Il est déjà connu d'expanser du chocolat sous vide et un appareil de refroidissement sous vide est couram ment utilisé pour fabriquer du chocolat expansé, mais sa production est insuffisante, compte tenu de son prix et, de plus, il s'agit d'un appareil fixe dont l'emploi est compliqué.

Etant donné que cet appareil refroidit le chocolat par convection avec une atmosphère refroidie par des tuyaux de refroidissement, il faut beaucoup de temps pour refroidir le chocolat de façon à le solidifier, et, de plus, le chocolat est solidifié par l'atmosphère froide produite par les tuyaux de refroidissement au cours d'une étape de réduction de la pression de 760 à 10 mmHg, avec pour résultat que le chocolat n'est pas suffisamment expansé. En conséquence, pour obtenir une expansion uniforme idéale du chocolat, il faut rame ner chaque fois les tuyaux de refroidissement à la tem pérature normale, après quoi les étapes d'expansion et de refroidissement du chocolat doivent être répétées, d'où il résulte une grande perte de temps.
Du fait que l'appareil de refroidissement sous vide est un appareil fixe, le chocolat doit y être introduit et doit en être enlevé à la main.
En général, pour obtenir une expansion parfaite du chocolat, celui-ci doit être expansé dans les deux minu tes qui suivent son introduction dans le moule, car il perd sa chaleur au bout de ce temps. En conséquence, il est nécessaire de prévoir un certain nombre d'appa reils de refroidissement sous vide. Or, étant donné que les appareils de refroidissement sous vide classiques sont du type fixe, comme indiqué, le chocolat va se refroidir pendant qu'il est emmené vers un appareil éloigné de la machine de remplissage sur une courroie transporteuse, tandis qu'il reste chaud pendant qu'il est transféré dans un appareil proche de cette machine.

Lorsque le chocolat expansé sous vide n'est pas suf fisamment solidifié, sa mousse retombe quand il vient au contact de la pression atmosphérique normale et, en conséquence, le coûteux tunnel de refroidissement clas sique devient inutile.
La présente invention se propose d'éliminer les in convénients mentionnés ci-dessus des appareils d'expan sion de chocolat classiques.
L'appareil pour expanser des produits alimentaires thermoplastiques sous vide selon l'invention comprend un moule, un couvercle pour ledit moule, un joint pour établir une étanchéité entre le moule et son couvercle, et un mécanisme de valve monté sur le couvercle pour relier, de façon étanche, ledit moule à une source de vide.
Dans une exécution préférée le mécanisme peut com prendre une première valve dont l'une des extrémités est reliée à une source de vide, une seconde valve mon tée hermétiquement sur ledit couvercle et qui est reliée, à l'une de ses extrémités, à l'autre extrémité de la pre mière valve et à l'atmosphère et dont l'autre extrémité communique avec l'intérieur dudit moule.
Un avantage de la présente invention est de fournir un appareil pour expanser des produits alimentaires thermoplastiques sous vide, pouvant opérer par un rac cordement direct à une source de vide à la fois simple et bon marché et permettant d'utiliser plus économique ment les équipements d'expansion de chocolat classi- ques.
Les caractéristiques et avantages de l'invention res- sortiront de la description qui va suivre, donnée à titre d'exemple, en référence au dessin annexé, dans lequel - la fig 1. est une vue en coupe d'un appareil pour expanser des produits alimentaires thermoplastiques con forme à l'invention; - la fig. 2 est une vue en coupe d'un autre mode de réalisation de l'appareil selon l'invention; et - la fig. 3 est une vue en perspective d'un robinet utilisé dans le mode de réalisation de la fig. 2.
On va se référer maintenant au dessin, et plus parti culièrement à la fig. 1 qui illustre un premier mode de réalisation de l'appareil selon l'invention.
L'appareil représenté comprend un moule 1 rempli avec un produit alimentaire thermoplastique 2, par exemple avec du chocolat ou du sucre candi, un couver cle 4 placé sur le moule 1 avec interposition d'un joint 3 pour réaliser l'étanchéité entre eux, ce couvercle étant en métal ou en résine synthétique, et un mécanisme de valve relié à une pompe à vide (non représentée).
Ce mécanisme de valve comprend un cylindre de liaison creux 5 dont l'une des extrémités est montée de façon étanche sur le couvercle 4 au moyen d'un élément de fixation 8, et qui renferme un clapet sphérique 6 et un ressort 7 disposé pour solliciter le clapet 6 vers l'autre extrémité du cylindre 5, ainsi qu'un prolongement annu laire 14 formé sur cette autre extrémité du cylindre 5, le clapet sphérique s'ouvrant en repoussant sa queue vers l'intérieur du cylindre, afin de mettre celui-ci en com munication avec l'intérieur du moule 1, un manchon de guidage 9 s'appliquant de façon étanche contre cette extrémité du cylindre 5 par l'intermédiaire d'un coussi net 10,
un second cylindre de liaison creux 11 dont l'une des extrémités s'applique de façon étanche contre l'autre extrémité du manchon de guidage 9, tandis que son autre extrémité communique avec une source de vide,par exem ple avec une pompe à vide (non représentée), à travers un raccord 12 permettant de fixer un tuyau de caout chouc aboutissant à cette pompe, le cylindre<B>11</B> renfer mant également un clapet sphérique 6 et un ressort 7 disposé de façon à fermer celui-ci, le clapet 6 s'ouvrant en repoussant sa queue pour établir, à travers ce cylin dre creux,
une communication avec la source de vide, et comportant aussi un joint annulaire 13 dont la posi tion correspond à celle du prolongement 14 du cylindre creux 5, afin d'établir une liaison étanche entre les cylin dres 11 et 5.
Le fonctionnement de l'appareil ci-dessus est le sui vant: on verse l'aliment thermoplastique 2 dans le mou le 1, puis on ferme celui-ci avec le couvercle 4. Ensuite, on relie une pompe à vide au raccord 12 du cylindre de liaison 11, et on enfile le manchon de guidage 9 sur le cylindre de liaison 5 jusqu'à ce que les deux clapets sphériques 6 s'ouvrent, et que le prolongement 14 du cylindre 5 vienne s'appliquer de façon étanche contre le joint 13 du cylindre 11 en établissant une liaison étan che, faisant ainsi communiquer la pompe à vide avec l'intérieur du moule 1 pour y créer un vide partiel.
