail and it is upon the disclosure in said patents
Reference is made to complete the present disclosure.
The machine 10 has a table 11 with a conveyor 12 which conveys meat products from left to right, as seen in FIG. 1.
Reference numeral 14 refers to a drive source having a drive shaft 16 extending therefrom which in turn drives a liquid pump 18 and chain 20, the chain 20 extending to a sprocket 24 on a shaft 26 which is rotatable on the shaft 26 Machine 10 is stored. The shaft 26 has eccentrics 28 and 30 at both ends. Reciprocating rods 32 and 34 are articulated on the eccentrics 28 and 30, respectively. With their upper ends they are hinged to support arms 36 and 38, one end of which is hinged to the machine. A liquid distribution device 40 is attached to the free ends of the support arms 36 and 38, as can be seen in FIG. 12.
Bars 42 and 44 are connected to the eccentrics 28 and 30 in the usual manner and drive the conveyor 12.
A cam 46 sits on the shaft 26, as shown in FIGS.
11 and 12 can be seen. Furthermore, a shaft 48 is rotatably mounted on the machine 10. A crank arm 50 is attached to one end and a crank arm 52 is attached approximately in the middle of this shaft 48. A cam roller 54 is attached to the crank arm 52 and abuts the cam surface of the cam 46. A rod 56 is hinged to one end of the crank arm 52 and is resiliently pulled down by a shock absorber that operates on a compressed air or spring basis.
As a result, the crank arm 52 is held down, so that the cam roller 54 runs on the cam surface of the cam 46.
A rod 58 is hinged to the lower end of the crank arm 50 and extends upward. As can be seen in FIGS. 1 and 11, the crank arm 50 is provided with a slot 60 so that the rod 58 can be variably attached in order to change the stroke of the rod 58. The upper end of the rod 58 is hinged to a swivel device 62. The swiveling device 62 has a triangular plate 64, on which the upper end of the rod 58 is articulated at an articulation point 66. The plate 64 is connected to a shaft 68 in a rotationally fixed manner at a fastening point 70, so that a pivoting movement of the plate 64 results in the shaft 68 rotating. The shaft 68 is supported on the machine 10 with both ends, as shown in FIG. 12. An arm 72 is rotatably connected to the shaft 68 and extends downward therefrom.
A rod 74 is articulated on the lower part and extends essentially horizontally. A rod 76 is hinged to one end of plate 64 and also extends horizontally and parallel to rod 74. A shaft 78 is hinged to the free ends of rods 74 and 76 and actuates pump lifters 80, 82, 84, 88 and 90 attached thereto These pump tappets protrude from displacement pumps 92, 94, 96, 98, 100 and 102. Since all these positive displacement pumps are identical, only a single positive displacement pump with the assigned parts is described in more detail. 6, 7 and 8 illustrate a typical positive displacement pump. As can be seen in the drawings, the pump 92 is arranged in a pump frame 104. The displacement pump 92 has a piston 106 which is fixedly connected to the rod 80.
As can be seen in FIG. 6, the piston 106 is provided with a seal 108 which slides on the inner wall of the pump 92. The interior of the pump is designated 110. The pump 92 has an intermediate wall 112 with an opening 114. The opening 114 communicates with a bore 116 which extends downwards and which communicates with an opening 118 in a valve housing 120. A valve 122 is movably arranged in the valve housing 120. A spring 124 is assigned to it, which presses the valve 122 from the position shown in FIG. 6 into the position shown in FIG. 7. The valve 122 is provided with an annular recess 126.
The valve 122 also has an end portion 128. The inner end of the valve housing 120 communicates with a storage chamber 130, which in turn is connected to a source of pressurized injection liquid. The valve housing 120 has an outlet opening 132, from which a line 134 extends.
By adjusting the stroke of the rod 58 by moving it in the slot 60 of the crank arm 50, the amount of fluid delivered by each of the pumps can be carefully regulated and adjusted. This distinguishes the present inven tion from the known device of US Pat. No. 3,381,603, in which no means are provided for adjusting the amount of liquid delivered to the meat product by the pumps.
The liquid distribution device 40 comprises six individual liquid distribution elements 136, 138, 140, 142, 144 and
146. Since all liquid distribution elements and their carrying structure are identical, only one liquid distribution element becomes
146 and the associated parts described in more detail. Each of the liquid distribution elements moves up and down as a unit due to the attachment to the support arms 36 and 38.
Each liquid distribution element has a multiplicity of injection needles 150, which extend away from it and can penetrate into the meat product 152. As can be seen in FIG. 4, each of the injection needles 150 is slidably arranged in bores which are connected to a line 134. Each liquid distribution element has a wiper plate 154 movably attached to it, as shown in FIGS. 3 and 4. The wiper plate is equipped with a multiplicity of openings through which the injection needles 150 extend. The wiper plate 154 has an upwardly extending portion 156 with a rod 158 attached to its upper end, which extends inwardly into a cylinder 160. As can be seen in FIG. 5, a piston 162 is provided on the rod 158, which slides on the inner surface of the cylinder 160.
