Comptoir pour chauffer des récipients à l'air chaud
La présente invention concerne un comptoir pour chauffer des récipients à l'air chaud.
Par récipient , on entend ici aussi bien les récipients relativement creux, comme des bacs, que les récipients relativement plats, comme des assiettes.
Ce type de comptoir permet simultanément de ramener et maintenir à bonne température les récipients de transport ou de distribution contenant les portions alimentaires.
I1 est étudié pour s'adapter à des cas très variés de restauration, ou télérestauration collective, avec des conditions d'exploitation faciles et économiques.
Ce comptoir comprend une enfilade d'éléments creux amovibles délimitant des compartiments et assemblés de proche en proche par une face d'assemblage verticale, chaque face d'assemblage d'un élément comportant au moins deux ouvertures constituant respectivement une ouverture d'entrée d'air dans l'élément et une ouverture de sortie d'air hors de l'élément, l'ouverture d'entrée d'air de cette face d'assemblage étant reliée par un canal de passage d'air situé à l'intérieur de l'élément, soit à l'ouverture de sortie d'air de cette face si l'élément ne comporte qu'une face d'assemblage, soit à l'ouverture de sortie d'air de l'autre face d'assemblage de l'élément si l'élément comporte deux faces d'assemblage,
lesdits canaux communiquant de proche en proche par les ouvertures des faces d'assemblage lorsque les éléments sont assemblés de proche en proche face d'assemblage contre face d'assemblage de telle sorte que les canaux constituent dans la longueur du comptoir un circuit d'air, l'un au moins des éléments du comptoir étant un élément aérotherme comportant un ventilateur apte à aspirer l'air dudit circuit par l'ouverture d'entrée d'air de la face d'assemblage de l'élément aérotherme et à le refouler dans ledit circuit par l'ouverture de sortie d'air de cette face et comportant des moyens pour chauffer l'air à l'intérieur de l'élément de façon que l'air refoulé soit chaud, et l'un au moins des autres éléments du comptoir comportant un compartiment à récipients traversé par ledit circuit d'air.

Le comptoir représenté sur la fig. 1 comprend en enfilade un élément aérotherme 1, un élément chaufferécipient 2 (pour assiettes), un autre élément chaufferécipient 3 (pour récipient creux) et un élément d'extrémité 4, le tout sur un piètement 5.
L'élément aérotherme, dont la structure interne apparaît sur les coupes des fig. 4 et 5, comprend un cloisonnement qui détermine, à l'intérieur de l'élément, une chambre d'aspiration 6 située à la partie supérieure et ouverte sur toute la largeur de la face d'assemblage 7 de l'élément et une chambre de refoulement 8 située à la partie inférieure de l'élément et ouverte sur la face d'assemblage 7 par une ouverture 9 inférieure et centrale.
Un ventilateur 10 aspire l'air dans la chambre d'aspiration et le refoule dans la chambre de refoulement où l'air est chauffé, par exemple par un dispositif de chauffage électrique 11.
Sur le côté de l'élément aérotherme est disposé un tableau de commande 12 du fonctionnement du ventilateur et du chauffage.
L'élément suivant du comptoir est un élément chauffe-assiettes 2.
Cet élément comporte (fig. 4 et 6) un coffre 13 dans lequel un cloisonnement longitudinal 14 délimite supérieurement un canal 16 de passage de l'air venant de l'élément aérotherme et délimite inférieurement un logement 15 à récipients, en l'espèce des assiettes, ce logement constituant également un canal de passage pour l'air retournant à l'aérotherme.
Dans la réalisation représentée, le coffre est ouvert à ses deux extrémités longitudinales 17, 18 qui constituent les faces d'assemblage de l'élément 2.
Le cloisonnement 14 peut être une simple cloison horizontale située dans la moitié inférieure de la hauteur du coffre, par exemple à peu près, au quart inférieur de la hauteur du coffre.
Dans une réalisation perfectionnée, le coffre comporte des moyens de communication d'air entre les canaux délimités dans le coffre.
Par exemple, il s'agit d'un volet 19 qui, à l'extrémité de sortie du canal de passage de l'air venant de l'élément aérotherme, partage cet air en une fraction qui continue vers l'élément suivant du comptoir et une fraction qui passe directement dans ledit logement du coffre, comme cela est indiqué par des flèches sur la fig. 1. Le volet peut être réglable et actionné par une manivelle (non représentée).
Le chauffe-assiettes 2 est suivi d'un élément 3 destiné à chauffer des récipients 20.
Cet élément comprend (fig. 4 et 7) un bac 21 ouvert à sa partie supérieure et muni dans le fond d'un cloisonnement 22, constitué en l'espèce de deux cloisons verticales 22a et 22b, qui détermine un couloir longitudinal central 23 flanqué de deux couloirs latéraux 24, la partie du bac située au-dessus du couloir central constituant un logement 25 pour les récipients 20 introduits dans le bac par l'ouverture 26 de la partie supérieure du bac, ledit couloir central 23 constituant un canal de passage pour l'air venant de l'élément aérotherme et lesdits couloirs latéraux 24 constituant un canal de passage pour l'air retournant à l'élément aérotherme.
Dans l'exemple représenté, le bac est ouvert à ses deux extrémités longitudinales 27, 28 qui constituent les faces d'assemblage de l'élément.
Les récipients 20 s'encastrent dans l'ouverture 26 de la partie supérieure du bac et assurent ainsi sensiblement l'étanchéité à l'air de cette ouverture. Dans la pratique, les récipients sont munis de rebords 29 qui viennent reposer sur les bords de l'ouverture 26.
Les fonds 30 des récipients 20 coopèrent avec le cloisonnement 22 pour délimiter le canal 23 de passage de l'air venant de l'élément aérotherme, et les parois latérales longitudinales 31 des récipients coopèrent avec le cloisonnement pour délimiter le canal 24 de passage de l'air retournant à l'élément aérotherme.
Le dernier élément 4 du comptoir de la fig. 1 est un simple capot latéral qui constitue un couloir 32 (fig. 4) de communication entre les ouvertures de la face d'assemblage 28 de l'élément 3 qui précède.

L'élément 3' comporte sous le bac, une armoire 33 constituant une réserve de récipients qui communique, au début de l'élément, avec les couloirs latéraux 24' par lesquels l'air retourne à l'élément aérotherme (fig. 8) et, en bout de l'élément, avec le couloir central 23' par lequel l'air provient de l'élément aérotherme (fig. 9).
Les fig. 10 et 1 1 représentent une autre variante de réalisation d'un élément chauffe-récipient, dans laquelle l'élément 3" comporte dans le couloir central 23" du fond du bac un dispositif de chauffage auxiliaire de l'air, par exemple des résistances de chauffage 34 et un réflecteur 35.
Dans les exemples représentés, les éléments ont généralement des formes parallélépipédiques, présentent des faces d'assemblage verticales et parallèles et sont assemblés par boulonnage de leurs faces d'assemblage avec interposition de joints.
Les fig. 2 et 3 montrent pour l'exemple des vues partielles agrandies d'un assemblage bord à bord de deux faces d'assemblage, par exemple les faces 7 et 17 des éléments 1 et 2, au moyen de boulons 36, avec interposition d'un joint périphérique 37.
Les éléments comportent ou non un support extérieur longitudinal 38 pour servir à la distribution des plats ou des récipients (fig. 1), ou un support extérieur longitudinal 39 pour recevoir les couvercles des récipients.
Ils sont montés sur roulettes ou sur piètement.
En choisissant à volonté le nombre et la combinaison des éléments, on peut réaliser tout comptoir désiré.
Un deuxième élément aérotherme peut être placé à la deuxième extrémité du comptoir si son importance le justifie.
Dans tous les cas, le comptoir, une fois assemblé, constitue, grâce aux canaux ou espaces ménagés à l'intérieur des éléments pour une circulation logique de l'air, un réseau unique de chauffage aérotherme en circuit sensiblement fermé.
Counter for heating containers with hot air
The present invention relates to a counter for heating containers with hot air.
By container is meant here both relatively hollow containers, such as tubs, and relatively flat containers, such as plates.
This type of counter simultaneously enables the transport or distribution containers containing the food portions to be brought back and maintained at the right temperature.
It is designed to adapt to very varied cases of catering, or collective remote catering, with easy and economical operating conditions.
This counter comprises a row of removable hollow elements delimiting compartments and assembled step by step by a vertical assembly face, each assembly face of an element comprising at least two openings respectively constituting an inlet opening of air in the element and an air outlet opening out of the element, the air inlet opening of this assembly face being connected by an air passage channel located inside the element, either to the air outlet opening of this face if the element has only one assembly face, or to the air outlet opening of the other assembly face of the element if the element has two assembly faces,
said channels communicating step by step through the openings of the assembly faces when the elements are assembled from close to close assembly face against assembly face so that the channels constitute an air circuit along the length of the counter , at least one of the elements of the counter being an air heater element comprising a fan able to suck the air from said circuit through the air inlet opening of the assembly face of the air heater element and to discharge it in said circuit through the air outlet opening of this face and comprising means for heating the air inside the element so that the discharged air is hot, and at least one of the others elements of the counter comprising a container compartment through which said air circuit passes.