The cylinder 160 is connected to a carrier 164 by bolts 166. Carrier 164 is rigidly connected to and moves with the liquid distribution element. A valve actuation arm 168 is articulated at a pivot point 170 on the lower part of the wiper plate 154 and extends in a bend upwards and to the side, as can be seen in FIG. 4. A roller 172 is rotatably attached to the carrier 164 and abuts a cam surface 174 of the actuator arm 168. As can be seen in FIG. 4, a cam surface 176 of the actuating arm 168 bears against one of the valves of a positive displacement pump. The roller 172 can snap into a notch 172A on the actuating arm 168 (see FIG. 1) at which time no liquid will pass through the valve 122.
If it is desired to inject a meat product 152, the meat product 152 is placed on the conveyor 12 with the motor 14 on. The pump 18 is actuated by the motor 14, so that injection liquid is led to the chamber 130. The running motor 14 also drives the shaft 26, with the result that the liquid distributor 40 is moved back and forth up and down. Rotation of the shaft 26 also causes the rods 42 and 44 to reciprocate so that the conveyor is actuated and the meat product is moved forward beneath the reciprocating liquid distribution element.
Assuming the liquid distribution device 40 is in its upper position, the position of the cam 46 relative to the crank arm 52 is such that the rod 58 is in its uppermost position, so that the pump tappets 80, 82, 84, 86, 88 and 90 are pulled out of the cylinders of the positive displacement pumps. When the plunger is pulled out, liquid can flow upwards from the storage chamber 130 via the inner end of the valve housing 120 through the bore 116 and through the opening 114 into the pump chamber 110. This filling of the space 110 with the liquid is possible because the spring 124 pushes the valve 122 to the right and because the liquid distribution device is in its uppermost position, so that the valve actuation arm 158 does not press the end part 128 inwards.
Now, when the liquid distribution device 40 moves downward, each of the stripper plates with the associated liquid distribution element also moves downward, due to the pressure exerted by the piston 162 in the cylinder 160. If the stripper plate 154 contacts the upper surface of the meat product, then the scraper plate stops, but the liquid distribution device still moves downwards. When the liquid manifold moves further than the scraper plate, roller 172 on the liquid manifold causes valve actuator arm 168 to pivot counterclockwise, as shown in FIG. 4.
This, in turn, causes valve 122 to move inwardly in housing 120, so that liquid from space 110 passes through opening 114, bore 116, opening 118, and opening 132 into line 134 because of the position of the valve 122, which can be seen in Fig. 4. If nothing happens at this time, then no liquid is supplied to the liquid distribution device since there is no pressure within space 110 until the positive displacement pump is moved to the right, as can be seen in FIG. 6. The movement of the positive displacement pump is controlled by the cam 46, as described above, to coordinate the movement of the positive displacement pumps in relation to the movement of the liquid distribution device.
Thus, when the cam 46 pushes the plunger of the displacement pump inward, the displacement pump delivers a predetermined volume of injection liquid to the liquid distribution device, the amount of liquid supplied to the liquid distribution device depending on the amount of liquid that can flow past the valve 122.
If an extremely thick meat product is now scanned by the stripper plate, then the roller 172 will pivot the valve actuation arm 168 much earlier during the movement of the liquid distributor, so that an additional amount of injection liquid is dispensed to the liquid distributor. The roller 172 normally snaps into the notch 1 72A until the needles enter the meat product and also when it is withdrawn from the meat product so that the flow of liquid is shut off when the needles do not enter the meat product.
The fact that several scraper plates and displacement pumps are provided makes it possible to scan the thickness of the meat product in a much more precise form, as can be seen in FIG. 3.
The downward movement of the needles is referred to here as the puncture stroke and the upward movement as the pull-out stroke. Indeed, the needles are only in the meat product during the lower part of the insertion stroke and the extraction stroke. The speed of the needles is greatest in the middle of each stroke and practically drops to zero at the end of each stroke.
The cam 46 makes it possible to supply liquid through the needles during both the insertion stroke and the extraction stroke. Using a crank arm instead of a cam would only allow fluid to flow only during one stroke and not during the other. As already stated above, means are provided so that liquid only flows through the needles when the needles are in the meat product. This important task of the cam 46 and the ability of the pump to deliver liquid through the needles at a rate proportional to the speed of the needles would also exist if the liquid were to flow throughout the time of the puncture and extension strokes and not only during the Time during which the needles are in the meat product.
It can thus be seen that a machine has been created by means of which injection liquid is supplied to the meat product, a wiper plate unit scanning the thickness of the meat product and this scanning being used to control the delivery volume of the pump and not the actuation time of the pump. By using a simple positive displacement pump, the stroke of which is synchronized with the stroke of the injector, it is possible to control the delivery rate per injection. Such a method gives a much better and more precise control of the desired injection amount. It can therefore be seen that the machine fulfills at least all of the stated objectives.