The counter shown in fig. 1 comprises in a row an air heater element 1, a heating element container 2 (for plates), another heating element container 3 (for hollow container) and an end element 4, all on a base 5.
The air heater element, the internal structure of which appears on the sections of fig. 4 and 5, comprises a partition which determines, inside the element, a suction chamber 6 located at the upper part and open over the entire width of the assembly face 7 of the element and a chamber discharge 8 located at the lower part of the element and open on the assembly face 7 by a lower and central opening 9.
A fan 10 sucks the air in the suction chamber and forces it back into the discharge chamber where the air is heated, for example by an electric heater 11.
On the side of the air heater element is arranged a control panel 12 for the operation of the fan and the heating.
The next counter element is a plate warmer 2.
This element comprises (fig. 4 and 6) a box 13 in which a longitudinal partition 14 above delimits a channel 16 for the passage of air from the air heater element and below delimits a housing 15 for containers, in this case plates, this housing also constituting a passage channel for the air returning to the unit heater.
In the embodiment shown, the box is open at its two longitudinal ends 17, 18 which constitute the assembly faces of the element 2.
The partition 14 can be a simple horizontal partition located in the lower half of the height of the trunk, for example approximately, at the lower quarter of the height of the trunk.
In an improved embodiment, the trunk includes air communication means between the channels delimited in the trunk.
For example, this is a shutter 19 which, at the outlet end of the air passage channel coming from the air heater element, divides this air into a fraction which continues towards the next element of the counter. and a fraction which passes directly into said housing of the safe, as indicated by arrows in FIG. 1. The shutter can be adjustable and operated by a crank (not shown).
The plate heater 2 is followed by an element 3 intended to heat containers 20.
This element comprises (fig. 4 and 7) a tray 21 open at its upper part and provided at the bottom with a partition 22, in this case consisting of two vertical partitions 22a and 22b, which determines a central longitudinal corridor 23 flanked two side lanes 24, the part of the bin located above the central lane constituting a housing 25 for the containers 20 introduced into the bin through the opening 26 of the upper part of the bin, said central lane 23 constituting a passage channel for the air coming from the air heater element and said lateral passages 24 constituting a passage channel for the air returning to the air heater element.
In the example shown, the tray is open at its two longitudinal ends 27, 28 which constitute the assembly faces of the element.
The receptacles 20 fit into the opening 26 of the upper part of the tank and thus substantially ensure the airtightness of this opening. In practice, the containers are provided with edges 29 which come to rest on the edges of the opening 26.
The bottoms 30 of the containers 20 cooperate with the partition 22 to delimit the channel 23 for the passage of air from the heater element, and the longitudinal side walls 31 of the containers cooperate with the partition to define the channel 24 for the passage of the air. air returning to the heater element.
The last element 4 of the counter in FIG. 1 is a simple side cover which constitutes a passage 32 (FIG. 4) for communication between the openings of the assembly face 28 of the element 3 above.

Figs. 10 and 11 show another variant embodiment of a container heating element, in which the element 3 "comprises in the central passage 23" of the bottom of the tank an auxiliary air heating device, for example resistors heater 34 and a reflector 35.
In the examples shown, the elements generally have parallelepipedal shapes, have vertical and parallel assembly faces and are assembled by bolting their assembly faces with interposition of joints.
Figs. 2 and 3 show for the example enlarged partial views of an edge-to-edge assembly of two assembly faces, for example faces 7 and 17 of elements 1 and 2, by means of bolts 36, with the interposition of a peripheral seal 37.
The elements may or may not include a longitudinal outer support 38 for serving for the distribution of dishes or containers (Fig. 1), or a longitudinal outer support 39 for receiving the lids of the containers.
They are mounted on casters or on a base.
By choosing at will the number and combination of elements, you can create any desired counter.
A second unit heater can be placed at the second end of the counter if its size warrants it.
In all cases, the counter, once assembled, constitutes, thanks to the channels or spaces formed inside the elements for a logical circulation of the air, a single air heater heating network in a substantially closed circuit.
